My comfort food that my mom made it all the time. It's easy and tasty. My hubby loves it! If you want thicker sauce, add more cornstarch. Serve it on rice.

2 tablespoons vegetable oil
¼ cup chopped green onion
2 cloves garlic, minced
½ teaspoon minced fresh ginger root
1 pound ground pork
2 tablespoons soy sauce
1 (10 ounce) package frozen peas
1 (1 pound) package soft tofu, drained and cut into bite-size pieces
1 ½ cups water
3 tablespoons oyster sauce
1 tablespoon cornstarch
¼ teaspoon salt
⅛ teaspoon ground white pepper

Steps:

  • Heat oil in a skillet over medium heat. Cook and stir green onion, garlic, and ginger in hot oil until fragrant, about 1 minute. Crumble ground pork into skillet, breaking it into small pieces with the back of a wooden spoon as you stir. Pour soy sauce over the pork mixture; cook and stir until the pork is completely browned, 5 to 7 minutes. Stir peas into the pork mixture; cook and stir until the peas are softened, 3 to 5 minutes. Fold tofu into the pork mixture; cook until the tofu is hot, about 3 minutes.
  • Whisk water, oyster sauce, cornstarch, salt, and white pepper together in a bowl; stir gently into the pork and tofu mixture. Cook until the sauce thickens, about 5 minutes.

1 lb firm tofu
1/2 medium onion, sliced thinly
3 minced garlic cloves
1 tablespoon minced ginger
1 jalapeno, seeded and diced
1/2 teaspoon turmeric
1 1/2 teaspoons curry powder
1 cup coconut milk
1 (3 inch) cinnamon sticks
5 whole green cardamom pods
1 -2 tablespoon fresh cilantro
salt
3 whole cloves
1 cup peas

Steps:

  • Heat 2 teaspoon vegetable oil in pan.
  • Add onion and saute until onion is translucent.
  • Add garlic, ginger, jalapeno, turmeric and curry powder, cook for 2 minutes, then add coconut milk, spices, cilantro, and salt.
  • Lower heat and simmer.
  • Cut drained, pressed tofu into 1/2 inch cubes.
  • Add gently to sauce and continue simmering until tofu is heated through.
  • Add peas and cook until peas are heated through.
  • Served over rice with yogurt and chutney.

3 tbsp. fresh basil (coarsely chopped)
1 tbsp. red curry paste (make sure it's vegetarian)
1 14​-ounce can coconut milk
1 carrot (sliced thin)
1/2 cup green peas
1/2 cup baby corn (chopped)
1 block tofu ( firm or extra firm , well pressed)
2 tbsp. fresh cilantro (chopped)
1 tsp. brown sugar
1 lime (juiced)

Steps:

  • Gather the ingredients.
  • Like most vegan tofu recipes, this one will taste best if you press the tofu first.
  • After your tofu is well-pressed, chop it into about 3/4-inch (bite-sized) chunks.
  • In a medium-sized saucepan, combine the basil, vegetarian red curry paste, and coconut over medium-high heat, stirring well to mix curry paste.
  • Add the remaining ingredients, including the sliced carrot, green peas, baby corn, and pressed and chopped tofu. Bring the mixture to a slow simmer.
  • Cover the pot and allow your curry to cook for about 10-12 minutes or until the veggies are tender, but not overcooked.
  • Serve your vegan Thai red curry over rice if desired. Or pair it with a whole grain, such as quinoa or kaniwa for the extra protein boost.

1 tablespoon unseasoned rice vinegar
1 tablespoon honey
1 teaspoon oriental sesame oil
1/4 teaspoon dry crushed red pepper
1 (12 ounce) package extra firm tofu, drained, cut into 3/4-inch cubes, patted dry with paper towels
1/4 cup water
1 teaspoon cornstarch
2 tablespoons vegetable oil, divided
6 ounces fresh shiitake mushrooms, stemmed, caps quartered
8 ounces sugar snap peas, trimmed
4 garlic cloves, minced
1 tablespoon minced peeled fresh ginger
4 green onions, sliced on diagonal

Steps:

