2 pounds ground beef
1/2 cup chopped onion
1 package (6.4 ounces) lasagna dinner mix
2-1/4 cups hot water
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 cup sliced fresh mushrooms
1/2 cup chopped green onions
1 cup 4% cottage cheese
1/4 cup grated Parmesan cheese
1-1/2 cups shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef and onion over medium heat 10-12 minutes or until meat is no longer pink; drain. Stir in pasta from the dinner mix, contents of seasoning mix, water, tomatoes, spinach, mushrooms and onions. Bring to a boil. , Reduce heat; cover and simmer 10-13 minutes or until pasta is tender. Stir in cottage cheese and Parmesan cheese. , Transfer to two greased 8-in. square baking dishes. Sprinkle with mozzarella cheese. Cover and freeze one casserole for up to 3 months. , Cover and bake the remaining casserole 15-20 minutes or until bubbly and cheese is melted. , To use frozen casserole: Remove from the freezer 30 minutes before baking (do not thaw). Cover and bake at 350° for 1 hour. Uncover; bake 15-20 minutes longer or until heated through.

1 pound sweet Italian sausage
¾ pound lean ground beef
½ cup minced onion
2 cloves garlic, crushed
1 (28 ounce) can crushed tomatoes
2 (6 ounce) cans tomato paste
2 (6.5 ounce) cans canned tomato sauce
½ cup water
2 tablespoons white sugar
1 ½ teaspoons dried basil leaves
½ teaspoon fennel seeds
1 teaspoon Italian seasoning
1 ½ teaspoons salt, divided, or to taste
¼ teaspoon ground black pepper
4 tablespoons chopped fresh parsley
12 lasagna noodles
16 ounces ricotta cheese
1 egg
¾ pound mozzarella cheese, sliced
¾ cup grated Parmesan cheese

Steps:

  • In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 teaspoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
  • Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
  • Preheat oven to 375 degrees F (190 degrees C).
  • To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13-inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
  • Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

12 whole wheat lasagna noodles
1 pound lean ground beef
2 cloves garlic, chopped
½ teaspoon garlic powder
1 teaspoon dried oregano, or to taste
salt and ground black pepper to taste
1 (16 ounce) package cottage cheese
2 eggs
½ cup shredded Parmesan cheese
1 ½ (25 ounce) jars tomato-basil pasta sauce
2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, add the lasagna noodles a few at a time, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 10 minutes. Remove the noodles to a plate.
  • Place the ground beef into a skillet over medium heat, add the garlic, garlic powder, oregano, salt, and black pepper to the skillet. Cook the meat, chopping it into small chunks as it cooks, until no longer pink, about 10 minutes. Drain excess grease.
  • In a bowl, mix the cottage cheese, eggs, and Parmesan cheese until thoroughly combined.
  • Place 4 noodles side by side into the bottom of a 9x13-inch baking pan; top with a layer of the tomato-basil sauce, a layer of ground beef mixture, and a layer of the cottage cheese mixture. 1 yellow onion, diced
6 cloves of garlic, minced
15 oz ricotta cheese
1 egg
1 teaspoon dried oregano
1 cup freshly grated parmesan cheese
25 oz jar of good quality pasta sauce
2 cups shredded mozzarella cheese
9 lasagna noodles
1/4 cup chopped fresh parsley

Steps:

  • Add garlic and onion to a skillet with a splash of olive oil. Cook over medium high heat for around 10 minutes, until onion is soft. Add sauce, stir, and set aside
  • In a bowl, stir to combine the freshly grated parmesan cheese, ricotta cheese, oregano, egg, and fresh parsley.
  • Grease a 9 X 13 casserole dish with cooking spray
  • Add 1/3 cup sauce to the bottom of the dish and spread it out
  • Add 3 lasagna noodles
  • Place 1/2 cup of the ricotta mixture and spread out over the noodles
  • Add 1 cup of the sauce and spread out over the top
  • Sprinkle on 1/2 cup of mozzarella cheese
  • Add the next layer: 3 noodles, 1/2 cup ricotta, 1 cup of sauce, and 1/2 cup of mozzarella
  • For the final layer, add 3 noodles, the rest of the ricotta, the rest of the sauce, and the remaining 1 cup of mozzarella over the top
  • Cover with foil and bake at 375 degrees for 50 - 60 minutes, until hot and bubbly
  • For crispy edges and top, remove foil for the last 5 minutes (optional)

