1 pkg. (9 oz.) refrigerated cheese ravioli, uncooked
1/4 cup KRAFT Sun Dried Tomato Vinaigrette Dressing
1 clove garlic, minced
2 cups cherry tomatoes, cut in half
1/4 cup chopped fresh basil
1/2 cup KRAFT Finely Shredded Italian* Five Cheese Blend

Steps:

  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, heat dressing in large skillet on medium-low heat. Add garlic; cook 2 min. Stir in tomatoes; cook 2 min. or until heated through, stirring occasionally.
  • Drain pasta. Add to tomato mixture with basil; mix lightly. Top with cheese.

A little bit of work for this one, but well worth the effort for a special occasion. My husband has even helped make these once to help satisfy one of my pregnancy cravings!!

1/4 cup vegetable oil
1 cup finely chopped onion
2 cloves garlic, crushed
1 (28 ounce) can crushed tomatoes
1 (5 1/2 ounce) can tomato paste
1 1/2 cups water
1 teaspoon salt
2 tablespoons parsley
2 teaspoons sugar
1 tablespoon oregano
1 teaspoon basil
1/4 teaspoon pepper
3 cups flour
4 eggs
1/4 cup water
3/4 lb ground beef, cooked
4 tablespoons cheddar cheese
1 tablespoon fine breadcrumbs
1/4 teaspoon pepper
1/2 teaspoon salt
1 egg, beaten slightly

Steps:

  • Sauce-In a saucepan, or crock pot, combine all ingredients.
  • Heat until boiling.
  • Cover, reduce heat and simmer at least 30 minutes, until flavours are well blended.
  • Noodles- Mix together.
  • Knead for 10 minutes or until dough is elastic.
  • Add more water or flour accordingly.
  • Filling- Mix all ingredients together.
  • Roll out dough, cut into small rectangles, or circles.
  • (I use a hunky bill's perogy maker and fill the pouches as directed.) Fill pockets with filling.
  • Seal the edges with a little bit of water and pinch closed.
  • (Or add a second layer of dough on to your perogy maker and use rolling pin to seal edges.) Cook in boiling water for 15 minutes.
  • Serve with prepared sauce.
  • Especially good with garlic bread and sprinkled with parmesan cheese.

1/4 cup plus 2 teaspoons extra-virgin olive oil
1 1/2 pounds spinach ravioli or tortelloni
1 cup purchased marinara sauce
1/2 cup whole-milk ricotta cheese
Salt and freshly ground black pepper
3 tablespoons freshly grated Parmesan
2 tablespoons thinly sliced fresh basil leaves

Steps:

  • Bring a large pot of salted water to a boil. Add about 1/4 cup olive oil to the water to help prevent pasta from sticking. Add the ravioli and cook until al dente, stirring occasionally, about 5 minutes. Drain the ravioli, reserving 1/2 cup of the cooking water. Toss the ravioli with the remaining oil to coat.
  • Meanwhile, bring the marinara sauce to a simmer in a medium saucepan over medium heat, whisking often. Whisk in the ricotta and enough reserved cooking water to thin the sauce to desired consistency. For a thicker sauce, use less pasta water; for a thinner sauce, add more water. Return the sauce to a simmer. Season the sauce to taste with salt and pepper.
  • Spoon 3 tablespoons of sauce over the bottom of each of 6 bowls. Arrange the ravioli over the sauce. Drizzle the remaining sauce over the ravioli. Sprinkle with the Parmesan and the basil, and serve.

BURRATA RAVIOLI WITH FRESH TOMATO SAUCE, PARMIGIANO AND BASIL

Eight 6-by-6-inch sheets fresh pasta
1 large egg, beaten
2 balls burrata, cut into 16 pieces total
1 bunch fresh basil
Kosher salt and freshly cracked black pepper
1 1/2 cups San Marzano tomato sauce
1/4 cup extra-virgin olive oil
4 tablespoons (1/2 stick) unsalted butter
2 tablespoons grated Parmigiano-Reggiano

Steps:

  • Cut the pasta sheets into 3-by-3-inch squares. Brush one side of a pasta square with a small amount of egg, then place a piece of burrata in the center and top with a basil leaf. Season with salt and pepper, then top with one more pasta square to make a ravioli. Repeat to form a total of 16 ravioli for 3 portions. Allow the ravioli to set for 30 minutes in the fridge.
  • In the meantime, bring a pot of salted water to a boil. Bring the tomato sauce to a simmer in a separate saucepan.
  • Add the ravioli to the boiling water and cook until tender, about 3 minutes.
  • Add the olive oil to the tomato sauce and stir together. Add the ravioli to the pan with the sauce and cook for 1 more minute, adding the butter at the same time. Season with salt and pepper.
  • Divide the ravioli among 3 plates and garnish with extra basil and the Parmigiano-Reggiano.

