I had these once when I was in the hospital and been making my version of them ever since. Best part is they are not fattening.

Number Of Ingredients 6

4 beefsteak tomatoes (or any large)
2 tablespoons extra virgin olive oil
1/2 cup seasoned bread crumbs or 1/2 cup plain breadcrumbs
1/2 cup mixed Italian herbs (such as basil, oregano, thyme, parsley)
8 1/4 teaspoons unsalted butter
salt & freshly ground black pepper

Steps:

  • Turn on your broiler. A toaster oven with broiling ability is great or a George Foreman Grill.
  • Remove the cores of the tomatoes then cut them in half (horizontally).
  • Place cut side up: then rub Olive oil over cut side (use fingertip).
  • Sprinkle bread crumbs on next.
  • Sprinkle Herb seasonings on and salt/pepper.
  • Then place 1/4 teaspoon of unsalted butter on each half.
  • Broil until tomato is hot completely.
  • ^May add cheese or mushrooms when nearly done, but don't get them to close to burners in oven.

GARLIC AND HERB BROILED TOMATOES

4 plum tomatoes
1 cup plain bread crumbs
1/3 cup grated Parmigiano-Reggiano
1 teaspoon chopped fresh thyme leaves
1 clove garlic, finely minced
3 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper

Steps:

  • Preheat broiler to medium high.
  • Cut plum tomatoes in 1/2 lengthwise. Squeeze or scoop out most of the pulp and seeds. Place the tomatoes flesh side up in a heat safe dish and season them with salt and pepper. In a bowl combine the bread crumbs, Parmigiano, thyme, garlic and olive oil. Season mixture with pepper and sprinkle over the tomatoes. Place tomatoes under the broiler for 5 minutes or until golden brown

3 large plum tomatoes, halved lengthwise (about 12 ounces)
3/4 teaspoon kosher salt
fresh ground black pepper
1 tablespoon extra virgin olive oil
3 tablespoons chopped fresh herbs, such as thyme, rosemary, oregano or 3 tablespoons marjoram
1 tablespoon freshly grated parmesan cheese

Steps:

  • Season tomatoes with the salt and place seed-side down on a rack or paper towel to drain for about 30 minutes. Blot dry with a paper towel.
  • Position an oven rack in the upper part of the oven and preheat the broiler.
  • Line a broiler pan with foil.
  • Place the tomato halves on the prepared pan, seed-side up, season with pepper to taste, drizzle with olive oil, and sprinkle herbs over the top.
  • Broil until hot and the tops begin to brown, about 8 minutes.
  • Top with cheese and broil until cheese is melted, about 1 minute.

4 red, ripe, firm tomatoes
Salt to taste, if desired
Freshly ground pepper to taste
1/4 cup fine fresh bread crumbs
1 teaspoon finely minced garlic
2 tablespoons finely chopped parsley
2 teaspoons olive oil

Steps:

  • Preheat the broiler to high.
  • Split the tomatoes in half. Arrange the tomatoes cut side up on a baking dish. Sprinkle the cut halves with salt and pepper.
  • Blend the bread crumbs, garlic, parsley and oil. Sprinkle equal portions over the tops of the tomatoes.
  • Place the tomatoes about six inches from the source of heat and broil about five minutes.

1 teaspoon salt and ground black pepper to taste

Steps:

  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Drizzle the olive oil over the cut sides of the tomatoes, and sprinkle with garlic, salt, and black pepper.
  • Place tomatoes, cut sides up, onto the preheated grill, and grill until the tomatoes start to sizzle and show blackened grill marks, about 4 minutes. Flip the tomatoes over and grill until the garlic turns golden brown, about 3 more minutes.

I submitted this recipe to Better Homes and Gardens in 2004 and it was published! Perfect when you have an abundance of ripe tomatoes in late summer.

2 large ripe tomatoes
1/4 cup butter
16 ounces sour cream
1 shallot, minced
4 tablespoons fresh dill, chopped
kosher salt
fresh cracked pepper
1 tablespoon white wine
1 tablespoon horseradish
1/4 lb smoked salmon, room temperature
2 tablespoons minced fresh parsley

Steps:

  • Preheat grill or broiler - ready for use at med high heat.
  • Blend sour cream, shallot, dill, salt, pepper, wine and horseradish and set aside.
  • Split tomatoes in half. In the top of each half, scoop about 3 T of the seeds and pulp out of center. Sprinkle each half with salt.
  • Place tomatoes on grill or broiler cut-side down. Wait 5 minutes and turn tomatoes over. Place 1 T butter in cavity of tomato. Wait till butter is melted, about 5 minutes. Remove from grill/broiler.
  • Add 2 T Smoked salmon to cavity, put 2-3 tablespoons sour cream sauce over salmon and tomato. Sprinkle with minced parsley and serve.

  • Preheat broiler.
  • Lightly oil baking sheet.
  • Place tomato slices on this.
  • Drizzle slices with olive oil. Season with salt and pepper. Top with oregano and feta.

24 cherry tomatoes (1-1 1/2-inch diameter)
4 garlic cloves, cut into slivers
1 tablespoon olive oil
1 teaspoon snipped fresh rosemary (1/4 tsp. dried)
1 teaspoon fresh parsley, chopped
1 teaspoon sugar
1/4 teaspoon salt

Steps:

  • Remove stems from tomatoes. With the tip of a sharp knife, pierce tomatoes. Carefully insert a sliver of garlic into each tomato.
  • Place tomatoes in the center of a 18x12 sheet of foil. Drizzle tomatoes with the olive oil; sprinkle with rosemary, parsley, sugar and salt. Bring the two long sides of the foil together and seal with a double fold. Fold remaining edges together to completely enclose tomatoes.
  • Grill tomatoes on the rack of a grill directly over coals or gas burners for 4 to 5 minutes or until heated through. Or bake in a preheated 350*F. oven for 4 to 5 minute or until heated through.
  • To serve, carefully open foil packet(watch out for hot steam!). Move tomatoes to a serving platter. Sprinkle with salt and serve immediately.