2 tablespoons olive oil
4 medium garlic cloves, thinly sliced
1/2 medium yellow onion, finely chopped (about 1 cup)
Kosher salt and freshly ground black pepper
1 pound sweet Italian sausage, removed from casings and crumbled
8 ounces lean ground pork
1/3 cup dry white wine
Two 28-ounce containers crushed tomatoes
1 teaspoon dried basil
1 teaspoon dried oregano
2 medium dried bay leaves
One 9-ounce box no-boil lasagna noodles
24 ounces ricotta cheese
1 pound mozzarella cheese, low-moisture or fresh, thinly sliced
2 cups finely grated Parmigiano-Reggiano (about 2 ounces)

Steps:

  • For the meat sauce: Heat the oil in a Dutch oven or a large, heavy-bottomed pot over medium-high heat. When it shimmers, add the garlic and onions, season well with salt and freshly ground black pepper and cook until just softened. Add the sausage and ground pork and stir to break up the meat. Cook, stirring occasionally, until the meat starts to color, 8 to 10 minutes. Add the wine and cook, scraping the bottom of the pan to incorporate the browned bits, until the alcohol smell is cooked off. Add the tomatoes, 1 tablespoon salt, the basil, oregano and bay leaves and season well with freshly ground black pepper. Stir until well mixed and the tomatoes start to simmer. Reduce the heat to low and simmer, stirring occasionally, until the flavors meld, at least 10 minutes and up to 1 hour.
  • For the lasagna: Position an oven rack in the middle of the oven and preheat to 375 degrees F.
  • Spread 2 cups of the sauce in a thin layer over the bottom of a 13-by-9-inch baking dish. Layer 4 noodles over the sauce, top with 2 cups more sauce and spread it evenly over the noodles. Evenly dollop one-quarter of the ricotta across the sauce, top with one-quarter of the mozzarella and sprinkle evenly with one-quarter of the Parmigiano-Reggiano. Repeat with the remaining ingredients, for a total of 4 layers.
  • Cover with foil and bake until the liquids are bubbling and the noodles are beginning to soften, about 40 minutes. Remove the foil and continue baking until the top is golden brown and the noodles are completely tender, about 20 minutes more. Allow to rest 20 minutes before cutting.

6 ounces spicy Italian sausages, casings removed
1 28-ounce can crushed tomatoes with added puree
1/4 cup tomato paste
1/4 cup chopped fresh basil
1 tablespoon golden brown sugar
1 tablespoon dried oregano
1 bay leaf
1/2 teaspoon dried crushed red pepper
LASAGNA
15 lasagna noodles (about 12 ounces)
2 15-ounce containers part-skim ricotta cheese
1 cup grated Parmesan cheese (about 3 ounces)
1 10-ounce package frozen chopped spinach, thawed, drained, squeezed dry
2 large eggs
4 3/4 cups grated mozzarella cheese (about 1 1/4 pounds)

Steps:

