Number Of Ingredients 9

1 loaf (1 pound) French bread
1/3 cup blue cheese salad dressing
1/3 cup mayonnaise
2 tablespoons Dijon mustard
1 pound smoked or cooked turkey, thinly sliced
12 bacon strips, cooked and drained
1 avocado, thinly sliced
6 tomato slices (1/4 inch thick)
Shredded lettuce

Steps:

  • Halve bread lengthwise. Spread blue cheese dressing on cut side of top of bread. Combine mayonnaise and mustard; spread on cut side of bottom of bread. Layer with turkey, bacon, avocado, tomato and lettuce. Cover with top half of bread. Serve immediately.

2 Kaiser rolls, onion or poppy seed, sliced in half horizontally
1/4 cup basil puree or black olive tapenade
6 ounces thinly sliced turkey breast
2 ounces grated smoked mozzarella cheese
Softened butter

Steps:

  • Preheat a griddle or cast iron skillet. Spread each side of split roll with pesto or tapenade. Layer some turkey and cheese on one half of roll and top with other half.
  • Add a couple of teaspoonfuls of butter to skillet and add roll. Top with aluminum foil, put heavy weight on top and cook the sandwich, weighted down, slowly for 4 to 5 minutes. Turn sandwich over, add a couple more teaspoonfuls of butter to skillet and cook weighted down until cheese has melted--another minute or so. Serve hot and eat with knife and fork. Serve with Fennel and Roasted Pepper Salad below.

I made these sandwiches when I had extra salami from making a pizza earlier in the week. My husband and I both love them.

2 pub-style sandwich buns
1 -2 tablespoon butter or 1 -2 tablespoon margarine
1 slice mozzarella cheese
1 slice cheddar cheese
4 slices salami or 4 slices pepperoni
5 slices deli turkey or 5 slices deli chicken
1 tablespoon mayonnaise (optional)
1 tablespoon mustard (optional)

Steps:

  • Butter both halves of the buns.
  • Broil in the oven until just turning brown.
  • Remove from oven.
  • Add cheese to the top half of the bun.
  • Add turkey and salami to bottom half of bun.
  • Return to oven and broil until cheese just melted.
  • Remove from oven and add mayonnaise and mustard if desired.

1/3 cup balsamic vinegar
2 teaspoons sugar
1 teaspoon lemon juice
2 lbs smoked turkey, sliced
1/2 lb smoked mozzarella cheese, sliced
12 slices white bread or 12 slices whole wheat bread, toasted
3 tablespoons minced fresh sage

Steps:

  • In a mixing bowl, add the first 4 ingredients; toss to combine and let set for 30 minutes.
  • Lay turkey and cheese slices on 6 bread slices.
  • Spoon blackberry mixture over cheese.
  • Sprinkle with minced sage and top with remaining bread slices to make sandwiches.

6 garlic cloves, minced
1/2 teaspoon red pepper flakes
2 (14 1/2 ounce) cans diced tomatoes, drained
2/3 cup basil pesto
salt, to taste
ground black pepper, to taste
4 (6 inch) sub rolls, slit partially open lengthwise
1 1/2 lbs thinly sliced deli turkey
12 ounces smoked mozzarella cheese, sliced into thin rounds

Steps:

  • Adjust oven rack to upper-middle position and heat oven to 500°F
  • Heat oil, garlic, and red pepper flakes in a large skillet over medium-high heat until fragrant, about 1 minute. Add tomatoes and cook until mixture is dry, about 10 minutes. Turn heat off. Stir in 2 tablespoons pesto and salt and pepper to taste.
  • Spread remaining pesto on insides of each roll and layer each roll with turkey, tomato mixture, and sliced cheese. Place sandwiches on baking sheet, with open sides facing up. Bake until edges of bread are golden and cheese begins to melt, about 5 minutes. Serve.
