CRISPY SPICY PEANUT TOFU STIR FRY



Crispy Spicy Peanut Tofu Stir Fry image

Satisfy your stir fry cravings with this healthy vegetarian version! Baked, yet still incredibly crispy, pieces of tofu go perfectly with this spicy peanut sauce. Tastes like a restaurant dish, only better!

Number Of Ingredients 11

12 ounces extra firm tofu
1 Tbsp sesame oil
1 head fresh broccoli (or any other veggies you'd like)
SAUCE:
1 1/2 Tbsp sesame oil
1/4 cup soy sauce
3 - 4 Tbsp brown sugar
1/2 tsp chili sauce
2 cloves garlic (minced)
1/2 tsp ginger (grated)
2 1/2 Tbsp peanut butter

Steps:

  • Slice tofu block into 1/2 inch thick slices. Place several paper towels down on a cutting board, lay the slices on top, top with several more paper towels and add weight to the top. I used a cutting board, ceramic insert from a slow cooker, and added a large can of tomatoes to the insert to add extra weight.
  • This can be done in advance (see notes section below recipe).
  • Drain tofu for 15-30 minutes, the longer the better!
  • Preheat oven to 400 degrees.
  • Slice tofu into strips, then cut across them to make small cubes.
  • Place on a parchment paper lined baking sheet, spray lightly with cooking spray and bake for 25-30 minutes, until golden and crispy.
  • Set pan aside while you make the sauce.
  • Whisk sauce ingredients together in a small bowl.
  • Add cooked tofu to the sauce and let it marinate for about 10-15 minutes.
  • Steam broccoli (and/or other veggies) and set aside.
  • Drizzle a bit of sesame or vegetable oil into a large skillet or wok, and heat over MED-HIGH heat.
  • Using a slotted spoon, add the marinated tofu to the skillet and stir fry for a few minutes until seared and caramelized.
  • Serve over rice, vegetables, and drizzle with remaining sauce if desired.
  • Use a slotted spoon to spoon tofu into the preheated pan. Add a few spoonfuls of the sauce to coat. Cook, stirring frequently for a few minutes until browned. It will stick to the pan a bit, so don't worry. Remove from pan and set aside and cover to keep warm.

1/2 cup unprocessed peanut butter
1/2 cup hot water
1/4 cup cider vinegar
2 tablespoons tamari
2 tablespoons blackstrap molasses
1/2 teaspoon cayenne pepper
1 (1 lb) bunch fresh broccoli (frozen will do)
3 tablespoons oil
8 cloves garlic, minced
1 lb tofu, cut into small cubes
3 dashes salt
2 cups thinly-sliced onions
1 cup coarsely-chopped raw peanuts
2 -3 tablespoons tamari

Steps:

  • -----------TheSauce-----------.
  • In a small saucepan, whisk together the peanut butter and hot water until uniform in consistency.
  • Whisk in the remaining ingredients.
  • Set aside.
  • -------TheSaute-------------.
  • Cut off the bottom half-inch of the broccoli stems.
  • Shave off the tough outer skins of the stalks with a sharp paring knife or a vegetable peeler.
  • Cut the stalks diagonally into thin slices.
  • Coarsely chop the flowerettes.
  • Set aside.
  • Begin heating the large skillet.
  • When it is hot add 1 tbsp of the oil.
  • Add half the garlic.
  • Salt lightly.
  • Sauté over medium heat for 1 minute, then add the tofu chunks.
  • Turn the heat up a little, and stir-fry the tofu for 5-8 minutes.
  • Transfer it, including whatever liquid it might have expressed, to the saucepanful of peanut sauce.
  • Mix together gently.
  • Wipe the skillet with a paper towel, and return it to the stove to begin heating once again.
  • Add the remaining garlic.
  • Salt lightly.
  • Add the onions, and some black pepper.
  • Sauté, stirring frequently, over medium heat, until the onions are soft.
  • On another burner, begin heating the peanut-tofu sauce on a low heat.
  • It shouldn't actually cook-it only needs to be warmed through.
  • Add the broccoli and the chopped peanuts to the skillet.
  • Add 2-3 tbsp tamari and stir-fry over medium-high heat until the broccoli is bright green and just tender.
  • Pour the heated peanut sauce over the sauté.
  • Toss everything gently until everything is coated with everything else.
  • Serve over long-grained white or brown rice (basmati is good).

1 (454 g) package medium firm tofu
1/4 cup safflower oil
1/2 cup cornstarch
1/4 cup szechwan spicy peanut satay sauce
1 green onion, thinly sliced

Steps:

  • Drain tofu.
  • Cut into 4 equal lengthwise slices.
  • Place on a double thickness of tea towel, cover with another double thickness of tea towel and allow to stand for 15 minutes.
  • Gently pat tofu dry.
  • Using large nonstick frying pan, heat oil over medium heat.
  • Coat tofu with cornstarch.
  • Fry in hot oil until crispy and lightly coloured (about 4 to 5 minutes per side).
  • Drain on paper towel.
  • Place slices on dinner plate, drizzle with peanut sauce and sprinkle with green onions.
  • Serve immediately.

This is a really yummy vegetarian dinner option. Even my non-vegetarian husband said it was great. Don't neglect to freeze/thaw/press the tofu as this will give the tofu a better, chewier texture. For additional flavor you can marinate the tofu in a bit of soy sauce and sesame oil.