  • Whisk first 5 ingredients in medium bowl to blend. Add tofu and stir to coat; let marinate 30 minutes. Drain, reserving marinade in small bowl. Whisk 1/4 cup water and cornstarch into marinade.
  • Heat 1 tablespoon vegetable oil in large nonstick skillet over medium-high heat. Add tofu and sauté until golden, about 2 minutes. Using slotted spoon, transfer tofu to plate.
  • Add remaining 1 tablespoon vegetable oil to skillet. Add mushrooms and stir-fry until tender, about 3 minutes. Add sugar snap peas; stir-fry 2 minutes. Add garlic and ginger; stir-fry 30 seconds. Return tofu to skillet; drizzle reserved marinade mixture over. Stir-fry until marinade thickens slightly, about 30 seconds. Season to taste with salt and pepper. Transfer to bowl. Sprinkle with green onions and serve.

A ginger and coconut milk reduction can coat pretty much anything that browns nicely on its own. Here, it's pieces of pan-seared tofu, but small morsels of chicken and pork will work just as well. The soy and the teaspoons of molasses give the sauce a little caramelization, and a little shine and gloss. For a fresh side, add some blistered snap peas, tossed with sliced scallions, a little mint and a splash of rice vinegar. Snow peas, green beans, broccoli or asparagus? If it's fresh and green, it'll work just fine.

1 (14-ounce) block firm or extra-firm tofu, drained
3 tablespoons neutral oil, such as grapeseed, vegetable or canola, plus more as needed
Kosher salt and black pepper
3/4 pound snap peas, trimmed
1 (2-inch) piece fresh ginger, peeled and grated (about 2 tablespoons)
2 garlic cloves, grated
1 (13-ounce) can unsweetened coconut milk (light or full-fat)
1 tablespoon soy sauce
2 teaspoons molasses, dark brown sugar or honey
1/2 cup toasted cashews
1 tablespoon rice vinegar
4 scallions, trimmed and thinly sliced
1/4 cup mint leaves, torn if large
1/2 to 1 teaspoon red-pepper flakes (optional)
Rice or any steamed grain, for serving

Steps:

  • Slice the tofu in half horizontally, and leave on paper towels to dry any excess liquid.
  • In a medium skillet or cast-iron pan, heat 1 tablespoon oil over medium-high until it shimmers. Season both sides of the tofu with salt and black pepper, place in the pan and sear without moving until tofu is browned and golden on both sides, turning once halfway through, about 8 minutes total. Move the tofu to a plate.
  • Add 1 tablespoon oil to the pan, and add the snap peas. Cook, stirring occasionally, until blistered and just tender, about 3 minutes. Season with salt and move to a bowl.
  • Heat the remaining 1 tablespoon oil, add the ginger and garlic, and cook until fragrant, about 30 seconds. Pour in the coconut milk, soy sauce and molasses. Simmer, stirring frequently until the sauce reduces and its color deepens to a dark brown, about 6 to 8 minutes. It should coat a spoon without running right off. Stir in the cashews, break the tofu into 1-inch pieces and toss in the pan to coat with sauce. Remove from heat, and taste and adjust seasoning, if necessary.
  • Toss the snap peas with the rice vinegar, scallions, mint and red-pepper flakes, if using. Divide among plates, along with the tofu and cashews. Serve with rice or any steamed grain.

  • Start by preparing the tofu. Drain it well, wrap in paper towel and squeeze gently to remove any excess water. Cube the tofu, season to taste and set aside.
  • In a pot heat up 3 tablespoons of oil, add the bay leaf, garlic, ginger and onion and fry on a medium heat for a minute stirring often. Add the garam masala, cumin and turmeric and continue frying for another minute or so stirring often.
  • Add the tomatoes, salt and pepper, cover and simmer for about 10 minutes, stirring occasionally. In the meantime heat up 2 tablespoons of oil in a large pan and fry the tofu over a medium heat until golden brown (about 2 minutes on each side).
  • Remove the sauce from the heat, discard the bay leaf and puree the sauce. Add the coconut milk, cilantro, tofu and frozen peas. Reheat the dish and adjust the seasoning if needed and serve!
