Contrary to the title, it doesn't have men in it. However it is a man's best friend, it's thick, not as tomato-ey as most chili's. Best served with fresh bread.

5 pounds lean ground beef
2 (10 ounce) cans tomato sauce
1 (15 ounce) can kidney beans, rinsed and drained
1 green bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
1 medium onion, chopped
2 cloves garlic, chopped
¾ cup chili powder
1 cup water

Steps:

  • Place the ground beef in a large pot over medium-high heat. Cook, stirring to crumble, until evenly browned. Drain off grease. Place the pot over medium heat, and add the onion, garlic, green pepper, red pepper and kidney beans. Cook and stir for a few minutes. Stir in the tomato sauce and water, and season with chili powder. Simmer over low heat for 40 minutes uncovered.

12 ounces center-cut bacon, diced
2 pounds beef stew meat, cut into 1/4-inch cubes
2 medium onions, chopped
4 garlic cloves, minced
3 cans (14-1/2 ounces each) no-salt-added diced tomatoes, undrained
1 cup barbecue sauce
1 cup chili sauce
1/2 cup honey
4 teaspoons reduced-sodium beef bouillon granules
1 bay leaf
1 tablespoon chili powder
1 tablespoon baking cocoa
1 tablespoon Worcestershire sauce
1 tablespoon Dijon mustard
1-1/2 teaspoons ground cumin
1/4 teaspoon cayenne powder, optional
3 cans (16 ounces each) kidney beans, rinsed and drained
Shredded reduced-fat cheddar cheese, optional

Steps:

  • In a large Dutch oven, cook bacon until crisp; remove to paper towels to drain. Reserve 3 tablespoons drippings. , Brown beef in drippings. Add onion; cook until onions are tender. Add garlic; cook 1 minute longer. Return bacon to pan. Stir in the next 12 ingredients. , Bring to a boil. Reduce heat; cover and simmer until meat is tender, about 3 hours. , Add beans and heat through. Discard bay leaf. Garnish with cheese if desired.

This is my husbands' favorite chili, it's thick, creamy and delicious.It's also very quick and easy to make. Origianlly his mother's recipe, I have adapted it and made it even better (at least that's what my husband says!)

1 -1 1/2 lb ground beef
1 lb stewing beef (cut up in small chunks)
1 large onion, diced
1 cup flour
1 (28 ounce) can diced tomatoes (remove some juice)
2 (15 ounce) cans tomato soup
1 (28 ounce) can kidney beans (or two cans)
1 (15 ounce) can mushrooms (or use 6-10 fresh mushrooms)
3 teaspoons chili powder (or more)
salt and pepper
1 dash garlic powder, onion salt, tobasco sauce and liquid smoke (optional)

Steps:

  • Combine meat and onion in a large pan and cook until meat is browned, drain juices.
  • Stir in 1 flour,.
  • Add tomatoes, soup, mushrooms and kidney beans.
  • Add seasonings, stir.
  • Bring to boil, then simmer on low for 1 hour stirrng occasionally.

I've been cooking this chili recipe for about a year, and every time, it came out great. I work in a restaurant and I tried the chili one day. So I asked my boss if I could have the recipe, and this came out just as good (or even better) than any restaurant's. It makes quite a lot (12 quarts) but can easily be reduced by the ingredients to your liking (2, 4, 6, 8, 10 quarts)

3 lbs ground beef
3 bell peppers (red or green)
2 large onions
1 celery heart
96 ounces whole tomatoes
96 ounces pinto beans
96 ounces kidney beans
32 ounces tomato juice
3/4 cup chili powder
1/3 cup cumin

Steps:

  • Chop all of the onions, peppers, and celery and defrost the beef.
  • In a deep bowl, squash the whole tomatoes until they are coarse, but still retain their chunkiness and set them aside for use later.
  • In a separate pan, place the beef.
  • Cook the beef until it is at a medium--medium-well.
  • Drain all of the fat out of the meat pan.
  • In the desired soup pot, cook the chopped peppers, onions, and celery.
  • Add the meat to the vegetables.
  • Add the chili powder and cumin to the meat and vegetables.
  • Cook until all of the ingredients have been covered with the chili powder and cumin, or until they take on a red color.
  • Add the previously squashed tomatoes to the soup pot.
  • Mix well, then add the beans and all of their juice.
  • Finally, add the tomato juice.
  • Bring to a boil, and then simmer for about 2 hours (this could be less time, if desired, but keep in mind the longer the simmer, the better the taste).
  • Serve, but be careful because it's extremely hot!
