575g Bramley apple (3 medium apples), peeled, cored and sliced to 1cm thick
2 tbsp golden caster sugar
175g plain flour
110g golden caster sugar
110g cold butter
1 tbsp rolled oats
1 tbsp demerara sugar
double cream , clotted cream or custard, to serve

Steps:

  • Heat the oven to 190C/170 fan/gas 5.
  • Toss 575g peeled, cored and sliced Bramley apples with 2 tbsp golden caster sugar and put in a 23cm round baking dish at least 5cm deep, or a 20cm square dish. Flatten down with your hand to prevent too much crumble falling through.
  • Put 175g plain flour and 110g golden caster sugar in a bowl with a good pinch of salt.
  • Slice in 110g cold butter and rub it in with your fingertips until the mixture looks like moist breadcrumbs. Shake the bowl and any big bits will come to the surface - rub them in. Alternatively, pulse in a processor until sandy (don't over-process).
  • Pour the crumb mix over the apples to form a pile in the centre, then use a fork to even out.
  • Gently press the surface with the back of the fork so the crumble holds together and goes crisp, then lightly drag the fork over the top for a decorative finish.
  • Sprinkle 1 tbsp rolled oats and 1 tbsp demerara sugar over evenly, if you wish.
  • Set on a baking tray and put in the preheated oven for 35-40 minutes, until the top is golden and the apples feel very soft when you insert a small, sharp knife. Leave to cool for 10 minutes before serving.

1 tbsp white flour
1/2 cup white sugar
2 tbsp lemon juice (or water)
1/2 tsp ground cinnamon
1 cup rolled oats / oatmeal ((quick cooking is ok))
1 cup white flour
1 cup brown sugar (loosely packed)
1/2 tsp baking powder
1 tsp cinnamon powder
125g / 1/2 cup unsalted butter, melted
Pinch of salt
Vanilla ice cream

Steps:

  • Preheat oven to 350F/180C.
  • Peel apples, then cut into 1.5cm/ 3/5" cubes.
  • Place apple in a bowl. Sprinkle with flour, sugar and cinnamon, then pour over lemon juice. Toss, then spread out evenly in a 1.5 litre/1.5 quart baking dish.
  • Place Topping ingredients in a bowl. Mix until clumps form, like wet sand (see video). Spread over the apples, crumbling with fingers if required to get that crumbly topping.
  • Bake for 30 to 40 minutes or until golden brown. Remove, cover loosely with foil to keep warm and let stand for 10 minutes before serving (let's the apple filling come together).
  • Serve warm with vanilla ice cream!

1.5 kg mixed apples, (I like to use half Bramley)
150 g golden caster sugar
1 lemon
50 g unsalted butter, (cold)
100 g plain flour

Steps:

  • Preheat the oven to 200°C/400°F/gas 6.
  • Peel and core the apples, then quarter and chop into 3cm chunks.
  • Place in a saucepan on a medium heat with 100g of sugar and a few fine gratings of lemon zest.
  • Pop the lid on and cook for 5 minutes, or until the apples have softened. Remove the heat and leave to cool a little.
  • Meanwhile, cube the butter and place in a mixing bowl with the flour. Rub together with your fingertips until it resembles breadcrumbs, then scrunch in the remaining sugar to add a little texture.
  • Transfer the apples to a 25cm x 30cm baking dish and sprinkle over the crumble topping.
  • Bake in the oven for 25 to 30 minutes, or until golden and bubbling. Delicious served with vanilla custard.

200 g Fresh cherries (stoned and chopped)
1 tbsp Coconut oil
2 tbsp Sweetener
1 tsp ground cinnamon
100 g Ground almonds
80 g Oats ((blended into flour))

2 tbsp Sweetener

Steps:

  • Add 1 tbsp of coconut oil to a large pan and gently heat the apples and cherries for 5 minutes.
  • Add 2tbsp sweetener and cinnamon and cook for a further 2 minutes.

