4 -5 tilapia fillets
1 cup Italian seasoned breadcrumbs
2 tablespoons parmesan cheese
1/2 teaspoon garlic powder
1/2 cup reduced-fat Italian salad dressing

Steps:

  • Preheat oven to 400 degrees F.
  • Mix breadcrumbs, parmesan cheese, and garlic powder in a quart size ziploc bag.
  • Pour Italian dressing in a different quart size ziploc bag.'.
  • Place tilapia, one piece at a time, into the bag with Italian dressing and shake.
  • Then put in the bag with the breadcrumb mixture and shake.
  • Repeat with other fillets. Mound any unused breading on top of fish.
  • Bake in 400 degree oven for 20 minutes, until fish is done and topping is browned.

4 tilapia fillets
3 tablespoons olive oil
sea salt in moderation and pepper
1 large fennel, heart finely chopped
1 small yellow onion, chopped
2 large tomatoes, peeled, seeded and coarsely chopped
100 ml chicken broth
2 tablespoons capers
1 tablespoon dried oregano or 1 tablespoon blend mixed Italian herbs

Steps:

  • In a saucepan, heat 2 tablespoon of oil and cook fennel and onion for about 1 minute. Add tomatoes and simmer for 4 minutes.
  • Add broth, capers, oregano or italian herbs and cook for 3 to 4 minutes longer.
  • Heat remaining oil in a skillet or on a grill. Cook tilapia fillets for 2 to 3 minutes per side. Season to taste with fennel and caper sauce.

1/2 cup grated parmesan cheese
1/4 cup butter, softened
6 tablespoons mayonnaise
2 -3 tablespoons fresh lemon juice
1/4 teaspoon garlic powder (or to taste)
1/4 teaspoon dried basil
1/2 teaspoon black pepper
1/8 teaspoon onion powder
1/8 teaspoon Old Bay Seasoning
2 lbs tilapia fillets

Steps:

  • Preheat your oven's broiler. Spray a broiling pan or aluminum foil with non stick cooking spray.
  • In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.
  • Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over, and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side, then Sprinkle with Old Bay Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.

1/4 cup extra virgin olive oil
1 (14 ounce) can diced tomatoes
1 teaspoon thyme (fresh off the stem or granulated )
1 (4 ounce) can black olives (sliced )
1 teaspoon parsley
1/2 teaspoon fresh basil
2 garlic cloves (minced )
1/2 cup vidalia onion (sweet, finely chopped )
1 teaspoon fresh lemon juice
6 sprigs thyme
6 lemon slices

Steps:

  • Preheat oven to 400 degrees.
  • Lightly spray a shallow baking dish with cooking spray (olive or canola).
  • In a bowl, stir together oil, thyme, diced tomatoes, sliced olives, parsley, basil, chopped onions and lemon juice.
  • In the prepared baking dish, arrange the fillets skin side down and season with salt.
  • Spoon the tomato mixture over the fillets abundantly.
  • Bake, uncovered, in the middle of the oven for about 15 or 20 minutes or until fish just flake.

1 whole lemon
5 -6 tilapia fillets
2 cups Italian breadcrumbs
2 cups flour
3 tablespoons parmesan cheese
2 eggs, mixed well
1/4 cup milk
3 tablespoons garlic powder
3 tablespoons onion powder
3 tablespoons black pepper
1 cup vegetable oil

Steps:

  • Separate Italian breadcrumbs, egg/milk, and flour into 3 separate mixing bowls.
  • Combine garlic, onion, pepper, Parmesan cheese and breadcrumbs.
  • Also, add pinches of each spice to the flour.
  • Heat stove top at medium, and add veggie oil and 3 slices of lemon.
  • Place each fillet first in flour mixture, coat well. Followed by the egg mixture, and finally the breadcrumb mixture. Make sure to coat well.
  • Add up to two fillets into the oiled frying pan and cook till light brown on either side. Make sure to drain the lemons of juice into the pan.
  • Drain on paper towels over plates before serving.
