SWEET AND SPICY SLOW COOKER CHILI



Sweet and Spicy Slow Cooker Chili image

This easy Crockpot chili recipe feeds a crowd OR you can freeze it for easy weeknight dinners. Perfect for tailgating!

2 pounds ground beef (I used 80-20)
1 large onion (diced)
1 red bell pepper (diced)
1 green bell pepper (diced)
5 garlic cloves (minced)
2 large jalapeno peppers (minced (remove the seeds and veins for less heat...leave them for more heat))
1/4 cup chili powder
3 tablespoons ground cumin
2 tablespoons ground cayenne pepper (Or more if you like a lot of heat!)
2 tablespoon crushed red pepper
6 ounce jar of chopped sweet peppers and juice
1/2 cup packed light brown sugar
1 - 28 ounce can tomato sauce
1 - 28 ounce can crushed fire roasted tomatoes (I use Muir Glen Organic)
salt and pepper to taste

Steps:

  • In a large frying pan, brown the ground beef until no longer pink and transfer to the slow cooker using a slotted spoon. Drain off all but two tablespoons of fat and add the onions to the pan.
  • Cook the onions over med-high heat until they begin to soften. Add the peppers to the onions and sauté until softened. Add the garlic and jalapeno peppers, cooking for one minute longer. Transfer the mixture to the slow cooker with the beef.
  • Add the chili powder, cumin, cayenne pepper, crushed red pepper, sweet peppers and juice to the beef mixture and stir to combine.
  • Add the brown sugar, tomato sauce and crushed tomatoes stirring thoroughly to be sure all the ingredients are incorporated. Season with salt and pepper to taste and cook in the slow cooker on high for 3-4 hours or low for 5-6 hours.
  • Serve with your favorite chili toppings, we love greek yogurt, sour cream, shredded cheddar, green onions, and pickled jalapenos...just to name a few.

1 tablespoon butter
4 tablespoons extra virgin olive oil, divided
1 large orange bell pepper, diced
2 cups sweet onions such as Vidalia, diced
2 tablespoons garlic, minced
1 pound Italian hot sausage, removed from casing
1 pound 80/20 ground beef
1 pound ground bison (pre-packaged and available in most supermarkets)
2 6-ounce cans tomato paste
1 15-ounce can tomato sauce (Glenn recommended Contadina so we used that brand)
1 16-ounce can dark red kidney beans, rinsed and drained
1 22-ounce can Bush's Grillin' Beans (Bourbon and Brown Sugar)
1 cup brown sugar
2 tablespoons red pepper flakes (or less for less heat)
1 tablespoon garlic powder
1 ½ tablespoons paprika
1 tablespoon chili powder
1 teaspoon freshly ground black pepper
1 teaspoon kosher salt
1 teaspoon cayenne pepper (or less for less heat)
Juice from one lime
Shredded cheddar cheese, for garnish
Saltine Crackers to serve with chili (Glenn says this is a must)

Steps:

  • In a large sauté pan, melt butter in two tablespoons of oil over medium heat.
  • Add bell pepper, onions and garlic and sauté for 8-10 minutes to caramelize the vegetables.
  • Pour this into a large slow cooker.
  • Heat the pan to medium high and add the remaining oil.
  • Add sausage meat, ground beef and ground bison meat and cook until meat has browned.
  • Scrape all of this into the slow cooker with the vegetables.
  • Then add all other ingredients to the slow cooker except the lime, cheddar and crackers.
  • Stir, cover and set slow cooker to low and cook for five hours.
  • Stir after five hours and add lime juice into the cooked chili.
  • To serve, dish out into bowls, top with cheddar cheese and serve with the saltine crackers.

Steps:

  • In a large skillet over medium heat add the olive oil. Once shimmering add the onion and bell peppers. Cook until onion is translucent, about 8 minutes. Add the garlic and cook for 1 minute more. Remove from heat and transfer this mixture to the slow cooker.
  • Place the large skillet over medium heat again, this time add the hot Italian sausage and the ground beef. Using a wooden spoon, break the meat up into small pieces. Cook until no longer pink. Drain the fat.
  • Place the cooked meat in the slow cooker.
  • Add all of the remaining ingredients to the slow cooker except for the garnishes. Cover and cook on low for 4 hours. Stirring at least once within those 4 hours (making sure to scrape the bottom so no food sticks).
  • Serve warm! This recipe makes a lot! And it's filling :)

2 lbs mild Italian sausage
15 1/2 ounces canned black beans
28 ounces canned diced tomatoes
28 ounces canned pinto beans
1/4 cup chili powder
2 tablespoons cocoa
1 cup chopped poblano pepper
2 cups chopped green bell peppers

Steps:

  • Partially brown the sausage in a separate pan, some of it will still be pink, and drain the excess moisture/grease.
  • In a large soup pot, over high heat, add sausage, tomatoes, beans, and chili powder.
  • Bring to a boil, lower heat to medium.
  • While this boils, chop the peppers. (I used 2 poblanos, and 3 small bell peppers.).
  • Add these to the pot as well. Stir thoroughly, add cocoa.