  • FOR SAUCE:
  • Heat oil in heavy large saucepan over medium heat. Add onion, carrots and garlic; sauté until softened, about 12 minutes. Add beef and sausages to pan; sauté until cooked through, breaking up meat with back of spoon, about 5 minutes. Add remaining ingredients. Cover and simmer until flavors blend and sauce measures about 5 cups, stirring occasionally, about 15 minutes. Discard bay leaf. Cool.
  • FOR LASAGNA:
  • Preheat oven to 350°F. Cook noodles in large pot of boiling salted water until almost tender, about 7 minutes. Drain; cover with cold water.
  • Combine ricotta and 3/4 cup Parmesan cheese in medium bowl. Mix in spinach. Season to taste with salt and pepper. Mix in eggs.
  • Drain pasta and pat dry. Spread 1/2 cup sauce over bottom of 13x9-inch glass baking dish. Place 5 noodles over sauce, overlapping to fit. Spread half of ricotta-spinach mixture evenly over noodles. Sprinkle 2 cups mozzarella cheese evenly over ricotta-spinach mixture. Spoon 1 1/2 cups sauce over cheese, spreading with spatula to cover (sauce will be thick). Repeat layering with 5 noodles, remaining ricotta-spinach mixture, 2 cups mozzarella and 1 1/2 cups sauce. Arrange remaining 5 noodles over sauce. Spread remaining sauce over noodles. Sprinkle remaining 3/4 cup mozzarella cheese and 1/4 cup Parmesan cheese evenly over lasagna. (Can be prepared up to 1 day ahead. Cover tightly with plastic wrap and refrigerate.) Cover baking dish with aluminum foil. Bake lasagna 40 minutes; uncover and bake until hot and bubbly, about 40 minutes. Let lasagna stand 15 minutes before serving.

2 lbs. of lasagna
1 lb. of 80/20 ground beef
4 cups of marinara sauce
¼ cup of salt for water
½ tsp salt for ground beef
¼ black pepper for ground beef
½ tsp garlic powder for ground beef
2 lbs. of Ricotta cheese
3 cups of shredded mozzarella cheese
1 cup of grated Romano cheese

Steps:

  • In a large pot, add 8 quarts of water and ¼ cup of salt and bring to boil. Add lasagna and cook until al dente (about 8-10 minutes). Be sure to stir occasionally to prevent the lasagna noodles from sticking together.
  • Strain pasta and rinse with cold water. Place noodles on parchment paper for easy assembly of the lasagna.
  • While the lasagna noodles are cooking. In a large skillet on high heat add 1 pound of ground beef, ½ teaspoon of salt, pepper, and garlic powder.
  • Cook until ground beef is no longer pink, about 5-7 minutes, stirring occasionally. Remove ground beef to a bowl to cool.
  • In a large bowl combine 2 pounds of Ricotta cheese, 2 cups of mozzarella cheese, and 3/4 cup of grated Romano cheese.
  • Reserve 1 cup of mozzarella cheese and ¼ cup of grated cheese for the top of the lasagna.
  • In the bottom of a 9x13 baking pan or aluminum lasagna pan add 1 cup of marinara sauce and spread evenly.
  • Next, place enough lasagna noodles (about 6) on top of the marinara sauce to completely cover the bottom of the pan. Next, spoon in half of the cheese mixture and spread evenly. Then add in half of the ground beef and spread evenly. Next, you will complete this process again to complete a second layer.
  • Add 1 cup of marinara sauce and spread evenly. Next, place enough lasagna noodles (about 6) on top of the marinara sauce to completely cover the bottom of the pan. Next, spoon in the remaining cheese mixture and spread evenly. Then add in the remaining ground beef and spread evenly either with a spoon or your hand.
  • To finish the lasagna, place enough lasagna noodles (about 6) on top of the cheese mixture. Next, add 1 cup of marinara sauce to the top of the lasagna and spread evenly. Then, sprinkle the 1 cup of mozzarella cheese and ¼ cup of grated Romano cheese over the marinara sauce to finish off building the lasagna.
  • Place lasagna into a 350 degree oven and cook for 45-60 minutes until the lasagna is heated throughout and the cheese on top has melted.

I used to have a great recipe for Lasagna sauce, but of course the book it's in is at my parent's winter home. I used about three different recipes to approximate it, so here's my current version. I made this for dinner the other night and it was fairly easy and very good. This recipe is written for use with fresh Lasagna sheets, the ones that aren't dried and you don't have to boil or anything. You can just as easily use the dried pasta, just boil according to the package directions and use in place of the sheets.

