CREOLE BAKED TILAPIA

- Preheat oven to 350°. Place tilapia in an ungreased 13x9-in. baking dish. In a small bowl, combine tomato sauce, green pepper, onion and Creole seasoning; pour over the fillets., Bake, uncovered, 20-25 minutes or until fish flakes easily with a fork.

TILAPIA CREOLE SAUCE
This was created after reading several Creole sauce recipes and using the ingredients at hand.This would probably work with any mild fish. Next time I make this I will probably add some crab meat.

Steps:
- Add all ingredients except fish and shrimp to a saucepan.
- Simmer sauce until slightly thickened.
- Add shrimp to sauce. Cook 3 to 4 minutes.
- Place fish in a baking dish. Cover with sauce.
- Bake at 350°F for 15 minutes.

- Heat oven to 500°F.
- Place fillets in single layer in baking dish, 12-1/2 x 9 x 2 inches.
- Stir together remaining ingredients except pepper rings.
- Spoon over fillets.
- Bake 5 to 8 minutes or until fish flakes easily with fork.
- Remove fillets to warm platter.
- Garnish with green pepper rings.

CREOLE SAUCE
A very basic creole sauce that can be used when making shrimp creole, stuffed peppers or my favorite as a gravy over meat. I especially love this with rice topped with leftover meatloaf slices and then this sauce spooned over.

Steps:
- In a medium size saucepan, over medium heat, heat the oil.
- Add the chopped onion, celery, bell pepper and garlic cooking until slightly wilted.
- Add the tomatoes and cook for an additional 1 to 2 minutes.
- Add about 1 1/2 cups stock, taking care not to add to much. You can always add more if needed.
- Add the seasonings, bay leaves, hot sauce and Worcestershire sauce; stir and reduce heat to simmer.
- Mix the cornstarch with equal amounts of water and stir 1 tablespoon of mixture into sauce.
- Allow to cook for a few minutes, stir and add additional water/cornstarch mixture if the sauce looks thin or add additional stock if sauce is to thick.
- Simmer about 20 minutes adding additional stock as necessary.
- The last 10 minutes of cooking time, stir in the parsley and green onions.
- Remove bay leaves, taste and adjust seasonings as needed.
- Use the sauce to make your favorite recipe for shrimp creole, etc.
- This sauce can be frozen in sturdy container and thawed in refrigerator before reheating and using.

- In a medium heavy-based saucepan, heat oil over low heat. Add onions, green pepper, garlic and chilies; saute until the peppers are soft.

- Heat oven to 375°.
- Sauce: Heat oil in a small saucepan over medium heat; sauté the garlic and onion for 1 to 2 minutes. Add cream and bring to a simmer. Simmer for about 3 to 4 minutes to reduce slightly. Stir in cilantro, lime juice, and salt and pepper to taste. Simmer for about 1 minute longer. Set aside or refrigerate until nearly serving time.
- Fish: Line a baking pan with foil; spray with nonstick cooking spray. Brush fillets lightly with butter; arrange in the baking pan. Sprinkle lightly with salt and pepper. Bake the fish for 20 to 25 minutes, or until the tilapia is cooked through.
- Warm the sauce up and drizzle a little over each serving of fish.

Steps:
- Heat the bacon grease in a medium, heavy saucepan over medium heat. Add the flour and stirring constantly with a heavy wooden spoon, cook until a roux a light brown forms, about 6 minutes.
- Add the onions, celery, and bell pepper and cook over medium heat, until the vegetables are tender, 5 to 6 minutes.
- Add the garlic, salt, red pepper, and bay leaves, and cook, stirring, for 30 seconds.
- Add the tomato paste and cook, stirring constantly, until it starts to color, about 2 minutes.
- Add the tomatoes, oregano, basil, thyme, lemon zest, Worcestershire and Tabasco, and cook, stirring, for 2 minutes.
- Add the stock and bring to a boil.
- Reduce the heat to low and simmer, uncovered, until the sauce thickens and reduces by one-quarter in volume, 20 to 25 minutes, stirring occasionally.
- To serve immediately, add the shrimp and cook, stirring, until cooked through and tender, about 5 minutes. Adjust the seasoning to taste. Arrange 1/2 to 3/4 cup long grain white rice in each of 4 to 6 large shallow bowls or on large plates.
- Ladle the shrimp Creole over the rice, garnish with chopped parsley, and serve.
