This is a very simple and hearty chili with plenty of flavor. It's even better the second day! I serve this with lowfat Cheddar cheese and lowfat sour cream. It's also delicious with crackers.

1 ½ teaspoons olive oil
1 pound ground turkey
1 onion, chopped
2 cups water
1 (28 ounce) can canned crushed tomatoes
1 (16 ounce) can canned kidney beans - drained, rinsed, and mashed
1 tablespoon garlic, minced
2 tablespoons chili powder
½ teaspoon paprika
½ teaspoon dried oregano
½ teaspoon ground cayenne pepper
½ teaspoon ground cumin
½ teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Heat the oil in a large pot over medium heat. Place turkey in the pot, and cook until evenly brown. Stir in onion, and cook until tender.
  • Pour water into the pot. Mix in tomatoes, kidney beans, and garlic. Season chili powder, paprika, oregano, cayenne pepper, cumin, salt, and pepper. Bring to a boil. Reduce heat to low, cover, and simmer 30 minutes.

I actually prefer using ground turkey over beef, as it makes the chili less heavy, not to mention lower in fat, although ground beef can be used if you prefer. This chili has a good zing of heat without being too hot. I like to serve it with a sprinkle of grated cheddar cheese on top and a side of cornbread. If you have leftovers, it freezes very well. Just put the leftovers into a zip top bag and thaw it out before you want to use it again.

1 tablespoon vegetable oil
1 lb ground turkey
2 cups chopped yellow onions
1 cup chopped anaheim chili (or any mild)
2 minced jalapenos
4 teaspoons minced garlic
2 tablespoons chili powder

1/2 teaspoon black pepper
2 teaspoons ground cumin
1 teaspoon dried oregano

Steps:

  • Heat the oil in a heavy pot over medium heat. Add the meat and stir to break up the pieces. Cook, stirring, until the meat is brown and cooked through, about 5 minutes.
  • Add the onion, chile peppers, garlic, chili powder, paprika, salt, black pepper, cumin, oregano, and cayenne, and cook, stirring, until soft, about 4 minutes.
  • Add the can of diced tomatoes (including juices), kidney beans, the tomato paste, sugar, and beer to the pot. Stir well and bring to a boil. Lower the heat to medium-low and simmer, uncovered, for 30 minutes, stirring occasionally to prevent the chili from sticking to the bottom of the pot.
  • Simmer the chili for at least 30 minutes, or the chili will slightly smell/taste like beer. One hour of simmering is ideal.

Delicious with sweet corn bread and shredded Cheddar cheese. After the initial cooking on the stove, you can easily transfer this to a slow cooker.

1 large onion, diced

1 medium yellow onion, chopped
3 cloves garlic, minced (from jar is ok)
1 1/2 lbs ground turkey
1 (10 ounce) can diced tomatoes with mild green chilies

1 teaspoon ground cinnamon

Steps:

  • In a large pot over medium heat saute the onion, garlic and ground turkey until turkey is browned.

  • Saute for 5 more minutes.
  • Add black beans, corn and chicken broth to the pot.
  • Puree cannellini beans in a blender or food processor.
  • Add puree to the pot.
  • Stir well and simmer for 10 minutes.
  • If the turkey mixture seems dry when browning, add a splash of olive oil.
  • The spice measurements are approximate.
  • If you want more or less heat, adjust the cayenne and the hot sauce.
  • If desired, garnish with sour cream, shredded cheese or green onions.

Steps:

  • Heat the vegetable oil in a large pot over medium-high heat. Add the tomato paste, chili powder and cumin and cook, stirring, until the mixture darkens, about 1 minute. Add 1/2 cup water, the bell pepper, scallion whites and 1 teaspoon salt. Cook, stirring, until the bell pepper is crisp-tender, about 4 minutes. 4 garlic cloves, chopped fine
1/4 cup olive oil
two 35-ounce cans plum tomatoes including the juice
a 15-ounce can tomato purée
1/4 cup chili powder
1 1/2 tablespoons ground cumin
1 tablespoon dried hot red pepper flakes
1 teaspoon dried orégano
1/2 teaspoon cinnamon
1 tablespoon salt
1/2 teaspoon black pepper
the drumsticks, legs, and wings from a cooked turkey
2 green bell peppers, chopped coarse
two 19-ounce cans kidney beans rinsed and drained well
sour cream as an accompaniment if desired
coarsely grated Cheddar as an accompaniment if desired

