1 pound bulk pork sausage (or turkey sausage)
2 stalks celery (sliced)
1 onion (medium, chopped)
1 clove garlic (crushed)
42 ounces canned baked beans ( in tomato sauce)
15 ounces canned lima beans (drained)
15 ounces canned kidney beans (drained)
8 ounces canned tomato sauce
1 tablespoon dry mustard
2 tablespoons honey
1 tablespoon white vinegar
1/4 teaspoon red pepper sauce

Steps:

  • Heat the oven to 400ºF.
  • If you have sausage meat that is in casings, remove the casings from the meat. Cook the sausage, celery, onion and garlic in a 10 inch skillet over medium heat for 10 minutes, stirring occasionally, until the sausage is no longer pink. Drain of the fat.
  • Mix the sausage mixture with the remaining ingredients in an ungreased 3 quart casserole. Bake at 400ºF, uncovered, for about 45 minutes, stirring once, until everything is hot and bubbly.

One 15-ounce can Great Northern beans, (rinsed and drained)

One 15-ounce can red kidney beans, (rinsed and drained)
1 cup water
½ cup ketchup
2 tablespoons spicy brown mustard
1 tablespoon cider vinegar
1 tablespoon packed brown sugar
½ cup low fat shredded cheddar cheese

Steps:

  • Preheat oven to 350° F. Spray 9x13-inch baking dish with nonstick spray.
  • Spray a large nonstick skillet with nonstick spray. Heat over medium high. Add the kielbasa and cook, stirring occasionally, until browned, 3 to 4 minutes. Add the onion and garlic; reduce heat and cook, stirring occasionally, until the onion is softened, about 4 minutes. Add all beans, water, ketchup, mustard, vinegar, and brown sugar; cook, stirring occasionally, until the flavors are blended, about 5 minutes. Pour the bean mixture into the baking dish.
  • Sprinkle the bean mixture with the cheese. Bake the casserole until bubbling in the center, 35 to 40 minutes. Let stand about 5 minutes before serving.

12 slices white sandwich bread
Coarse salt and ground pepper
2 packages (1 pound each) smoked Polish sausage, halved lengthwise, cut into 2 1/2-inch pieces
2 large onions, chopped
8 cloves garlic, chopped
1/2 cup tomato paste
1 can (14.5 ounces) reduced-sodium chicken broth
1 cup dry red wine
1 teaspoon dried thyme
4 cans (14.5 ounces each) Great Northern or cannellini beans, rinsed and drained

Steps:

  • In a food processor, pulse bread until large crumbs form (you should have about 6 cups); season with salt and pepper. Set aside.
  • Preheat oven to 375 degrees. In a 6-quart heavy-bottom saucepan, cook sausage, onions, and garlic, stirring occasionally, until onions are translucent and sausage is starting to brown, 15 to 20 minutes.
  • Add tomato paste, broth, wine, thyme, and 2 cups water; bring to a boil. Reduce to a simmer; add beans. Simmer, stirring occasionally, until slightly thickened but still soupy, about 10 minutes.
  • Stir in 2 cups of the breadcrumbs. Divide sausage mixture between two 3-quart shallow baking dishes or eight 10-ounce ramekins. Top with remaining breadcrumbs.

3/4 lb ground beef
1 lb Little Smokies sausage
2 stalks celery, sliced or 1 cup sliced celery

3 large garlic cloves, finely chopped
2 (21 ounce) cans baked beans (any variety)
15 ounces butter beans, drained
15 ounces kidney beans, drained
2 cups ketchup
4 tablespoons ground mustard
4 tablespoons honey
4 tablespoons cider vinegar
1/16 teaspoon red pepper sauce
1 pinch salt
1 pinch pepper

Steps:

  • In a 10 inch skillet, add the sausage, ground beef, celery, onion, and garlic and cook over medium heat 8-10 minutes, stirring occasionally, until the meat is no longer pink; drain.
  • In a a 3½ - 6 quart slow cooker, combine the meat mixture and remaining ingredients. Cover & cook on low heat setting 5-6 hours.
  • Turn off the slow-cooker, let it's contents cool, and transfer to the refrigerator (the flavors really meld over-night).
  • The next day cook in the slow-cooker, on low heat setting, another 2 hours.

Combine several favourites in this sausage one-pot. This hearty casserole has a wonderful smokiness from the chorizo and reheats well for busy nights or leftover lunches

3 tbsp olive oil
8 pork sausages
2 small cooking chorizo (about 100g), sliced
1 large onion, finely chopped
2 bay leaves
1 tbsp tomato purée
½ tsp light brown muscovado sugar
1 tbsp red wine vinegar
400g can chopped tomatoes
2 x 400g cans cannellini beans or any other white beans, drained but not rinsed
50g crustless white bread, torn into chunks
15g parmesan, finely grated
2 tbsp thyme leaves

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Heat 1 tbsp olive oil in a shallow flameproof casserole over a medium heat and fry the pork sausages for 10 mins until browned on all sides. Transfer to a plate. Drizzle another 1 tbsp oil into the casserole, scatter in the chorizo and cook for 3-4 mins until beginning to crisp and release its oil. Add the onion and bay, and cook for 5 mins more until the onion is soft.
  • Stir in the tomato purée and scatter over the sugar. Turn up the heat to medium-high and cook for another 2 mins until sticky and jammy, then splash in the vinegar. Simmer for 1 min more, then tip in the tomatoes and beans. Stir, then bring to a simmer. Nestle the sausages in the sauce and pour over any of the resting juices. Bake uncovered for 30 mins.
  • Meanwhile, make the crumbs. Tip the bread and parmesan into a food processor and pulse with half the thyme to a chunky texture. Scatter the crumbs over a baking sheet and drizzle with the remaining oil. Bake alongside the casserole for 10 mins, stirring the crumbs once or twice until crisp and golden. Scatter the crumbs over the casserole with the rest of the thyme just before serving, or serve on the side for everyone to help themselves.

2 tbsp olive or rapeseed oil
1 onion, finely chopped
2 medium sticks celery, finely chopped
1 yellow pepper, chopped
1 red pepper, chopped
6 cooking chorizo sausages (about 400g)
6 pork sausages (about 400g)
3 fat garlic cloves, chopped
1 ½ tsp sweet smoked paprika
½ tsp ground cumin
1 tbsp dried thyme
125ml white wine
2 x 400g cans cherry tomatoes or chopped tomatoes
2 sprigs fresh thyme
1 chicken stock cube
1 x 400g can aduki beans, drained and rinsed
1 bunch chives, snipped (optional)

Steps:

  • Heat 2 tbsp olive or rapeseed oil in a large heavy-based pan.
  • Add 1 finely chopped onion and cook gently for 5 minutes.
  • Add 2 finely chopped medium celery sticks, 1 chopped yellow pepper and 1 chopped red pepper and cook for a further 5 mins.
  • Add 6 chorizo sausages and 6 pork sausages and fry for 5 minutes.
  • Stir in 3 chopped garlic cloves, 1 ½ tsp sweet smoked paprika, ½ tsp ground cumin and 1 tbsp dried thyme and continue cooking for 1 - 2 mins or until the aromas are released.
  • Pour in 125ml white wine and use a wooden spoon to remove any residue stuck to the pan.
  • Add two 400g cans of tomatoes, and 2 sprigs of fresh thyme and bring to a simmer. Crumble in the chicken stock cube and stir.
  • Cook for 40 minutes. Stir in a 400g drained and rinsed can of aduki beans and cook for a further five minutes.
  • Remove the thyme sprigs, season with black pepper and stir through some snipped chives, if using. Serve.
