THREE BEAN SALAD | WEIGHT WATCHERS
This easy, tasty Three Bean Salad is just 2 Smart Points per serving on Weight Watchers Freestyle, Blue & Purple plans. It is 5 SmartPoints on the Green plan. Smothered with a tasty dressing this salad is delicious on its own or served as a Weight Watchers side dish.

Steps:
- Drain and rinse the beans and place in a large serving bowl.
- Chop the celery and red onion and add to the beans, giving it a quick mix to combine.
- Next, make the dressing by placing all of the ingredients into a small jug or bowl and use a whisk to combine.
- Pour the dressing over the beans and mix so that all the beans are coated with dressing.
- Sprinkle over the parsley, if using, and stir in.
- Although the salad can be eaten straight away, it tastes even better if left in the fridge for a couple of hours so that all the flavours can soak into the beans.
- Bring back to room temperature before serving.

Steps:
- In a medium saucepan, combine 2 3/4 cups water and add bouillon cubes, bring to a boil.
- Add both kinds of rice. Reduce heat and simmer uncovered for 45-50 minutes. Remove from heat.
- In a large bowl combine rest of ingredients except the lettuce leaves.
- Add rice to bowl with ingredients and toss to combine.
- Place lettuce leaves on a larger platter and top with rice mixture.
- Refrigerate, covered until chill, about 3 hours.

ASIAN BEEF SKEWERS - 3 POINTS
This is from the Weight Watchers New Complete cookbook. Another one of my favorites. These are just like the teriyaki beef strips you get in Chinese restaurants. Oh so yummy and good for you too! Great with rice.

- Preheat a grill. If you are using wooden skewers, soak in water 30 minutes.
- In a gallon size sealable plastic bag, combine all of the ingredients, including the beef. Seal the bag, squeezing out the air. Marinate 15 minutes.
- With tongs, remove the beef from the marinade; discard the remaining marinade. On each of 16, six-inch, metal or wooden skewers, thread one beef strip, piercing the beef in several places.
- Grill until cooked through, about 5 minutes on each side.
- Serve with either chinese mustard, duck sauce and/ or soy sauce to dip the skewers inches.