Steps:

  • In a large kettle cook the onion and the garlic in the oil over moderate heat, stirring, until they are golden, add the tomatoes with the juice, the tomato purée, 2 cups water, the chili powder, the cumin, the red pepper flakes, the orégano, the cinnamon, the salt, and the black pepper, and combine the mixture well. Add the turkey parts and simmer the chili, uncovered, stirring occasionally, for 2 hours. Transfer the turkey parts with a slotted spoon to a plate and let them cool until they can be handled. DH and I enjoyed this hearty chili from Norman Kolpas' "The Chili Cookbook." While the recipe calls for masa harina, I think I would omit it next time as the chili really did not need extra thickening and I think it detracted from the flavor just a bit. Also, DH and I ate this chili in a bowl, we did not serve it over rice. It lent itself well to this method. I used baby bellas for the mushrooms. Finally, we sprinked colby jack (I think that was what I had in the fridge) shredded cheese over the top, which I think is a must. Cheddar or a mexican blend of cheeses would also be good.

Steps:

  • In a large saucepan, heat oil over medium heat. Add onions, garlic, paprika, chile flakes, cumin and coriander and saute 2 to 3 minutes.
  • Add turkey and mushrooms, increase heat to high and saute until turkey is no longer pink, 7 to 10 minutes, stirring to break meat into rough chunks.
  • Stir in remaining ingredients except masa and steamed rice.
  • Bring to a boil, reduce heat slightly and simmer briskly, stirring occasionally, until mixture is fairly thick but still slightly liquid, about 1 1/4 hours.
  • Sprinkle in masa, stir and simmer until thick, about 15 minutes more.
  • Discard bay leaves.
  • Serve over rice or robust boiled beans.

Steps:

  • Coat a large saucepan with cooking spray and cook 1 chopped sweet onion over medium heat until tender, about 5 minutes. Add chili starter, oregano, and chicken broth; increase heat to medium-high and simmer for 20 minutes.
  • Coat a large stock pot with cooking spay and cook remaining 1/2 chopped sweet onion, green bell pepper, and jalapeno pepper over medium heat until tender, 5 to 8 minutes. Add ground cumin, cocoa powder, chili powder, garlic salt, paprika, and cayenne pepper; cook 2 minutes. Mix in ground turkey and pork; cook and stir until meat is crumbly, evenly browned, and no longer pink, about 10 more minutes. Drain and discard any excess grease.
  • Stir diced tomatoes with green chiles, fire-roasted tomatoes, and diced tomatoes with green peppers and onions into chili; simmer for about 3 hours.

1 large yellow sweet onion
6 garlic cloves
1 large carrot
3 celery ribs
1 red bell pepper
1 lb lean ground turkey
2 teaspoons cumin

1 tablespoon cracked black pepper
1 tablespoon celery salt
1 tablespoon kosher salt
1 (30 ounce) can pinto beans
1 (12 ounce) can tomato paste
3 (10 ounce) cans tomatoes and green chilies (mild, Rotel)
1 fresh jalapeno
1 cup yellow sweet onion
cheddar cheese

Steps:

  • Chop all vegetables into small pieces.
  • In a large soup style pot saute all the vegetables in olive oil until soft. 15 minutes.
  • Add ground turkey to sauteed vegetable and stir until well cooked.
  • Stir in all seasonings; cumin, oregano, paprika, chili powder, black pepper, celery salt, kosher salt. Mix well to incorporate all the seasonings.
  • Dump in tomato paste, Rotel tomatoes, and pinto beans.
  • Mix all ingredients well.
  • Reduce your heat to low and let simmer for 1 hour to meld all the flavors and thicken the chili. Stir often. Be sure to taste the mixture to see if it needs more salt, pepper or chili powder to your liking.
  • Put chili into large bowls and garnish with shredded cheddar cheese (Tillamook), finely chopped jalapeno and fresh onion.
  • Pair the chili with a local pale ale beer.
