Crunchy Cashew Cookies filled with pieces of buttery salted toffee are the perfect accompaniment to a glass of milk!

3/4 cup unsalted butter
1 3/4 cup light brown sugar, packed
1/2 teaspoon kosher salt
2 large eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1 cup cashews, chopped
1 cup Heath milk chocolate toffee bits

Steps:

  • Brown butter in small saucepan and allow to boil for a couple minutes. Remove from heat.
  • In mixer, beat melted butter with brown sugar for 3-4 minutes. Add salt and eggs. Beat in vanilla. Slowly beat in flour, baking soda and baking powder. Fold in the cashews and toffee bits.
  • Roll dough into one inch balls. Dough will be crumbly. Tap tops with fork or press with thumb, lightly.
  • Bake on parchment lined baking sheet in a 375 degree oven for about 8-10 minutes. Remove and enjoy.

These delightful nutty candies are a perfect crowd pleasing dessert - ready in just an hour.

1 cup cashew halves and pieces
1/2 cup granulated sugar
1/2 packed brown sugar
1 cup butter or margarine
1/4 cup water
1/2 cup white vanilla baking chips

Steps:

  • Heat oven to 350°F. Line 15x10x1-inch pan with foil. Spread cashews in pan. Bake 6 to 10 minutes, stirring occasionally, until light brown. Pour into small bowl; set aside. Set aside pan with foil to use in step 3.
  • Meanwhile, in 2-quart heavy saucepan, cook granulated sugar, brown sugar, butter and water over medium-high heat 4 to 6 minutes, stirring constantly with wooden spoon, until mixture comes to a full boil. Boil 10 to 15 minutes, stirring frequently, until candy thermometer reaches 300°F or small amount of mixture dropped into cup of ice water forms a hard brittle strand.
  • Stir in 1/2 cup of the cashews; immediately pour toffee into same foil-lined pan. Quickly spread mixture to 1/4-inch thickness with rubber spatula. Sprinkle with baking chips. Let stand about 1 minute or until chips are completely softened. Spread softened chips evenly over toffee. Sprinkle with remaining cashews.
  • Refrigerate about 30 minutes or until topping is firm. Break into 2x1-inch pieces. Store in tightly covered container.

1/2 cup butter, softened
1 cup packed brown sugar
1 large egg, room temperature
1/2 teaspoon vanilla extract
2 cups all-purpose flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1/3 cup sour cream
1-3/4 cups chopped cashews
FROSTING:
1/2 cup butter, cubed
3 tablespoons half-and-half cream
1/4 teaspoons vanilla extract
2 cups confectioners' sugar
Cashew halves

Steps:

  • Preheat oven to 375°. In a bowl, cream together butter and brown sugar until light and fluffy, 5-7 minutes. Beat in egg and vanilla. Combine dry ingredients; add alternately with sour cream to creamed mixture. Stir in chopped cashews. Drop by tablespoonfuls onto greased baking sheets. Bake until lightly browned, 8-10 minutes. Cool on a wire rack. For frosting, lightly brown butter in a small saucepan. Remove from the heat and cool slightly. Add cream and vanilla. Beat in confectioners' sugar until smooth and thick. Frost cookies; top each with a cashew half.

1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, softened
3/4 cup granulated sugar
3/4 cup packed light brown sugar
1 teaspoon vanilla extract

1 (10 ounce) package Skor English toffee bits (English toffee bits)

Steps:

  • Heat oven to 350 degrees F.
  • Stir together flour, baking soda and salt.
  • In a large mixer bowl, beat butter, granulated sugar, brown sugar and vanilla until well blended.
  • Add eggs and blend thoroughly.
  • Gradually add flour mixture, beating well.
  • Stir in toffee bits.
  • Drop by rounded teaspoonfuls onto a lightly greased cookie sheet (I used ungreased parchment paper).
  • Bake 10 minutes or until lightly browned.
  • Cool slightly, remove from the cookie sheet to a wire rack.
  • Cool completely.

  • Preheat oven to 375º F. In a large mixing bowl, beat butter with electric mixer on medium speed about 30 seconds. Beat in sugar, brown sugar, baking powder, baking soda and salt until combined. Beat in eggs and vanilla until combined, scraping sides of bowl as necessary.
  • Slowly beat in flour; if too thick mix final parts with a wooden spoon. Stir in cashew and toffee pieces.
  • Drop dough onto large parchment lined baking sheet roughly 2-inches apart. Use a heaping teaspoon as a measurement. They'll spread out, but cookies shouldn't be too large. Bake 8–10 minutes until edges are slightly browned. Cool on baking sheet slightly then transfer cookies to a cooling rack. Bake in multiple batches if needed.
