SIMPLE SPICY CHICKEN PASTA



Simple Spicy Chicken Pasta image

An easy one-pot dish. Delicious juicy chicken in a tomato sauce with a nice kick. Perfect with pasta and some garlic bread.

Number Of Ingredients 13

4 chicken breasts, cut into bite-size pieces
1 large onion, finely diced
2 cloves of garlic, crushed
2 red peppers, cut into bite-size pieces
2 x 400g tinned chopped tomatoes
2 tbsp Worcestershire Sauce
1/2 a lemon
1 tsp chilli flakes, alter depending on heat preference
1/2 chilli powder
250g cheddar cheese, grated
olive oil
salt
black pepper

Steps:

  • Heat a few lugs of the olive oil in a large pan on a med-high heat then add the onions, garlic, peppers and chilli powder. Fry for about 5 minutes, or until onions are softened and pale (not golden).
  • Add the chicken, with a pinch of salt and pepper, to the pan and cook until all the chicken is sealed, but not browning.
  • Keep on the heat and add the tomatoes, worcestershire sauce, juice of 1/2 a lemon, the chilli flakes and a good pinch of salt and pepper. Give a good stir and turn the heat up high. Let the sauce reach a boil and then reduce the heat to a med-low setting. Cover the pot and allow to simmer for 45 minutes, stirring occasionally.
  • With about 15 minutes left to cook, put on some pasta . I recommend a tagliatelle, fusilli, conchiglie or penne.
  • Once the sauce has been on for a good 45 minutes and has reduced slightly, remove from the heat and add the cheese. Stir to make sure it has melted through the sauce. Then drain off the pasta and add the the pot with the sauce, give a good stir to mix the pasta. Serve in a bowl, or high-edged plate, with some garlic bread on the side.

Steps:

  • Bring a large pot of lightly salted water to a boil. Boil pasta for 8 to 10 minutes, or until al dente. Drain.
  • Heat olive oil in a large skillet over medium high heat. Sprinkle chicken with seasoned salt, and cook for 2 to 3 minutes. Stir in drained black olives and mushrooms. Continue cooking, stirring occasionally, until chicken is golden brown. Strain chicken juices from pan, and reduce heat to low. Stir in tomatoes, cover, and simmer for 15 minutes.
  • Toss the pasta and chicken mixture together, sprinkle with Parmesan cheese, and serve.

4 tbsp olive oil
1 onion , finely chopped
2 garlic cloves , crushed
¼ tsp chilli flakes
2 x 400g cans chopped tomatoes
1 tsp caster sugar
6 tbsp mascarpone
4 skinless chicken breasts, sliced into strips
300g penne
70g mature cheddar , grated
50g grated mozzarella
½ small bunch of parsley , finely chopped

Steps:

  • Heat 2 tbsp of the oil in a pan over a medium heat and fry the onion gently for 10-12 mins. Add the garlic and chilli flakes and cook for 1 min. Tip in the tomatoes and sugar and season to taste. Simmer uncovered for 20 mins or until thickened, then stir through the mascarpone.
  • Heat 1 tbsp of oil in a non-stick frying pan. Season the chicken and fry for 5-7 mins or until the chicken is cooked through.
  • Heat the oven to 220C/200C fan/gas 7. Cook the penne following pack instructions. Drain and toss with the remaining oil. Tip the pasta into a medium sized ovenproof dish. Stir in the chicken and pour over the sauce. Top with the cheddar, mozzarella and parsley. Bake for 20 mins or until golden brown and bubbling.

1 can water
2 1/4 cups 560 mL uncooked rotini (spiral) pasta
2 cups 500 mL chopped fresh spinach
1 cup 250 mL quartered fresh mushrooms
4 (about 1 lb/500 g) skinless, boneless chicken breast halves
1/2 cup 125 mL shredded mozzarella cheese
1/4 tsp 1 mL cracked black pepper

Steps:

250g/9oz penne
1 onion, roughly chopped
3 skinless, boneless chicken breasts, cut into thin strips roughly the size of your little finger
1 tbsp paprika
2 tbsp olive oil
salt and freshly ground black pepper
50g/1¾oz butter
50g/1¾oz plain flour
750ml/1 pint 6 fl oz hot milk (see tip)
1 tsp Dijon mustard
100g/3½oz Parmesan cheese, coarsely grated
2 large tomatoes, deseeded and cut into small cubes

Steps:

  • Preheat the oven to 220C/200C Fan/Gas 7. Butter a shallow 1.75 litre/3 pint ovenproof dish.
  • Cook the penne with the onion in boiling, salted water according to the packet instructions. Drain, refresh in cold water and leave to drain again in the colander.
  • Put the chicken strips in a resealable freezer bag with the paprika and a little salt and pepper, seal the bag and shake to coat.
  • Heat 1 tablespoon of the oil in a large frying pan and quickly fry the chicken over a high heat for about 2 minutes until golden-brown and just cooked through (you may need to do this in batches). Using a slotted spoon, transfer the fried chicken to a plate and set aside.
  • To make the sauce, melt the butter in a large saucepan, add the flour and whisk together to form a roux. Cook for 1 minute, then gradually add the hot milk, whisking over a high heat until the sauce is smooth and thickened, and allow to boil for 4 minutes. Stir in the mustard and half the cheese and season with salt and pepper.
  • Add the pasta and onion to the sauce in the pan and stir together. Spoon half this mixture into the dish, arrange the chicken strips over the top and spoon the remaining pasta and sauce on top of the chicken. Scatter over the tomatoes and then top with the remaining cheese. Bake in the oven for about 20 minutes until piping hot and golden-brown on top.

2 cups macaroni or 2 cups elbow macaroni, cooked
1 large carrot, chopped

2 tablespoons sour cream
2 cups cheddar cheese, shredded
2 tablespoons oil

Steps:

  • Heat oven to 180 degrees celcius.
  • Heat oil in fry pan, add chicken in two batches, cook until lightly browned.
  • once finished leave pan out ready for the next ingredients.
  • while the chicken is cooking cook pasta, following cooking instructions on packet.
  • Using the pan cook the onion for about 2 minutes and then add the rest of the chopped vegetables (if you do not like your vegetables crunchy then put them in the microwave for 5 minutes in a microwave safe dish, with enough water to cover them) , also add the tomato soup and whole or diced tomatoes.
  • Simmer for about 15mins or until vegies are cooked.
  • In a large mixing bowl put the tomato mixture in followed by the pasta and chicken. Stir making sure everything is coated with the sauce.
  • add the sour cream to the mixture. If the sauce goes a nice orange, creamy colour then it should be right, if not add a bit more. The amount of sour cream you add can vary depending on your taste, thats just how i like it.
  • Once the sour cream is thoroughly mixed through, put into a baking dish and sprinkle the cheese evenly over the top.
  • Bake for 20 - 25 minutes or until cheese goes golden brown.

  • Preheat oven to 350. Boil pasta according to package directions. Drain and place in baking dish.
  • Rinse and pat chicken dry. Season both sides with salt and pepper.

1 punnet of button mushrooms
4tbsp of freshly chopped basil

500g baby potatoes

  • Preheat your oven to 180ºC/350ºF/Gas 4. Colour the chicken in a frying pan of hot oil and then place into a baking dish along with the basil, Parmesan and cherry tomato sauce, whole button mushrooms and half of the basil. Add the chicken stock.
  • Place the dish in the oven and cook for 25 mins. While the chicken is cooking, boil the baby potatoes until cooked.
  • Drain and serve the potatoes on a plate, placing the chicken on top of them. Finish by sprinkling the other half of the basil, drizzling the olive oil over the top and add cheese if using it.
