Steps:
- Preheat the oven to 375 degrees F (175 degrees C).
- Grease a baking sheet with cooking spray. Place the tilapia fillets on the sheet, and coat them lightly with cooking spray. Spoon the melted margarine over each fillet, then drizzle with 2 tablespoons of lemon juice. Season with lemon pepper and 2 tablespoons of dill.
- Bake for 15 minutes in the preheated oven, or until the fish is opaque and flakes easily.
- While the fish is baking, combine the cream cheese, 5 tablespoons of lemon juice and 2 tablespoons of dill in a small bowl. Heat in the microwave for 1 minute and 10 seconds, then stir to blend.
- Place fillets onto serving plates, and spoon sauce around them in a decorative fashion.

- For thyme mashed potatoes:
- Boil potatoes until tender, about 20 minutes. Drain; return to pot. Add butter, 6 tablespoons cream, and thyme; mash. Season with salt and pepper. Do ahead Can be made 2 hours ahead. Let stand at room temperature. Rewarm over medium heat, stirring often and adding more cream by tablespoonfuls if dry.
- For balsamic butter sauce:
- Simmer vinegar and garlic in small saucepan over medium heat until reduced to thick syrup, about 5 minutes. Set aside.
- Cook snap peas in boiling salted water until crisp-tender, about 1 minute. Drain. Return to same pan; set aside.
- Heat 1 tablespoon oil in each of 2 large skillets over high heat. Sprinkle fish with salt and pepper. Sauté fish until golden, about 2 minutes per side.
- Rewarm balsamic syrup over medium-low heat. Whisk in 1/2 cup butter 1 piece at a time. Add remaining 1 tablespoon butter to peas; stir over medium heat until warmed. Season with salt and pepper.
- Divide potatoes, tilapia, and peas among plates; drizzle with sauce.

- Preheat the oven to 400 degrees F. Toss the potatoes with 1 tablespoon olive oil, 1 teaspoon thyme, 1/4 teaspoon salt, and pepper to taste in a bowl. Coat a rimmed baking sheet with cooking spray; add the potatoes and spread in an even layer. Roast until browned and crisp, tossing halfway through, about 35 minutes.

LIME AND BASIL TILAPIA
Steps:
- Gather the ingredients.
- Combine olive oil, lime juice, lime zest, fresh basil, bourbon if using, salt, and black pepper in a small bowl.
- Place tilapia fillets in a resealable plastic bag and pour the marinade over the top. Make sure all of the fish is well coated with the marinade. Seal the bag and refrigerate for 30 minutes. Preheat the grill to medium-high heat.
- Remove the fish fillets from the bag and pour the marinade into a saucepan. Bring the marinade to a boil, immediately reduce the heat, and let simmer on low for 5 minutes. Remove from heat, cover, and keep warm.

PAN FRIED TILAPIA WITH LEMON THYME BUTTER SAUCE
Steps:
- Begin by making the sauce. It can be served room temperature.*
- In a medium saute pan, melt two tablespoons of the butter over medium low heat and once melted, add the shallots and cook until soft, about four minutes.
- Add wine and cook to evaporate.
- Add zest, lemon juice, salt, pepper and thyme and cook for two minutes until most of the liquid has evaporated, leaving about a tablespoon of liquid with the solids.
- Turn the heat to low and start stirring in four tablespoons of butter letting them melt into the sauce. Add four more tablespoons of butter stirring in to melt and mix in.
- Remove pan from heat and stir in the last two tablespoons of butter. The sauce will be creamy and slightly thick.
- Pour this sauce through a strainer and discard solids then set aside. *
- Pat fish dry with paper towels.
- In a small bowl, mix flour, garlic powder, onion powder, paprika, salt and pepper. Pour into a small sifter and sift over both sides of the fish.
- Heat a large skillet or saute pan over medium heat and add the olive oil.
- Once the oil is hot, add all of the fish filets and cook for about five minutes, turning half way through.
- Remove to a platter and drizzle some sauce over the fish and serve the rest on the side.

- In a shallow dish, combine the flour, paprika, garlic powder, salt and pepper. One side at a time, coat the tilapia fillets in the flour. Set aside.
- In a large cast iron skillet over medium-high heat, melt 1/4 cup of the butter. Once the butter is melted and beginning to sizzle, add the tilapia fillets side by side in the skillet. Cook the fish for about 5-6 minutes before flipping and cooking for another 5-6 minutes on the other side, or until it flakes easily with a fork*.
- When the fish is cooked, remove it to a plate and keep warm in the oven. Add the remaining butter to the skillet, and once the butter starts sizzling use a spatula to scrape up any brown bits, and squeeze the lemon juice into the pan. Let the sauce simmer for a couple of minutes, then remove from heat. Plate the fish (and any potatoes or rice you may have cooked) and drizzle the lemon butter sauce all over the dish. Sprinkle with parsley and serve immediately!
PARMESAN TILAPIA WITH A WHITE WINE SAUCE
Steps:
- Mix together 1/4 cup flour, Parmesan cheese, thyme, dill, and salt in a shallow dish.
- Pour 1/2 cup milk and 1/2 cup flour in two separate shallow dishes.
- Dip tilapia fillets into plain flour, then milk.
- Thoroughly coat the fillets with the seasoned flour; reserve the remaining seasoned flour.
- Melt butter in a large skillet over medium-high heat. Brown the fillets in the butter, about 2 minutes each side.
- Reduce heat to medium-low and continue to cook until the fish is easily flaked with a fork, 2 to 5 minutes more.
- Transfer the fillets to a dish.
- Increase heat to medium, and pour the remaining seasoned flour into the skillet.
- Whisk in white wine; cook and stir until reduced and thickened, about 5 minutes.
- Gradually stir in 1/4 cup milk. Reduce heat to low and allow sauce to simmer for 1 or 2 minutes more.
- Spoon sauce over tilapia to serve.

Tilapia in a zesty cream sauce. You can substitute any of your favorite fish(maybe not salmon). I've used flounder and orange roughy but prefer tilapia over flounder for the texture and over orange roughy for the price. A very fast and very good fish recipe.

- Pre-heat oven to 375 degrees.
- Spray broiler pan with non-stick spray and place fish on broiling pan and place in oven. Cook for 7 to 10 minutes (the thicker the longer).
- While fish is baking mix remainder of ingredients in a bowl.
- When done baking remove fish and turn oven onto Broil and if using an electric oven move rack up in oven so that fish will be about 6 inches away from burner.

- In a shallow Dutch oven, heat 1 tablespoons of the oil over medium heat.
- Fry the onion, garlic, red pepper, oregano, cumin, 1/4 teaspoons each of the salt and pepper, and the hot pepper sauce, stirring often, for 15 minutes or until the vegetables are tender.