Wonton wrappers = Ravioli!! If you dont have time to make pasta, try the wonton wrappers!! I made big ones with 2 wrappers but you can just use 1 and fold it to seal the edges!

1 lb lean ground beef
1 large onion (diced)
2 garlic cloves (finely chopped)
2 teaspoons italian seasoning
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup fresh Baby Spinach (chopped)
2 tablespoons parsley
1/2 cup parmesan cheese
1/2 cup feta cheese (crumbled)
1 cup cottage cheese
50 wonton wrappers
1 egg (for egg wash)
2 pints grape tomatoes
10 garlic cloves
2 teaspoons italian seasoning
4 tablespoons olive oil
1/2 teaspoon salt

Steps:

  • In a large frying pan, brown up the beef, garlic and onion with the seasonings on medium high heat until done. Place beef in food processor if you like for finer beef. Fold in the cheese and mix. Place 1 wrapper down and run egg wash along the edges. Put a teaspoon of filling in the middle and top with another wrapper and seal the edges together. Boil for 4 minutes in lightly salted water.
  • Preheat oven 450°F.
  • In a roaster, add the grape tomatoes and the cloves of garlic (leave on the skin), coated in olive oil and roast in the oven for 20 minutes.
  • Take the garlic out of the skins and mash it with some salt in a bowl. Take some of the water your pasta is cooking in and stir the garlic into the water with a fork to break it up.
  • Add the tomatoes and mash it all up. Add in seasonings mix well, but really you add in any herbs you prefer. Slowly add in some water, how much water you add will determine how thick you want your sauce!

My Mom made this, and it's delicious. She uses the ravioli filling in her lasagne which is heavenly. This recipe takes a little extra effort, but it's well worth it for a special evening.

15 ounces ricotta cheese
8 ounces mozzarella cheese, diced
1/4 cup grated parmesan cheese
1 egg
1 tablespoon parsley, chopped
3/4 teaspoon salt
1/8 teaspoon pepper
3 cups all-purpose flour (unsifted)
1/2 teaspoon salt
4 eggs
4 tablespoons water
2 tablespoons salt
2 tablespoons salad oil (or olive oil)
grated parmesan cheese
35 ounces Italian tomatoes
1/4 cup olive oil or 1/4 cup salad oil
1 cup onion, finely chopped
1 garlic clove, crushed
6 ounces tomato paste
2 sprigs parsley
1 tablespoon salt
2 teaspoons sugar
1 teaspoon dried oregano leaves
1/2 teaspoon dried basil leaves
1/4 teaspoon pepper

Steps:

  • Make Italian Tomato Sauce: Puree undrained tomatoes in blender. In hot oil in large sauce pan, saute onion and garlic until golden-brown (abou 5 minutes). Add pureed tomato, tomato paste, 1 1/2 c water, the parsley sprigs, salt, sugar, oregano, basil, and pepper and mix well. Bring to boiling and reduce heat. Simmer, covered stirring occasionally, 1 hour.
  • Meanwhile, make ravioli filling: In medium bowl, combine all filling ingredients and beat with wooden spoon until well blended. Set aside.
  • Make noodle dough: Combine flour and 1/2 teaspoon salt in medium bowl and make well in center. Add eggs and water. Beat with wooden spoon until dough forms ball and leaves side of bowl.
  • Turn onto floured surface. Knead until smooth and elastic--6 to 8 minutes. Divide into quarters.
  • On lightly floured surface, roll one quarter (keep remaining dough covered with plastic film) into 17x13 inch rectangle. Cover with film.
  • Roll a second quarter into a 17x13 inch rectangle. Drop filling by teaspoonfuls in 24 evenly spaced mounds on this dough rectangle (six lengthwise and four across).
  • Lightly brush edges and spaces between mounds of filling with water. Place first dough rectangle on top and tirm edges with pastry wheel.
  • Run pastry wheel between mounds of filling, to make 24 ravioli and press edges of each with times of fork to seal.
  • Place on flour-covered sheet of waxed paper to dry--about 15 minutes. Turn once. Repeat with remaining dough and filling.
  • In large kettle, bring 8 quarts water to boil.
  • Add salt, oil, and ravioli.
  • Boil gently, uncovered, 25-30 minutes, or until done.
  • Turn half of ravioli into colander at one time, drain well.
  • Turn ravioli into heated large serving dish. Top with tomato sauce and pass remaining sauce. Sprinkle ravioli with parmesan.

