MEXICAN TORTILLA CASSEROLE

- In a large skillet over medium-high heat, heat 1 tablespoon of the olive oil. Add the tomatoes, onion and garlic, stir and cook for a minute or two to soften the onion. Add 2 teaspoons of the chili powder, 1 teaspoon of the paprika and 1 teaspoon of the cumin. Stir and cook the mixture for another minute or two to release the flavors of the spices. Remove the mixture to a bowl and set aside.
- In the same skillet, heat the remaining 1 tablespoon olive oil. Add the chicken along with the remaining 2 teaspoons chili powder, 1 teaspoon paprika, 1 teaspoon cumin and 1/2 teaspoon salt. Saute the chicken until it's deep golden brown and done in the middle, about 4 to 5 minutes. Add 1 cup water and stir to make a sauce. Bring the sauce to a boil and cook until it's reduced by half, about 3 to 4 minutes. Stir in the beans and set aside.
- To assemble the casserole, pour half a jar (about 1 cup) of salsa verde into the bottom of a 9-by-13-inch casserole dish or disposable foil baking pan. Add a layer of half the tortillas on top of the salsa verde, overlapping the edges. Spoon the rice over the tortillas, spread the tomato mixture over the rice, then sprinkle the corn over the tomatoes. Next, add the chicken and bean mixture, then sprinkle on half the cheese and pour over half the enchilada sauce. Next, add the rest of the tortillas, then pour on the rest of the salsa verde and the rest of the enchilada sauce and sprinkle on the rest of the cheese.
- If you're baking the casserole right away, preheat the oven to 375 degrees F and bake, covered with foil, for 20 minutes. Then remove the foil and continue baking for 15 to 20 minutes, or until hot and bubbly. Serve with sour cream and cilantro.

- 1. Preheat oven to 350°F. Grease a 13x9-inch baking dish, then scatter the crushed tortilla chips evenly on the bottom.
- 2. Combine the chicken, beans, corn, tomato sauce, salsa, onion, bell pepper, cilantro, garlic, salt and pepper in a bowl. Place half the mixture evenly in the baking dish. Combine the cheeses, then sprinkle half over the mixture.
- 3. Cover with the remaining half of the chicken-and-bean mixture and sprinkle the remaining cheese over the top.
- 4. Bake for 30 minutes. Let stand for 5 minutes before serving. Serve the garnishes in bowls, so guests can top their portions with diced tomatoes, sour cream and a sprinkle of cilantro.

- Preheat oven to 375°. In a large skillet coated with cooking spray, cook turkey, onions and pepper over medium heat until meat is no longer pink and vegetables are tender, breaking up turkey into crumbles, 6-8 minutes. Add garlic; cook 1 minute longer. Drain. Stir in beans, tomatoes, water, rice, olives, chili powder and salt., Transfer to an 11x7-in. baking dish coated with cooking spray. - Preheat oven to 350 degrees F (175 degrees C).
- Brown the ground beef in a large skillet over medium high heat. Add chili powder, beans, tomatoes and soup; mix well and heat thoroughly.
- Line a 13x9 inch dish with tortillas. Then make a layer with the meat mixture. Make another row of tortillas, then finish off with rest of meat mixture. Top with grated cheese.
- Bake in a preheated oven for 30 minutes.

TIJUANA MANIAC BEEF ENCHILADAS
A change from chicken enchiladas. Be a maniac! Adjust the "maniac" ingredients to whatever you like(that's why it's called maniac); add the full cup of sour cream for creamier filling. Adults and kids love this!

- Preheat oven to 350 degrees F.
- Cook corn until tender and drain; set aside.
- In large heavy skillet, heat 2 tablespoons olive oil over MED-HI heat.
- Add meat and brown; add onions and peppers and cook until softened, but not browned.Drain, if needed.
- Reduce heat to MED and add taco seasoning; mix well.
- Stir in refried beans, rice, and sour cream; cook for about 10 minutes to heat through.
- Remove from heat.
- To assemble: Spoon about ½ cup meat mixture into bottom of well-greased casserole; spread.
- Spoon about 1 tablespoons of meat mixture into tortilla on one side; add spoonful of corn; and roll up.
- Place seam side down in casserole.
- Repeat with all tortillas; reserving about 1/2 cup meat sauce.
- If some corn is left-over, spread down one side of casserole, slightly covering about 1/2inch of one end of tortillas, spread remaining meat sauce down in a row beside the corn; next, add the salsa row; and then, the shredded cheese row.
- Cover with foil and bake for about 30-40 minutes or until bubbly.
- Remove foil; return to oven for 10 minutes to slight brown cheese.
- Serve on chopped onions, tomatoes and lettuce.

Steps:
- Brown beef and onion in pan, Drain.
- Add other ingredients, except cheese.
- Simmer 10 to 15 minutes.
- Place 1/4 cup mixture in a 9x13 baking dish.
- Place a layer of tortillas on top.
- Add more mixture, then cheese.
- Repeat the same until finished.
- Bake at 350 for 25 minutes, until cheese is bubbling.
- Optional: Before serving add last layer of tortillas spread 1 to 1 1/2 cups sour cream over mixture.