2 tablespoons olive oil
3 onions, chopped
3 garlic cloves, crushed
1 lb lean ground beef
1 cup red wine
1 (156 ml) can tomato paste
1 cup tomato sauce, plus enough to top off tomato paste to one cup
1 cup tomato juice (I used low sodium, high fiber V8)
1 teaspoon dried basil
1 -3 teaspoon italian seasoning
1 green bell pepper, chopped
1 -2 cup button mushroom, cut into bite-sized pieces
2 celery ribs, chopped
salt and pepper
6 -8 fresh lasagna sheets
1 (8 ounce) container ricotta cheese
1 ball mozzarella cheese, shredded
1/2 cup parmesan cheese
2 eggs
1 cup mozzarella cheese, shredded, although I used marble cheddar and it worked just as well

Steps:

  • Heat olive oil over medium heat. Add onion and garlic and cook until soft, but not browned, about 5 minutes.
  • Add ground beef and cook until no longer pink, stirring frequently. Add the red wine, cover and cook for 5 minutes.
  • Add tomato paste, tomato sauce, tomato juice and spices and mix well. Add vegetables and mix to combine. Heat through and add extra wine until desired consistency. You can make this ahead of time and leave it to cool before assembling the lasagna.
  • In a large bowl, combine ricotta, first portion of mozzarella cheese, Parmesan and eggs.
  • Spray a 19X13 lasagna pan with non-stick spray. Use a bit of the sauce liquid on the bottom of the pan to keep the first layer of noodles from sticking. Put down a layer of lasagna noodles, then top with globs of cheese mixture and about one half of the meat mixture. Repeat and top with a third layer of lasagna noodles. Try to have a bit of the meat sauce left to put on the top layer just to keep it moist. Top with second batch of mozzarella, or any shredded cheese you have on hand.
  • Pre-heat oven to 375°F Bake for 30 minutes, covered with foil. Try not to press the foil down too much, as the cheese will stick when it starts to bubble. Remove the foil and bake for an additional 10 minutes. Let stand for approximately 10 minutes before cutting.

BEEF LASAGNA

This is pretty much how lasagna gets made in Australia, usually no cottage cheese or ricotta. I have been making it this way for over 30 years, but can't find a similar recipe on here yet. I find it easier to make the beef sauce the day before, and reheat it a little, but I like to use the cheese sauce hot and freshly made. This mix fills a tray 12x8x3 for me, and I find it easier to cut through the top layer with kitchen scissors before taking to it with a knife to cut into serving portions.

2 tablespoons oil
1 large onion, finely diced
2 slices bacon, chopped
2 garlic cloves, minced
600 g beef mince, leanest you can buy
1 (140 g) can tomato paste
1/2 cup red wine
1 (440 g) can chopped tomatoes, and their juice
2 cups beef broth
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1 pinch mixed pumpkin spice or 1 pinch freshly ground nutmeg
50 g butter
50 g flour
600 ml milk
50 g shredded parmesan cheese
salt and pepper
1 (250 g) packet instant lasagna sheets (12)
50 g shredded parmesan cheese

Steps:

  • Meat Sauce: Heat the oil in a large fry pan over a medium heat.
  • Add the onion and bacon and cook until the onion is golden and tender.
  • Add the minced garlic and cook a couple of minutes more.
  • Add the mince and cook, breaking up with a fork, until the meat has all changed colour.
  • Now add the tomato paste and "cook it out" for another minute or two before adding the wine.
  • Allow the wine to reduce a little, before adding the remaining sauce ingredients.
  • Simmer until reduced and thickened and a deep rich red/ brown.
  • *You could call this"cooked" in 30 minutes, but I like to let it simmer about 2 hours, stirring regularly to make sure it's not catching.
  • Add a little more broth or water if it looks like doing so.
  • Cheese Sauce:.
  • Melt the butter, add the flour and stir well.
  • Allow to cook gently for about 2 minutes, then add the milk all in one go, and whisk briskly until heated and thickened.
  • Allow to cook a couple of minutes more on a simmer.
  • Add the cheese and season to taste with salt and pepper.
  • Assembly of the lasagna:.
  • Spread a little of the beef sauce across the bottom of your pan.
  • Cover with a layer of beef sauce and drizzle about half a cup of cheese sauce over this-no need to be too particular.
  • Cover with a layer of lasagna sheets.
  • Repeat the beef sauce and cheese sauce two more times, then a final layer of sheets.
  • Spread the remaining cheese sauce (there should be about 1 cup) over the last layer of sheets, and sprinkle with the shredded parmesan cheese.
  • Bake in a moderate oven for about 1 hour.
  • Allow to stand about 15 minutes before cutting into squares to serve.

