SCALLOPED POTATO GRATIN

Steps:
- Preheat the oven to 400 degrees F.
- In a saucepan, heat up the cream with the bay leaves, thyme, garlic, nutmeg and some salt and pepper.
- While the cream is heating up, butter a casserole dish. Use a slotted spoon to remove the bay leaves and thyme. Pour the heated cream into a large bowl with the potato slices. Mix gently to coat the potatoes. Dust the Parmesan over the potatoes. Season the mix with a little bit of salt and pepper. Mix to gently incorporate. Spoon a little bit of the cream into the bottom of the casserole dish. Then spoon the potatoes in. Level out the potatoes for uniform cooking time. Pour the remaining cream at the bottom of the bowl over the top. Top with some Parmesan and fresh thyme leaves. Cover the dish with aluminum foil, but pull back one corner for the steam to escape. Bake for 40 minutes.
POTATO GRATIN WITH THYME
I love this gratin for its simplicity; just five ingredients. It's all you need, and it's a perfect companion to lamb, beef, or other roasted meats.

- Preheat oven to 400 degrees F. Butter a 1 1/2-quart shallow baking dish.
- Bring a large saucepan of salted water to a boil. Peel potatoes and cut into 1/8-inch slices - a food processor is good for this. Add potatoes to boiling water and cook 4 minutes. Drain potatoes thoroughly in a colander.
- Arrange 1/3 of the potatoes in baking dish, top with 1/3 of the cheese, 1/3 of the thyme leaves, and sprinkle with salt and freshly ground pepper. Repeat twice more, ending with a layer of cheese and thyme.
- Heat milk just to boiling. In a small bowl whisk egg and add hot milk, stirring. Pour evenly over potatoes. Bake 30 minutes, or until top is golden and potatoes are tender.
ROSEMARY THYME AU GRATIN POTATOES

- Preheat oven to 400 F.
- Use a mandolin to slice your potatoes into thin slices - around 1/8" thick. You can cut with a knife but prep time will increase.
- You can place your potato slices into a bowl of water to avoid browning if needed.
- Prep your baking dish with cooking spray and layer your potatoes in little stacks (either vertical or horizontal depending on your preference).
- Melt butter in sauce pan. Add flour once melted and whisk together for 1-2 minutes. Slowly add in milk and seasonings, continuing to whisk over medium heat until the milk has thickened slightly.
- Remove from heat and add your cheese.
- ***If you are like me, you will be tempted to add more cheese. I don't advise it as it can lead to a different consistency and an "oily" result.
- Spoon cheese sauce over potatoes.
- Spray foil with cooking spray (to avoid cheese and potatoes sticking on foil) and then over dish. Bake for 60 minutes.
- Remove foil and bake for an additional 20 minutes or until lightly browned and potatoes are tender to the fork. Enjoy!

- Preheat oven to 400 degrees F (200 degrees C).
- Butter a 1 quart casserole dish.
- Layer 1/2 of the potatoes into bottom of the prepared casserole dish.
- Top with the onion slices, and add the remaining potatoes.

- Preheat oven to 400° F. Grease a 2-quart baking dish; set aside.
- In a large skillet, melt the butter over medium heat. Whisk in the flour and garlic; cook for 1 minute. Gradually whisk in the milk and cream; cook, whisking, until thickened, another 2 minutes or so. Add the thyme, salt, pepper, nutmeg, half of the cheddar and half of the Gruyere. Whisk for about 1 more minute, making sure that all of the cheese is melted. Taste and season with additional salt and pepper, if necessary.
- Arrange half of the potatoes in the prepared baking dish. Season with a little bit of salt. Pour half of the sauce over top. Arrange the remaining potatoes on top, season with another pinch of salt, and pour the remaining sauce over all. Sprinkle with remaining cheese. Cover and bake for 50-60 minutes (or until the potatoes are just about tender), then uncover and bake until browned on top, an additional 15-20 minutes. Let cool slightly, then serve.