180 gr (1 3/4 cup -crushed) Digestive Biscuits (crushed)
90 gr (6 tablespoons) Unsalted Butter (melted)
50 gr (1/3 cup) Plain / AP Flour
50 gr (1/2 cup) Rolled Oats
45 gr (4 tablespoons) Brown Sugar
1 teaspoon Ground Cinnamon
45 gr (3 tablespoons) Unsalted Butter (melted)
2 Small Apples (cubed)
500 gr (18 oz) Cream Cheese (at room temperature)
120 gr (1/2 cup) Sour Cream (at room temperature)
80 gr (1/3 cup) Caster Sugar (or fine white granulated sugar)
1 teaspoon Vanilla Paste (or extract)
1 teaspoon Ground Cinnamon
3 Eggs (at room temperature)

Steps:

  • Line the bottom of a 22 cm / 9 inch Springform Pan with Baking Paper and grease the edges.
  • Crush the Digestive Biscuits into fine crumbs. Add the melted Butter and mix until it looks like wet sand.
  • Firmly press the biscuit crumbs on the bottom of the pan then place in the fridge.
  • Preheat your oven on 140°C/285°F.
  • In a large mixing bowl, mix together the Flour, Rolled Oats, Brown Sugar and Ground Cinnamon. Pour over the Melted Butter then mix with a spatula until you get large crumbs. Set aside.
  • Wash and core the apples, then cut into small cubes (see note 1). Set aside.
  • in the bowl of your mixer, mix together the Cream Cheese and Sour Cream with the paddle / leaf attachment until smooth (see note 2).
  • Mix in the Sugar, Cinnamon and Vanilla then the Eggs one at the time. Mix until just combined (see note 3). The cheesecake batter will be quite liquid - that's normal.
  • Take the springform pan with the chilled crust out of the oven and pour the cinnamon cheesecake mixture over it. Tap the pan over a hard surface a few times to remove any air bubbles.
  • Place the cubed apples over the cheesecake mixture (see note 4), then top them with the crumble.
  • Place the apple crumble cheesecake on the lowest rack of your oven and bake for 60 to 70 minutes. The cheesecake should still jiggle a little bit when fully baked.
  • Turn off the oven and leave the cheesecake to cool down inside it with the door opened slightly for 1 hour. Take it out of the oven and leave to cool down at room temperature for 1 other hour, then in the fridge for at least two to three hour, or preferably overnight.

2 ½ teaspoons baking powder
1 teaspoon kosher salt
2 teaspoons Club House® Ground Cinnamon
½ cup unsalted butter, melted
1 ½ cups granulated sugar
2 large eggs
1 cup milk
1 ½ teaspoons vanilla extract
1 cup granny smith apple, peeled and chopped
1 cup powdered sugar
1 tablespoon milk
1 tablespoon maple syrup
½ teaspoon Club House® Ground Cinnamon

Steps:

  • Preheat the oven to 180°C (350°F).
  • Make the crumble topping: In a medium bowl, mix together the granulated sugar, brown sugar, flour, oats, Club House® Ground Cinnamon, and salt until combined. Pour in the melted butter and stir until combined and crumbly, with the consistency of wet sand. Set aside.
  • Make the apple bread: In a large bowl, whisk together the flour, baking powder, salt, and Club House® Ground Cinnamon.
  • In a medium bowl, whisk together the granulated sugar and melted butter until well combined. Then, whisk in the eggs, milk, and vanilla until smooth.
  • Add the wet ingredients mixture to the dry ingredients and stir until just combined. Do not overmix. Fold in the apples until incorporated.
  • Pour the batter into a parchment lined loaf pan, smoothing the top. Sprinkle the crumb topping over the batter, pressing down lightly.
  • Bake the apple bread for 65-75 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Let the bread cool completely in the pan, then use the parchment to lift it out.
  • While the bread cools, make the maple glaze: In a small bowl, whisk together the powdered sugar, milk, and maple syrup until smooth.
  • Drizzle the glaze over the bread, then sprinkle with the Club House® Ground Cinnamon. Let the glaze set, then cut the bread into 6-8 slices.
