Here's a tasty make ahead salad. Try this simple tomato cucumber marinated in vinegar. It's an easy vegetable side dish that uses champagne vinegar dressing.

5 medium tomatoes (diced in chunks)
3 medium cucumbers (peeled and diced in 1" discs)
10 basil leaves (chopped)
1/2 tbsp olive oil (extra virgin)
1/2 tbsp champagne vinegar (this is Colavita Prosecco White Wine Vinegar)
1/2 tsp paprika
1/8 tsp red pepper flakes (crushed)
salt and pepper to taste

Steps:

  • Add the main ingredients (tomatoes, cucumbers, basil) to a large bowl and set aside.
  • Whisk together the dressing ingredients (olive oil, champagne vinegar, paprika, red pepper flakes, salt and pepper). Taste the dressing once it's combined - you might like a little more vinegar, or you might like it just the way it is. If it tastes good in the small bowl of dressing, it will be good in the salad.
  • Add the champagne vinegar salad dressing to the bowl of vegetables and toss to combine. Add salt and pepper as desired.
  • Marinate tomato and cucumber salad for at least 1-2 hours before serving. Overnight marinating is recommended.

1/2 teaspoon whole cumin seeds, lightly crushed with the side of a knife
1 medium shallot, finely chopped
2 tablespoons lemon juice
Kosher salt
4 medium vine-ripe tomatoes, chopped
1 seedless cucumber, chopped
1/2 cup chopped fresh cilantro

Steps:

  • Heat the olive oil in a small skillet over medium heat. Add the cumin and cook, stirring, until fragrant, about 2 minutes. Pour the cumin oil into a large bowl and add the shallot, lemon juice and 1/2 teaspoon salt; cool slightly. Add the tomatoes, cucumber and cilantro and serve immediately.
