Burger Cobb Salad is the ULTIMATE salad filled with all the low carb things a burger needs. **This recipe makes enough burgers for a household: 4-6 patties. Each patty becomes one salad. The salad component is for ONE salad. Adjust accordingly.**

1 pound ground beef (93% is better since you'll add bacon!)
8 slices of bacon, finely diced
1 tablespoon Montreal Steak Seasoning
2 slices American Cheese
2 cups romaine lettuce, shredded
1/8 cup pickles
1/8 cup French's onions
1/8 cup shredded cheddar
1/8 cup Burger Special Sauce
1/8 cup spicy ketchup (low-sugar if watching carbs!)
1/8 cup mayo
2 tablespoons dill pickle relish
2 tablespoons pickle juice
1 tablespoon horseradish (use less or none if you're worried about spice)
1 teaspoon Worcestershire sauce

Steps:

  • To prepare burgers:
  • Gently mix beef, bacon, and seasoning in a large bowl. Form "normal" sized patties. Using one patty, break apart into mini burgers, about two inches across.
  • Grill over medium-high heat until cooked to your preference. Melt cheese over top.
  • Make sauce:
  • Whisk all ingredients together. This can be done up to three days in advance. Store in an airtight container for up to a week.
  • To assemble ONE salad:
  • Add lettuce to a shallow bowl, and line up all the ingredients. Serve, and toss together.

2 chicken breasts, cooked and finely diced
1 ounce iceberg lettuce, washed and chopped
1 ounce romaine lettuce, washed and chopped
2 ounces tomato, washed and chopped
1/2 avocado, thinly sliced
2 ounces bacon, cooked and finely chopped
2 ounces hard boiled eggs, finely chopped
2 ounces grated Roquefort cheese
Original Cobb Salad Dressing to taste, recipe follows
2 egg yolks
2 cups olive oil
1 lemon, juiced
3 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1 clove garlic, minced
1/2 cup water
Salt and pepper, to taste

Steps:

  • Place greens in bowl. Arrange all other ingredients attractively across greens. Add dressing when ready to serve.
  • Whip eggs vigorously until yolks turn pale yellow. Slowly incorporate oil to form an emulsion. Add remaining ingredients and season with salt and pepper.

The Cobb salad created in 1937 at the Brown Derby. Recreated here to place the same ingredients on a burger. Not chopped but sliced for easier enjoyment! I give a choice between chicken the original ingredients or beef. If the avocado is firm you can grill it to soften. It may take longer then the meat, depending on ripeness. Take note of optional way to add the egg.

1/2 lb ground chicken (2 patties) or ground beef (2 patties)
2 hamburger buns, split and toasted not to firm of a roll
2 romaine leaves, or
2 boston lettuce leaves
2 -4 slices bacon, cooked crisp
1/2 ripe avocado, seed removed, peeled, and cut into 4 slices
2 slices tomatoes
1 hard-boiled small egg, sliced into 4
1 teaspoon chopped fresh chives
1 tablespoon red wine vinegar
1 teaspoon dijon-style mustard
1/2 teaspoon sugar
salt and pepper
1/4 cup mayonnaise
1/4 cup Roquefort cheese, crumbled
1 pinch garlic powder

Steps:

  • Mix all dressing ingredients together set a side.
  • Over high heat on an oiled grill place patties of choice.
  • Cook about 2 to 3 minutes.
  • With a metal spatula test to see if the burger easily lifts from the grate. If not continue grilling, until it does.
  • Flip all the patties.
  • Close lid and continue grilling for another 2 to 3 minutes.
  • Or continue to cook till desired.
  • .Place dressing on toasted buns. (You can gut the buns for easier eating.).
  • Divide all the ingredient's between each of the buns.
  • Enjoy!
  • Optional: Dice the egg and add it to the dressing.

The Cobb Salad was originally created by Bobb Cobb who owned the Brown Derby Restaurant in Hollywood, California. This version comes from Michael Bonacini who owns a restaurant in Toronto, Canada...is a chef on the Food Network and a regular guest on my favourite talk show. You can use goat's cheese or feta instead of roquefort and you can substitute the chicken with turkey, ham or shrimp.

1/2 head iceberg lettuce, washed & dried
1/2 head romaine lettuce, washed & dried
1 bunch watercress, washed & dried
1 small Belgian endive, washed & dried
2 medium ripe tomatoes
2 chicken breasts, poached
6 slices crisp bacon, crumbled
1 avocado
3 eggs, hard boiled
2 tablespoons chives, chopped
1/2 cup Roquefort cheese, crumbled
1/4 cup water
1/4 cup red wine vinegar
1/4 teaspoon sugar
1 teaspoon freshly squeezed lemon juice
1 1/2 teaspoons salt
3/4 teaspoon fresh ground black pepper
3/4 teaspoon Worcestershire sauce
1/4 teaspoon dry mustard
1 clove garlic, minced (very small)
1/4 cup olive oil
3/4 cup salad oil

Steps:

  • PREPARE DRESSING: Combine all ingredients, except oils& blend well.
  • Combine olive oil& salad oil in a separate bowl& mix well.
  • Add to other ingredients& mix well.
  • Cover& refrigerate until using.
  • It keeps well for 6 weeks but be sure to blend well again just before using.
  • PREPARE SALAD: Shred first 4 ingredients into 1/4 inch strips, toss together and place on 4 plates.
  • Dice tomatoes, season with salt& pepper and place on top of the greens in one area of the plate.
  • Cut chicken into strips, toss with bacon bits and 1 tbsp of the salad dressing and place beside the tomatoes.
  • Dice or coarsely mash the avocado; season with salt& pepper and place next to the chicken.
  • Cut the hard boiled eggs into quarters and arrange on the plates.
  • Drizzle dressing over the salad, sprinkle with the roquefort& chives.

  • First, prepare the bacon by frying on the stove top until crispy. Remove from heat and place the bacon on a paper towel lined plate to dry.
  • Prepare the hard boiled eggs. Place the eggs in the bottom of a large pot and fill it with cold water. (Note: when I make hard boiled eggs, I always make more than I'll need for the recipe. They're great in salads or on sandwiches later in the week!). Place on the stove top, cover, and bring to a boil over high heat. Remove from heat and allow to sit, covered, for 12 minutes. Drain, rinse with cold water to stop cooking, then peel and slice.
  • For the burgers, use your hands to gently combine the ground beef, salt, pepper, garlic, onion powder, and Worcestershire in a medium sized mixing bowl. Form into 5 patties, placing a dent with your thumb in the center of each one.
  • Heat a drizzle of olive oil in a cast iron skillet over medium high heat. When the oil is shimmering, add the beef patties. Cook for 3-4 minutes on the first side, flip, then add an ounce of cheese to each patty, allowing it to melt while the other side cooks an additional 3 minutes, or to desired doneness. Remove from heat.