250 g ground chicken
2 minced garlic cloves
1/4 teaspoon salt
2 spring onions
1 tablespoon tamari
1 teaspoon ginger
1 teaspoon rice wine vinegar
1 teaspoon cornflour
1/4 teaspoon white pepper
1/4 teaspoon sesame oil
2 tablespoons basil
1 teaspoon oil
1 teaspoon pine nuts
1/4 cup tomato juice
1/4 red onion
4 tablespoons thickened cream
8 ounces wonton wrappers
water
black pepper

Steps:

  • Mix first 10 ingredients in a bowl and marinate 6 - 8 hours or overnight.
  • Thinly slice red onion; heat pan then add oil; sauté red onion until soft; set to low adding V8 and cream until boil; simmer up to 5 minutes.
  • Place one wrapper on surface, fill middle with chicken mince mixture; brush edges with water; place second wrapper on top and seal; continue with wrappers and chicken mixture; set aside.
  • Cook ravioli in saucepan of boiled water for about 2 -3 minutes; drain on paper towel on flat plate until all are done.
  • Place cooked ravioli in serving bowls, topped with sauce, pine nuts, basil and black pepper.
  • ENJOY!
  • NOTE:
  • Chicken in UNCOOKED.
  • Used V8 Hot and spicy.
  • Finely dice spring onion, garlic, ginger and finely slice red onion.
  • Can use pork mince or pork/veal combination, TRUE!
  • Regular variety V8 or passata (cooked tomato concentrate) as a substitute too!
  • Tamari (a soy sauce made without wheat), has rich texture and intense flavour,.
  • Easily found at local supermarkets, I think this recipe is one to savour.
  • HELPFUL HINTS: When ravioli floats to the top, they are done.
  • Can rip fresh basil into the sauce --- provides more flavour; do not dice or chop.

This is a variation of a recipe from Giada de Laurentis on "Everyday Italian". She used proscioutto and arugula and I substituted bacon and fresh baby spinach. She only used cheese ravioli but I used beef ravioli too. I also added the green onions because I had some that I needed to use. This turned out awesome and I had to post this to keep for future use. I hope you enjoy!

12 ounces frozen cheese ravioli
12 ounces frozen beef ravioli
2 tablespoons olive oil
6 slices bacon, chopped (reserve 2 tbsp of drippings when cooking)
2 tablespoons garlic, minced
2 roma tomatoes, large or 3 small, chopped
2 cups spinach, fresh baby spinach
2 green onions, sliced thin

Steps:

  • Bring 3 quarts of water to a boil and cook ravioli according to package directions.
  • Add 2 tbsp olive oil to a large metal skillet and heat on high for 2-3 minutes until very hot.
  • Add chopped bacon (it should immediately sizzle) and cook on medium heat until bacon is completely cooked and all fatty pieces have been cooked down.
  • Drain the bacon reserving 2 tbsp of drippings.
  • Add the minced garlic and chopped roma tomatoes to the skillet and continue cooking on medium heat for 2 minutes.
  • Add the fresh baby spinach and sliced green onions and stir to coat the spinach so it will cook down, approximately 5 minutes. Add salt and pepper to taste.
  • Add the cooked ravioli and toss, and continue cooking on medium heat for 2-3 more minutes to ensure the entire dish is hot.
  • Can be served with freshly grated parmigiano reggiano cheese and garlic bread if you wish. Enjoy!
