NO BAKE CORN FLAKE TOFFEE DROP COOKIES

Steps:
- Start by smacking your Mack into small pieces.
- Melt butter in a large saucepan over low heat.
- Add toffee pieces and coconut milk and stir frequently until the toffee is completely melted. Watch the pot carefully to make sure it doesn't burn.
- Once fully melted, add vanilla extract and stir.
- Add corn flakes and sliced almonds, mix until well-covered.
- Drop onto wax paper and allow to cool.
NO-BAKE CORNFLAKE COOKIES

Cook, stirring constantly, over medium heat until a candy thermometer reads 240° (soft-ball stage). Add syrup mixture to dry ingredients; stir well. Drop by tablespoonfuls onto waxed paper. Let stand until set.

- Preheat the oven to 375 degrees F (190 degrees C). Lightly grease cookie sheets.
- In a large bowl, mix together the canola oil, margarine, brown sugar and white sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking soda, baking powder and salt; stir into the sugar mixture. Mix in the cornflakes cereal, oats, chocolate chips and walnuts. Drop by heaping teaspoonfuls onto the prepared cookie sheets.
- Bake for 12 to 15 minutes in the preheated oven, until golden brown. Allow cookies to cool slightly on the cookie sheets before removing to wire racks to cool completely.

This wonderful recipe was in circulation when I was a kid in the 70s. Years later, a woman brought a tray of these to the office, which I instantly recognized as THOSE COOKIES FROM MY CHILDHOOD, and she refused to give me the recipe (said it was her babysitter's secret recipe)! I searched online (tried several recipes) and asked my friends and family off and on if they'd heard of it, for 10 years. I finally JUST found this online! They are SO GOOD! Got this recipe from a magazine a few years ago. This recipe is simple and yet so delcious, and to top it all off they look fantastic when made. Chocolate melts are used (not chips) but white chocolate melts are not accepted in the ingredients.

- Preheat oven to 180dg Celsius Lightly grease and line 2 baking trays.
- Using a mixer, beat butter, sugar and vanilla until pale and creamy. Add egg and mix well. Stir in flour and add sultanas and cornflakes.
- Drop tablespoons of the mixture onto the trays, allowing room for spreading. Bake for 15 to 18 minutes, swapping the trays after 10 minutes, or until the cookies are a light golden colour. Stand for 10 minutes on the trays.
- Transfer to wire rack until cooled completely.
- Stand wire rack over a sheet of baking paper. Dip one side of each cookie into melted chocolate. Place cookies back onto rack (chocolate side up) and set aside for 30 minutes to set.
- Drizzle white chocolate over the cookies, and allow them to set before serving.
