This is my favourite hearty classic vegan breakfast recipe. Spiced to perfection with peppers, beans, onions, and mushrooms for a perfect savoury brunch.

2 tablespoons nutritional yeast
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon black salt ((also called kala namak) or regular salt)
3/4 teaspoons turmeric
1/4 teaspoon garlic powder
1 tablespoon oil ((such as olive or vegetalbe))
8 oz button mushrooms, (sliced (about 1 1/2 cups sliced))
1 red pepper, (chopped)
1/2 yellow onion (chopped)
2 cloves garlic, (minced)
1 454g block medium-firm tofu or firm tofu OR 2 349g blocks extra firm silken tofu
1 19oz can black beans (2 cups), (drained and rinsed)

Steps:

  • Add all of the spice mix ingredients into a bowl and stir to combine.
  • Heat a large skillet over medium-high heat and add the olive oil. When hot, add the mushrooms, pepper, onion, and garlic and sauté for about 8 minutes until everything just starts to brown.
  • Add the tofu blocks and break it apart with your spoon until you get a nice scramble texture with lots of chunks. Stir in the spice mix and black beans. Heat through for another 5 - 8 minutes until hot.

Try our vegan spiced tofu with cherry tomatoes for an egg-free take on scramble on toast. Perfect for breakfast, served on rye bread

1 tbsp olive oil
1 small onion , finely sliced
1 large garlic clove , crushed
½ tsp turmeric
1 tsp ground cumin
½ tsp sweet smoked paprika
280g extra firm tofu
100g cherry tomatoes , halved
½ small bunch parsley , chopped
rye bread , to serve, (optional)

Steps:

  • Heat the oil in a frying pan over a medium heat and gently fry the onion for 8 -10 mins or until golden brown and sticky. Stir in the garlic, turmeric, cumin and paprika and cook for 1 min.
  • Roughly mash the tofu in a bowl using a fork, keeping some pieces chunky. Add to the pan and fry for 3 mins. Raise the heat, then tip in the tomatoes, cooking for 5 mins more or until they begin to soften. Fold the parsley through the mixture. Serve on its own or with toasted rye bread (not gluten-free), if you like.

  • Cut the potatoes into fork size pieces. Place into a pot and cover with cold water. Add a couple pinches of salt and bring to a boil. Simmer until the potatoes are just done. Drain, then toss in a bowl with olive oil and the seasoning. Spread out the potatoes on a sheet tray lined with parchment paper. Bake for 20 minutes at 425°F.
  • In a large skillet, add the olive oil over medium-high heat. Add the onions, pepper, and mushrooms. Season with salt and pepper and saute for 5 minutes.