1 cup chopped onion
4 cloves garlic, minced
3 pounds lean ground beef or ground turkey
1 tablespoon dried basil
1 tablespoon dried oregano
1/2 teaspoon crushed red pepper flakes
3 (28-ounce) cans diced tomatoes
1 (14-ounce) can tomato sauce
4 cups ricotta cheese (regular or part-skim)
8 ounces grated mozzarella cheese (regular or part-skim), divided
1 egg
1/2 teaspoon ground black pepper
12 uncooked lasagna noodles
1/4 cup grated Parmesan or Romano

Steps:

  • For the Lasagna Filling:
  • Preheat oven to 350 degrees F.
  • Heat the oil in a large stock pot over medium heat. Add onion and garlic and saute 3 minutes, until soft. Add, beef and cook 5 to 7 minutes, until browned all over, breaking up the meat as it cooks. Stir in basil, oregano and red pepper flakes.
  • Add diced tomatoes and tomato sauce and bring to a simmer. Reduce heat to low and simmer 10 to 15 minutes. Remove from heat and set aside.
  • For the Lasagna:
  • Meanwhile, in a large bowl, combine ricotta, half of the mozzarella, egg, and black pepper. Mix well.
  • Pour 1 cup of the meat sauce in the bottom of a 13 by 9-inch lasagna pan. Arrange 4 UNCOOKED lasagna noodles on top of sauce, overlapping noodles slightly to cover the bottom. Spoon half of the cheese mixture over noodles. Top with 1 1/2 cups of meat sauce and 4 more noodles. Top second layer of noodles with remaining cheese mixture, 1 1/2 cups of meat sauce and 4 more noodles. Top noodles with 1 1/2 cups of meat sauce and remaining mozzarella cheese. This lasagna recipe uses three cheeses to help put the comfort in comfort food.

Number Of Ingredients 14

2 tsp 10 mL olive oil
2 cups 500 mL onion, chopped
2 cups 500 mL mushrooms, sliced
2 cloves garlic, chopped
3 lb 1.36 kg lean ground beef
2 tbsp 30 mL chili powder
3 cans CAMPBELL'S® Condensed Tomato Basil & Oregano Soup
3 cups 750 mL CAMPBELL'S® No Salt Added Ready to Use Beef Broth
4 cups 1 L light ricotta cheese
3 cups 750 mL mozzarella cheese, shredded
1 cup 250 mL Parmesan cheese, grated
2 eggs
12 oven ready lasagna noodles (uncooked)
1 tsp 5 mL black pepper

Steps:

  • Heat oil in a large stock pot over medium heat. Add the onions and mushrooms and sauté for 5 minutes until the vegetables caramelize.
  • Add the garlic and ground beef and continue to sauté for another 5 minutes or until the beef is well browned. Add the chili powder and continue to sauté for 2 minutes.
  • Add the soup and cook for 5 minutes. Add broth and continue to cook for 10 minutes or until the meat is cooked. Remove from heat and set aside.
  • In a large mixing bowl,combine ricotta cheese,half of the mozzarella cheese,eggs and black pepper. Mix Well.
  • Preheat oven to 375°F. Spread 2 cups of the meat sauce in the bottom of a 9" x 13" pan. Layer 4 lasagna noodles on top,overlapping noodles slightly to cover the bottom.
  • Spread half of the cheese mixture over noodles. Layer with 2 ½ cups of meat sauce and 4 lasagna noodles.
  • Spread the remaining cheese mixture on top of the second layer of noodles,layer with 2 ½ cups of meat sauce and 4 lasagna noodles.
  • Spread the remaining meat sauce on lasagna noodles,top with parmesan cheese and remaining mozzarella cheese.
  • Cover with foil and bake for 45 minutes at 375°F.
  • Uncover and continue to bake for 15 minutes until the top is golden and bubbly. Let stand for 5 minutes before slicing.
