Steps:
- Heat oil in pan over med-low heat (or use non-stick pan)and fry onion until soft and lightly browned, adding tomato slices for the last minute or two of cooking time.
- Meanwhile, divide avocado equally between two slices of bread, buttering the other two slices if desired.
- Add all other ingredients except butter, then place second slice of bread on top pressing lightly to flatten sandwich a bit.
- Wipe out pan (or use separate pan) and add a little butter.
- After butter has melted, fry sandwiches until crisp and golden brown on both sides.
TOMATO-AVOCADO GRILLED CHEESE
I don't remember where I got this recipe, but it sure is delicious! To get the perfect grilled cheese every time, you should start by heating your skillet to low. Once you build your sandwich, leave the skillet on low and cover with a lid or foil. Cook for a couple of minutes to let the cheese get gooey and you fillings get warm. Then remove the lid/foil and turn up heat, flipping your sandwich until it is perfectly toasted. Yum!

- In a small bowl, mash together avocado, lemon juice, cumin and salt until smooth. Stir in parsley. Set aside.
- Lightly spread mayo on each of the bread slices. To build your sandwich, turn one slice of bread mayo side down in skillet; top with cheese; spread with avocado mixture and top with tomato slices the remaining bread slices.
- Cover your skillet with a lid or foil and cook on medium-low for several minutes to allow the cheese to melt and fillings to warm. Remove lid and increase heat to medium-high. Continue cooking until your bread is done to your liking.
- Note: You may substitute butter for the mayo, however, I find that the mayo makes the bread crispier and less greasy than butter. And it leaves no mayo taste behind.
AVOCADO-TOMATO GRILLED CHEESE SANDWICH
I LOVE avocados, especially the black Haas avocados. They're creamy and have such a "buttery" taste, and yet are cholesterol-free. This recipe makes a really delicious sandwich. When I make it for the kids, I eliminate the cumin, but add it when I'm making a sandwich for myself -- I like cumin's very mild spicy flavor that has a hint of caraway in it.

- In a small bowl, mash together avocado, lemon juice, cumin and salt until smooth. Stir in parsley and set aside.
- Top four of the bread slices with cheese; spread with avocado mixture and top with tomato slices. Add the four remaining bread slices on top. Using 1 tablespoon of the softened butter, spread some on the top of each sandwich.
- Heat a large nonstick griddle or 12-inch skillet, over medium-high heat. Add sandwiches, buttered sides down. Carefully spread the remaining softened butter over the top of each sandwich.
- Cook 4-6 minutes or until toasted, turning once.
TOMATO, CHEESE, AND AVOCADO SANDWICH
This is one of my favorite sandwiches! I usually use a wonderful white horseradish cheddar cheese rather than provolone, but it's kind of hard to find and the provolone is tasty, too. :) I've tried it on a lot of different breads, but I think that Oroweat's Carb Counting Multigrain Bread (when I'm being good) and Poulsbo Bread (when I'm bad) are my favorites for this sandwich.

- If you like your sandwiches toasted, go ahead and toast your bread.
- Mix the mayonnaise, mustard, and balsamic together, then spread it thinly on one side of each slice of bread.
- Place cheese on a mayo/mustard side of a piece of bread; if including proscuitto, place it on the provolone.
- Spread the slices of avocado next, then the tomato, and season to taste with salt and pepper; then top with lettuce and the other slice of bread with the mayo/mustard side facing the lettuce.
- Note: using a fully ripe avocado is very important.

My family loves these sandwiches, they are especially great using garden tomatoes, I make them using Pepper Jack cheese but American cheese slices works good also, you can adjust the butter amount to suit taste.

- Spread about 1 tablespoon butter into the bottom of a large skillet (or just leave some fat in the pan from the bacon).
- Spread 1 tablespoon (can use more) onto one side of each slice of bread.
- Place the 4 slices of bread butter-side down onto a large skillet or flat grill.
- Top with 1 slice of cheese, 2 slices of tomato and 2 slices cooked bacon, then 1 more slice of cheese.
- Cover with a slice of bread (butter-side facing outside).
- Fry over medium turning once with a spatula until golden brown on both sides.

- Spread both slices of bread with a light layer of mayo.
- Put slice of cheese on one piece of bread.
- Add tomato slices.
- Sprinkle with salt, pepper& Italian Seasoning.
- Cover tomato slices with other slice of cheese, then cover with other piece of bread.
- In the meantime, heat griddle or pan with butter and garlic power or minced garlic.

- Preheat oven to 400°F Cook bacon in the oven on a baking sheet with sides, turning strips over once, 12 minutes, or until crisp. Drain on paper towel.

- Spread 3 tablespoons butter on 1 side of bread slices. Place bread, butter side down, in a large cast-iron skillet or on an electric griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, combine cheddar, Monterey Jack and Gruyere. In another bowl, mix together remaining 3 tablespoons butter, mayonnaise, Manchego cheese and onion powder., To assemble sandwiches, top toasted side of 4 bread slices with sliced Brie; add avocado slices.
