Italian Chicken Panini Recipe - Crusty bread filled with gooey mozzarella cheese, roasted red pepper, shredded chicken and lots and lots of garlicky pesto.

Steps:
- Slather both sides of ciabatta rolls with pesto, lots of pesto.
- Top with chicken through mozzarella cheese.
- Heat panini press and coat with cooking spray.
- Place sandwiches inside. I do one at a time since my panini press isn't that large.
- When sandwich is heated though and the cheese is melted, remove and serve immediately.

- In a small bowl, combine the first six ingredients; spread half over two bread slices. Layer with chicken, bacon, mozzarella cheese, onion and tomato. Spread remaining mayonnaise mixture over remaining bread slices; place over top. Brush outsides of sandwiches with butter., Cook on a panini maker or indoor grill until bread is browned and cheese is melted, 3-4 minutes.

Steps:
- Preheat an electric grill (such as George Foreman®) for medium heat. Spread olive oil on one side of each bread slice.
- Place one slice of bread, oil-side down, on the preheated grill. Spread 1/2 of the pesto on the bread and put a slice of mozzarella cheese over top. Arrange chicken over the cheese and top with remaining mozzarella. Spread remaining pesto on the other slice of bread and place on top of the sandwich.
- Close the grill and cook until cheese is melted and bread is golden brown and crispy, about 4 minutes.

This recipe came from a craving for a toasted sandwich. It's real easy to make. I guesstimated (high) on cooking time, since I never watch the clock as I cook, sorry.

Steps:
- Heat oven to 400°F.
- Take chicken, put in shallow baking dish, sprinkle with salt, pepper and garlic powder. Cook until no longer pink, 30-40 minutes.
- While cooking slice bread into chunky sandwich slices and butter.
- When chicken is done take out and set oven to broil, place bread under broiler. **Watch the bread, it only takes a couple of minutes and will burn very quickly.**.
- Remove bread and keep broiler on.
- Cut the chicken in half, to make it thinner.
- Slice the avocado.
- Take the toasted bread bottoms, layer; 1 slice cheese, 1/2 of 1 chicken breast, 2 tomato slices, 3 basil leaves, 2 slices of avocado, 1/2 slice of chicken, 1 slice of cheese.
- When finished put top of sandwiches on and press down with palm of your hand.
- Stick back under broiler until cheese is melted, *watch closely*.
- I serve with a side salad.

CHICKEN AND ROASTED PEPPER PANINI
This panini uses sub rolls, jarred roasted red peppers, olives and provolone cheese. You can also use leftover chicken for this sandwich. If you have a Panini Maker this will go even faster. From Cook's Country, July 2008.

- Pat chicken dry with paper towels and season with salt and pepper. Heat 1 Tablespoon oil in large nonstick skillet over medium-high heat until just smoking. Cook half of cutlets until lightly browned and cooked through, 1 to 2 minutes per side. Transfer to plate and repeat with additional 1 Tablespoon oil and remaining cutlets.
- Pulse red peppers, olives, basil, garlic and 1 Tablespoon oil in food processor until coarsely chopped. Spread pepper mixture evenly over both sides of rolls. Layer half of cheese and 2 chicken cutlets over each roll bottom. Top with remaining cheese and roll tops.
- Wipe out skillet. Heat remaining oil over medium-low heat until just shimmering. Arrange panini in skillet and top with large Dutch oven. Cook until bottoms of sandwiches are crisp and cheese is beginning to melt, about 3 minutes. Remove Dutch oven, flip sandwiches, replace Dutch oven and continue to cook until crisp on second side and heated through, about 2 minutes. Serve.
BASIL LEMON CHICKEN PANINI
This takes some of my favorite flavors, basil and lemon, marries them with grilled chicken and melting cheese on a hot grilled bun. yum. I will post the chicken recipe on its own as well (you can use scaloppine too, I prefer the thicker cut) What I do is cook the chicken for dinner making extras and use the leftovers for the panini :)

- *For the chicken*.
- Zest the lemon and squeeze the juice, combine zest and juice with oil and garlic in a small bowl.
- Put chicken breasts between wax paper and pound to an even thickness.
- Place in glad bag or bowl with marinade and leave for 30 minutes to 20 hours.
- Grill chicken on bbq or broil it or even cook it in a hot skillet, 6-8 minutes approximately.
- Cut ciabatta into 4 sandwich size pieces or use whatever bread you prefer. put 1 tbs of pesto on both sides of bread. (or fresh basil).
- Add chicken, fontina cheese, tomatoes and spinach to each.
- Grill in panini press or in a cast iron pan with another heated cast iron pan on top of it to press it down until cheese is melted.

- Spread pesto and mayonnaise on one slice of bread. Layer meats, cheese, and peppers to make a sandwich. Top with second slice of bread.
- Spread top bread slice with half of butter.
- Heat a grill pan over medium heat and spray with cooking spray. When pan is hot, place sandwich butter-side down. Top with a brick covered in foil or another pan and press down. Cook for 2 to 3 minutes until golden brown. Butter top bread slice with remaining butter before turning over panini.
- Grill and press for another minute or two until panini is toasted and cheese is melted.

- In a small bowl, combine mayonnaise, basil, 1 tablespoon lemon juice, and 1 teaspoon garlic. Cover and refrigerate at least 2 hours.
