CHEESY TOMATO AND CHEESE SAUCE

This sauce is so good! A definite break from the ordinary. I like to experiment in the kitchen and this is one experiment that definitely went right! Plus, it's a very versatil kind of base-sauce, so you can add different things to your liking. My next time making this, I'm definitely going to try adding in mushrooms. (prep time does not include bacon/chicken drippings)

2 -3 teaspoons bacon drippings (or chicken drippings from baked chicken if you've got them)
1/2 teaspoon garlic (fresh or powder)
1/4 onion, sliced thin
3 -4 manzanilla olives, chopped fine (optional)
1/4 cup mushroom, chopped (optional)
3/4 cup tomato sauce (pasta sauce)
1 cup extra-sharp cheddar cheese (best to use brick cheese and slice it thin for quick and even cooking)

Steps:

  • Heat a pot over medium heat. Once pot is hot, pour in bacon drippings (can add bacon too, crumbled).
  • Add in onions and cook until they start to become translucent, then add garlic and olives, mushrooms, or whatever other vegetables you decide to add to the sauce.
  • Once vegetables are soft, add in tomato sauce. Cook until heated through (about 3 minutes), then add cheese and stir until melted.
  • Serve this over pasta or stir the pasta directly into the pot. Since this is a thick sauce, the noodles should easily hold on to the sauce.

2 large Ripe Tomatoes, finely chopped
1 Bay Leaf
1 Garlic clove, finely chopped
1 pinch Ground Parsley
1 pinch Ground Black Pepper
1 pinch Red Pepper (chilli) Flakes
3 teaspoons grated Cheddar Cheese
1 pinch Dried Oregano
2 teaspoons Olive Oil
Salt

Steps:

  • Directions:Heat olive oil in a non-stick pan. Add bay leaf and chopped garlic and sauté for 20-30 seconds.Add chopped tomatoes, ground parsley, ground black pepper, red pepper flakes and salt. Mix well and cook on low heat for 8-10 minutes while stirring occasionally in between.Add grated cheddar cheese and mix well. Cook on low flame until it melts.Mix well and turn off heat. Remove and discard bay leaf from prepared sauce.Add dried oregano and mix well.Tangy and creamy tomato sauce with cheese is ready to be used for preparing pasta or pizza.

15 ounces diced tomatoes (I use ones with garlic, and basil)
4 tablespoons butter (salted or unsalted is fine)
1/2 cup chopped white onion
8 ounces cream cheese
1/8-1/4 cup milk (Based on how thick you want it)

Steps:

  • Melt butter in a large pot on medium-high heat.
  • Add onions.
  • Cook onions until translucent.
  • Drain and add tomatoes.
  • Add cream cheese.
  • Cook until cream cheese is melted and evenly worked through the mixture.
  • Add Milk and simmer for 10 minutes.

100 g spaghetti
165 g chopped tomatoes
100 g mushrooms
50 g sweet corn
25 g bell peppers (mixed)
50 g cheddar cheese
1 cup beef stock
1 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Add mushrooms, sweet corn, chopped tomatoes and beef stock into a pan and cook fo 10 minutes on medium heat until sauce is thick. Add salt and black pepper to your taste.
  • Boil spaghetti according to directions given on package, drain and add into sauce.
  • Top it with chedder chesse and bell peppers, put the lid on and simmer it on very low heat for 5 minutes.

1 lb rigatoni pasta or 1 lb elbow macaroni
2 (15 ounce) cans tomato sauce
2 teaspoons dried oregano (or to taste)
1/2 teaspoon dried basil
1/2 teaspoon salt
3 garlic cloves, chopped
1 lb swiss cheese or 1 lb mozzarella cheese, sliced thin
1/2 cup butter, melted (1 stick)

Steps:

  • Preheat oven to 350°F.
  • In a large pot of boiling salted water, cook rigatoni according to package directions until al dente; drain.
  • Combine tomato sauce with seasonings, and simmer, uncovered, for 10 minuntes.
  • Add sauce to pasta and toss to coat.
  • In a baking dish, arrange pasta and cheese in layers, ending with cheese.
  • Pour melted butter over all.
  • Bake, covered, for 15 minutes.
  • Uncover, and bake for another 15 minutes.
  • To freeze: Undercook pasta by a minute or two. Assemble dish as directed. Wrap with plastic wrap and then foil. Label and freeze.
  • To serve: Thaw in fridge. Remove plastic wrap and recover with foil. Bake as directed for 20 minutes. Then uncover and bake 15 more minutes.

8 ounces elbow macaroni
1/4 cup butter
2 lbs cheese (cubed small)
1/2 cup milk
2 tablespoons flour (divided)
sliced American cheese
8 tablespoons granulated sugar
1 (18 ounce) can stewed tomatoes, with green peppers and onions (or diced tomatoes)

Steps:

  • FOR MACARONI AND CHEESE: In med sauce-pan slowly melt cubed cheese over med/low heat taking care not to burn the cheese.
  • After cheese is melted, add 1 tbsp of flour and the butter, stirring till mixed through; slowly add milk to mixture.
  • Meanwhile cook noodles according to pkg/drain.
  • In large mixing bowl or pot used to cook noodles mix noodles and cheese till all noodles are covered.
  • Spoon macaroni and cheese into baking dish and top with sliced American cheese. Bake at 350°F for 20-25 minutes or until top is lightly browned and bubbly.
  • FOR TOMATO SAUCE: Best to prepare this 5-10 minutes before macaroni is done baking.
  • Empty 16 ounce can of tomatoes into medium saucepan over medium heat.
  • Add remaining tbsp of flour and 8 tbsp of sugar.
  • Stir continually for 2-3 minutes.
  • Bring just to a simmer and remove from heat.
  • Serve over hot macaroni and cheese.
  • Enjoy.

  • Slice tomatoes into 1/3" thick rings; discard (or eat!) the ends since you need a flat bottom on these for serving.