1 lb firm tofu (that has been frozen, thawed, pressed and cut into chunks)
1 lb broccoli
1 1/2 tablespoons peanut oil or 1 1/2 tablespoons canola oil
2 cups onions
1 tablespoon fresh ginger
4 garlic cloves, minced
2 tablespoons soy sauce
3/4 teaspoon salt
2 scallions, minced
1/2 cup peanut butter
1/2 cup hot water
6 tablespoons cider vinegar
2 tablespoons soy sauce
3 tablespoons honey
red chili pepper flakes (to taste)

Steps:

  • For the Sauce: Place peanut butter and water in a sauce pan, heat on low heat and whisk until mixture is uniform.
  • Add vinegar, honey, soy sauce and red chili flakes.
  • Set aside.
  • In a wok, heat half the oil, half the ginger, and half the garlic.
  • When hot, add tofu and stir fry for a few minutes.
  • Add tofu to sauce and set aside.
  • To wok add the rest of the oil, ginger, garlic, and onion.
  • When hot add the broccoli (which should be chopped into manageable bits, including the stems) and stir fry a few minutes.
  • Add the soy sauce and stir fry until broccoli is just tender and bright green.
  • Add sauce to broccoli and stir until everything is coated with sauce.
  • Serve immediately over steamed rice.
  • Top with lightly toasted chopped nuts and scallions.

1/4 cup KRAFT Asian Toasted Sesame Dressing
2 Tbsp. creamy peanut butter
1 Tbsp. lite soy sauce
1 Tbsp. water
2 Tbsp. oil, divided
1 lb. extra-firm tofu, drained, patted dry and cut into 1-inch cubes
2 green onions, cut into 1-inch lengths
4 cloves garlic, minced
1 Tbsp. minced fresh ginger
1/4 tsp. crushed red pepper
1 each red and yellow bell pepper, cut into 1-inch pieces

Steps:

  • Mix first 4 ingredients until blended.
  • Heat 1 Tbsp. oil in large skillet on medium-high heat. Add tofu; cook and stir 5 to 6 min. or until golden brown. Remove from skillet; set aside.
  • Heat remaining oil in same skillet. Add onions, garlic, ginger and crushed pepper; cook and stir 1 min. Add bell peppers; cook and stir 4 to 5 min. or until crisp-tender. Return tofu to skillet along with the dressing mixture; stir. Bring to boil; cook and stir 2 to 3 min. or until sauce is thickened.

¼ cup peanut butter
2 tablespoons soy sauce

1 red bell pepper, diced

Steps:

  • Whisk coconut milk, peanut butter, soy sauce, brown sugar, lime juice, sriracha sauce, and ground chile powder in a bowl until a smooth sauce forms.
  • Heat oil in a large skillet over medium-high heat. Add carrots and red bell pepper; saute until just tender, 1 to 2 minutes. Add tofu; saute until lightly browned, about 4 minutes per side. Add garlic and ginger; cook and stir until fragrant, about 30 seconds.

2 teaspoons canola oil
3/4 lb snow peas, trimmed
1 cup red bell pepper, sliced into strips
3/4 cup water, divided
1/2 cup green onion, sliced
2 teaspoons fresh ginger, peeled and minced
2 garlic cloves, minced
3 cups shiitake mushrooms, sliced (about 8 ounces)

Steps:

A tasty snack or appetizer. Tofu cubes are very crispy outside, yet warm and soft inside. Sort of like Asian "french fries". And i simple love the sauce, even used it as salad dressing sometimes!

200 g firm tofu
2 tablespoons cornstarch
salt and pepper, to taste
oil, for frying
1 tablespoon peanut butter (i used crunchy)
3 tablespoons soymilk or 3 tablespoons coconut milk (will do)
1 teaspoon garlic powder
1 teaspoon soy sauce or 1 teaspoon oyster sauce
1 tablespoon chili sauce or 1 tablespoon ketchup
1 dash chili flakes
salt and pepper, to taste

Steps:

  • Drain tofu (i pressed gently between paper towels).
  • Cut into bite-sized cubes.
  • Toss with cornstarch, coating the cubes.
  • Sprinkle a little salt and pepper.
  • Heat some oil (about 3-4 tablespoon, just ensure pan is coated).
  • Fry the tofu cubes in batches, making sure all sides are lightly browned.
  • Drain on paper towels, then sprinkle with salt and pepper if desired.
  • Sauce: Heat the milk in small saucepan (you can make sauce in microwave too).
  • Add peanut butter, stirring well.
  • Add other seasonings, according to personal taste (I love spicy food, so i added LOTS of chilli flakes!). If you use coconut milk, add 1/2 - 1 tsp of lime juice too - it will be great!
  • Serve hot, as a snack or appetizer. Sometimes i serve them with a sweet Chinese dessert: Green Bean Soup.

  • Wrap the tofu in a towel and gently squeeze out the water. Dice into 1-inch cubes. Put the cubes in a container with a lid. Drizzle the soy sauce over the tofu, then cover and shake until well coated. Add the garlic powder and starch, then cover and shake again.
  • Put a nonstick pan over medium-high heat. Pour in 2 teaspoons of oil. Cook the tofu until browned on all sides, about 3 to 4 minutes, turning occasionally. Remove the tofu when it’s done and place the pan back over the heat.
