TIRAMISU (NO RAW EGGS HERE!)
I was looking for a Tiramisu recipe with NO raw eggs! This one is simple and can be made in NO TIME! This recipe is kid friendly too, no cooking involved! Enjoy :)

Steps:
- Brew the coffee.
- In a medium bowl, beat cream and sugar with an electric mixer until soft peaks form.
- Add the ROOM TEMPERATURE Mascarpone Cheese into the sugar and cream and mix carefully.
- In another bowl pour the warm coffee and dip cookies.
- Quickly arranging them side by side over the bottom of a lined loaf pan (Allow the plastic wrap to extend on the sides so you can take it out easily when it is ready to serve).
- Layer cookies with the sweet cream and continue layering with another set of cookies (Will allow three layers).
- When done layering, cover with plastic wrap, refrigerate and allow at least two hours for it to set. (Over night is even better).
- Before serving take it out of the loaf pan remove plastic wrap and sift cocoa powder.

Steps:
- In a mixer with the whip attachment, whip yolks and sugar until thick and pale in color (ribbon stage). Add mascarpone and whip until well incorporated. Pour water into a small bowl then pour powdered gelatin over it. Do not stir. Allow gelatin to absorb all of the water (about 15 minutes) then place the bowl on top of a small saucepan containing simmering water (creating a double boiler). Immediately turn off the heat and allow the gelatin to dissolve completely. In a separate bowl, whip egg whites to a soft peak, gradually add sugar, then slowly pour in dissolved gelatin. Whip to a stiff, glossy peak. Fold whites into mascarpone and yolk mixture then fold in whipped cream.
- In a separate bowl, combine espresso and kalhua. Soak 1 ladyfinger at a time in the espresso mixture. In an 8 by 10-inch pan, arrange soaked ladyfingers close together in neat rows until the bottom of the pan is completely covered. Pour 1/2 of the mousse over the ladyfingers and smooth with a rubber spatula. Sprinkle 1/2 of the chocolate shavings over mousse. Create another layer and chill until set.
STRAWBERRY TIRAMISU WITHOUT EGGS
I love traditional Italian tiramisu but I have a young child so I created a version without eggs or alcohol! My tiramisu combines fresh strawberries, cream cheese, and whipped cream and can be made in advance.

- Reserve 3 or 4 strawberries for the garnish. Slice 1/2 of the remaining strawberries and place in a bowl with 2 tablespoons sugar and the juice of 1 lemon. Stir to combine and set aside.
- Transfer remaining strawberries into a blender. Add 2 1/2 tablespoons sugar and remaining lemon juice. Blend until smooth.
- Transfer strawberry puree to a small saucepan. Cook over low heat, stirring often, until thickened to a sauce-like consistency, 5 to 10 minutes. Taste and add more sugar if strawberry sauce is not sweet enough. Add some water if sauce is too thick. Remove from heat and let cool completely.
- Combine cream cheese and 2 1/2 tablespoons sugar in a large bowl; beat with an electric mixer until smooth and creamy. Whip cream in a separate bowl until soft peaks form. Fold into the cream cheese mixture.
- Arrange ladyfingers snugly in a single layer inside a square glass dish. Pour 1/2 of the strawberry sauce over the ladyfingers. Spread 1/2 of the cream cheese mixture on top. Scatter 1/2 of the marinated sliced strawberries onto the cream cheese mixture. Repeat layers with remaining ladyfingers, sauce, and sliced strawberries. Spread the remaining cream mixture evenly over the top; garnish with the reserved strawberries.
- Cover tiramisu with plastic wrap and refrigerate, 4 hours to overnight.

- Put the double cream, mascarpone, marsala and golden caster sugar in a large bowl.
- Whisk until the cream and mascarpone have completely combined and have the consistency of thickly whipped cream.
- Pour the coffee into a shallow dish. Dip in a few of the sponge fingers at a time, turning for a few seconds until they are nicely soaked, but not soggy. Layer these in a dish until you've used half the sponge fingers, then spread over half of the creamy mixture.
- Using the coarse side of the grater, grate over most of the dark chocolate. Then repeat the layers (you should use up all the coffee), finishing with the creamy layer.
- Cover and chill for a few hours or overnight. Will keep in the fridge for up to two days.
- To serve, dust with the cocoa powder and grate over the remainder of the chocolate.

- -Mix the mascarpone and confectioner's sugar until creamy **.
- -in a shallow bowl, combine coffee and liqueur.
- -have your ingredients ready to assemble.
- -quickly dip ladyfingers (one at a time, right before using) in coffee mixture, and layer them on your pan (in my case, a wine glass). Layer soaked ladyfinger, mascarpone, a sprinkle of cocoa powder, and repeat. (soak, layer, mascarpone, chocolate, soak....).
- -Make it about 5 or 6 layers tall, and finish with a generous sprinkle of chocolate.
- -Chill for at least 30 minutes, preferably a couple of hours.

- In a pan put water and coffee and boil till half in quantity.
- Let this cook down.
- In a bowl beat whipping creme and sugar till sugar dissolves.
- Mix cheese into this and blend some more and set aside.
- Dip lady fingers in cooled coffee mixture and lay them in 8x8 dish. Pour half the cheese mixture over this and spread evenly.
- Dust with cocoa powder.
- Lay another layer of fingers dipped in coffee mix and top with cheese mix .

BECKY'S TIRAMISU! (NO RAW EGGS)
I made this for my girlfriend this year for her birthday, and it turned out AMAZING. I was a bit pressed for time, and I wanted a recipe that did not call for any eggs at all. I tried this version and it turned out FABULOUS!! I sometimes use rum for the liquor, but this time I used Kahlua, and I think I like that better, especially if you only have access to strong coffee as opposed to espresso. I do not have an espresso maker so the Kahlua added that extra COFFEE kick that this dessert needs. Cook time is chill time.

- For the syrup:.
- Combine water and sugar in a small saucepan.
- Bring to a simmer to dissolve the sugar.
- Remove from the heat and cool.
- Add coffee and Kahlua (or liquor of your choice).
- For the filling:.
- Whip the heavy cream, vanilla and sugar until soft peaks form.
- fold cream into the softened mascarpone cheese.
- Place a layer of the lady fingers in the bottom of a shallow 2 quart baking dish.
- Spoon half of the coffee syrup over the lady fingers, making sure they are all evenly coated.
- Spread half of the cheese filling over the layer of lady fingers.
- Repeat another layer of lady fingers, coffee syrup, and remaining cheese filling.
- Use a knife or a flat spatula to spread the top smooth.
- Cover and let sit up to 24 hours before serving. I let mine sit for as little as three hours and it was fine.
- Before serving, dust top with cocoa, or top with shaved chocolate.

Steps:
- Prepare a strong coffee (Greek or espresso) & let cool - add Kahlua to taste.
- Prepare the vanilla pudding according to package recipe and put in fridge.
- Beat Mascarpone cheese with sugar. Add cooled pudding slowly. Beat until completely mixed and the mixture is light and fluffy. Add the Kahlua or brandy. Add 1/3 of the Cool Whip to mixture. (do not over mix).
- Have a rectangular pan (9" x 13" or larger) ready.
- Soak the biscuits very briefly in the coffee/Kahlua mixture only for a few seconds on each side and let the excess liquid drain. Place them in the pan to line the bottom. Spread 2/3 of the cheese mixture over biscuits. Sift some cocoa powder on top to cover. Place another layer of soaked biscuits and top with the remainder cheese mixture. Top with the remaining Cool Whip.
- Cover with sifted cocoa powder.
- Put in the fridge overnight.
