TOFU HIJIKI SAUTé

Tofu Hijiki Sauté image

This sauté makes an attractive and satisfying supper; chilled, it makes a delicious side dish or salad. (See photo)

Yield serves 4

Number Of Ingredients 8

1 1/2 cups short-grain brown rice
1/2 cup dried hijiki seaweed (1/2 ounce)
1 cake firm tofu (about 16 ounces)
3 cups carrot matchsticks
2 medium onions
2 tablespoons dark sesame oil
2 tablespoons soy sauce
2 tablespoons toasted sesame seeds

Steps:

  • In a covered saucepan, bring the rice and 2 1/2 cups of water to a boil. Reduce the heat and simmer covered until the rice is tender and the water absorbed, 35 to 40 minutes.
  • While the rice cooks, make the sauté. Place the hijiki in a small bowl, add warm water to cover by about an inch, and set aside for 15 minutes. Slice the tofu into bite-sized pieces or strips. Cut the onions into thin slices (2 to 3 cups).
  • In a large skillet or wok, heat a tablespoon of the sesame oil. Add the tofu and sauté on medium heat, stirring frequently, for several minutes, until browned. Remove the tofu and set aside.
  • Add the remaining tablespoon of sesame oil to the pan and sauté the onions and carrots until the onions are golden and the carrots are tender, 4 to 5 minutes. Add the drained hijiki, the reserved tofu, and the soy sauce, and cook long enough to heat thoroughly. Stir in the toasted sesame seeds. Serve on the rice.
  • Dried hijiki seaweed is often sold in bulk in natural foods stores, and in many supermarkets it can be found in cellophane packets in the produce section.
  • Check the produce aisle for bags of matchstick-cut carrots.

GOLDEN TOFU SALAD WITH CARROTS AND HIJIKI

Golden Tofu Salad with Carrots and Hijiki image

The mild hijiki is a great way to introduce seaweed to wary family and friends. This was my favorite recipe from the Whole Foods class I took in Spring of 2003 at Bastyr University. Careful - the salad is highly addictive!

Time 50m

Yield 4-6 serving(s)

Number Of Ingredients 12

3 tablespoons dried hijiki seaweed
1 cup water
12 ounces firm tofu
1 tablespoon sesame oil
1 tablespoon soy sauce or 1 tablespoon tamari
1 tablespoon sesame oil
1/2 teaspoon fresh ginger, grated
2 tablespoons rice vinegar
1/4 teaspoon sea salt
2 medium carrots, julienned
3 scallions, sliced thinly,sprinkled with
1/8 teaspoon sea salt, and pressed lightly

Steps:

  • In a small saucepan, soak hijiki for 10 minutes.
  • Once rehydrated, simmer the seaweed uncovered for 20 minutes or until the water has evaporated.
  • Remove from heat and allow to cool.
  • Meanwhile, drain the tofu and slice the cake horizontally.
  • Place between sheets of paper towels and put on a cutting board with a heavy weight atop the tofu to press away excess water.
  • A cast iron skillet or heavy book is ideal.
  • Drain the tofu for at least 15 minutes.
  • Cut into cubes and brown evenly on all sides using 1 tabblespoon of sesame oil.
  • Remove from pan and sprinkle with tamari.
  • Set aside to cool.
  • In a large bowl, whisk together vinegar, oil, ginger, and salt.
  • Add seaweed, tofu, and veggies.
  • Toss well and allow flavors to marry for at least 30 minutes.

THE BEST PAN-FRIED TOFU

The Best Pan-Fried Tofu image

I have had MANY people ask me how I pan fry my tofu and get it so crispy and firm. There are a few reasons why:-). First I either use a non-stick or cast iron pan, I don't overcrowd the surface, I drain my tofu REALLY well, use only extra firm Chinese style and MOST important of all, I leave it undisturbed while cooking and this allows the golden crust we all love on pan-fried tofu to develop! Please find detailed instructions below on how to make the best pan-fried tofu ever!

Categories     Very Low Carbs

Time 16m

Yield 2-4 serving(s)

Number Of Ingredients 4

1 lb extra firm tofu (extra firm only)
1 1/2-3 tablespoons canola oil or 1 1/2-3 tablespoons peanut oil
salt
cayenne pepper

Steps:

  • Take your block of tofu and wrap it in several layers of paper towels.
  • Gently press the tofu with your hands or against the counter top to release the liquid. This will take about a minute.
  • Slice the tofu into pieces about 1/2 an inch thick.
  • Set tofu aside.
  • If you are using a non-stick pan heat it slightly on medium-high heat (about 30 seconds) before adding oil.
  • If you are using a cast iron pan, please heat for about 1 minute to 1 1/2 minutes on medium-high heat. Cast iron is very thick and you want the pan to be heated evenly before adding the tofu.
  • Add oil to heated pan.
  • Gently spread oil over the entire surface of the pan.
  • Set the tofu pieces in the pan, leaving ample room between them. They should sizzle when placed in the oil. Sprinkle the tops with salt and a little cayenne pepper.
  • Now, the MOST IMPORTANT step is -- LEAVE THEM ALONE for about 6 or 7 minutes. Just gently shake them to make sure they don't stick to the pan. Do NOT turn them or agitate them in any other way. When you see a golden crust beginning to creep its way up the sides of the slices, turn them and spice the other side. Add more oil if the pan seems too dry.
  • The second side will only take about 4 minutes to cook.
  • When they are evenly browned take them out of the pan and place them on paper towels to drain.
  • These are very simply seasoned and basic and can now be used any way you like. I like these with steamed broccoli and peanut sauce -- or in a sandwich with grilled peppers and mushrooms and aioli -- or just eaten with ketchup:-).
