Best Silken Tofu Chocolate Mousse (Fluffy & Vegan) image

This 4-ingredient silken tofu chocolate mousse is super chocolatey, fluffy and high in protein! Made from healthy vegan ingredients within just 15 minutes, it's a delicious dessert idea for the whole family.

1 cup dates, pitted and soaked (150 g)
1 cup silken tofu (250 g)
1 cup dark chocolate, melted (140 g)
½ cup aquafaba/chickpea liquid (120 ml)
Shredded coconut
Dark chocolate shavings
Raspberries
Coconut whipped cream

Steps:

  • Drain your soaked and pitted dates well, then place them into a food processor and pulse to obtain a puree.
  • Add the silken tofu and melted dark chocolate, then process again until a creamy batter forms.
  • Pour your chickpea liquid or aquafaba into a medium-sized bowl and whip with a hand mixer to obtain a frothy mixture. This may take a couple of minutes, so don't worry!
  • Slowly add your chocolate, date and tofu mixture from the food processor into the fluffy aquafaba and gently whisk with a spoon to incorporate until you have a homogeneous chocolate mousse.
  • Divide into glasses and refrigerate for at least an hour before serving.

I've had this Chocolate Tofu Pudding recipe on weelicious for a long time, but when I sat down to come up with Halloween recipes, I couldn't resist adapting this one...

1 14 ounce package soft silken tofu (I like House Foods soft silken or Mori-Nu firm silken)
1/3 Cup pure cocoa powder
1/3 Cup agave nectar (feel free to use a little more if you want it sweeter)
1 Tbsp vanilla extract
24 Chocolate Wafers (I like using Famous Chocolate Wafers)
Gummy Worms (I know, it's candy. If you think of a healthier "worm" substitute, go for it. Or, you can leave them out altogether.)
4 Small Clay Flower Pots

Steps:

  • 1. Place the first 4 ingredients in a food processor and blend to combine.
  • 2. Scrape down the sides of the food processor and blend again to make sure everything is incorporated.3. Place 4 whole chocolate wafers in the bottom of the clay pots so none of the pudding goes through the hole at the bottom of the pots.4. Divide the chocolate tofu pudding between the 4 pots.5. Place the remaining 20 wafers in a ziploc bag and using a rolling pin, crush into small pieces resembling dirt.6. Sprinkle the crushed wafers on top of the pots and place the gummy worms in the pots.7. Serve.

1 (18 1/4 ounce) box Betty Crocker Super Moist chocolate cake mix
1 (300 g) package soft tofu, well drained
1/4 cup water

Steps:

  • With a food processor or blender, mix cake mix and tofu together.
  • Once mixed, add 1/4 cup water and blend again until smooth.
  • Pour into baking dish and cook according to the directions on the cake mix box, depending what type of dish you use. Sometimes I make cupcakes, sometimes I make a cake and cut it into squares.
  • DO NOT add the oil/egg/whatever else the cake mix box says you need - the tofu takes the place of all of these!

3/4 cup soymilk
2 ounces soy margarine
3/4 lb non-dairy chocolate chips (tofu chocolate)
1 1/2 cups soymilk
1 cup maple syrup
8 ounces bitter chocolate
4 ounces non-dairy chocolate chips (tofu chocolate)
1 tablespoon vanilla extract
1/2 cup brown rice syrup
1/4 cup soymilk
1/4 cup sucanat
1 cup unsweetened nondairy carob chips
2 tablespoons soy margarine
1 tablespoon cocoa (optional)
1/2 teaspoon vanilla extract

Steps:

  • Chocolate Ganche:.
  • Bring the soy milk and vegan margarine to a simmer. Chop the chocolate into small pieces and add to milk. Continue to heat, stir constantly until chocolate melts then cool slightly.
  • Use Immediately or it might separate. IF it does so they recommend heating and stirring vigorously.
  • Note you can also use Carob chips in place of tofu chocolate.
  • Bitter Chocolate Ganche:.
  • Bring soy milk and syrup to simmer. Chop both kinds of chocolate into small pieces and add to milk. Stir until chocolate has melted. Remove from heat. IF separates, add more chocolate. When smooth and of desired consistency, stir in the vanilla.
  • Carob Ganche:.
  • Heat brown rice, soy milk and sucanat to a brief simmer. Add carob chips, vegan margarine and cocoa [if using] and cook for about a minute. Remove from heat and stir in the vanilla.
  • To Ice a cake. Place cake on wire rack and slp a clean baking sheet under. This will catch the drips and you can reuse the runoff.
  • You can also use this as a dip for fresh fruit, dried fruit, or confections. Heat a small amount to start. As you use it add a little more. Avoid warming more than you will need.
