- Preheat oven to 375°F. Butter a 1 1/2 to 2 quart shallow baking dish. Melt the butter in a medium saucepan over medium heat, until bubbly. Add the vegetables and cook about 5 minutes. Stir in flour. Cook for 1 minute. Remove from heat and whisk in milk. Return to heat and cook, whisking, until the sauce comes to a boil and is thickened, about 10 minutes. Remove from heat and add the cheese, whisking until melted. Turn the tuna into a bowl and flake with a fork. Do not mince. Stir in the hot cheese sauce, then add the cooked noodles, parsley if using, and salt and pepper to taste. Mix together well. Pour the mixture into a baking dish. Mix together the topping ingredients and sprinkle over the top. Bake until bubbly and browned on top, 25 to 35 minutes.
TUNA NOODLE CASSEROLE
My mother in law made this. I got it from her. I change mine around deleting some ingredients and adding more of others. Play with it to your liking. You can substitute canned chicken for the tuna. I also use the bagged Homestyle wide noodles We love it served with garlic bread. You can make this ahead, keep refrigerated and cook later. You may have to adjust the cooking time and wait to put the cheese on top until almost done cooking.

- Mix all ingredients in large mixing bowl.
- You may need to add a little extra milk. The mixture should be smooth, not too runny or dry.

Based on a recipe from Pam Spaude's & Jan Owan-McMenamin, R.D.'s cookbook, One Year of Healthy, Hearty & Simple One-Dish Meals. They recommend serving this with a tossed salad and a fruit to complete the meal nutritionally. I use Campbell's Healthy Request Cream of Celery Soup, although the nutrition facts presented here are from the book and based on a "regular" can of soup. Per serving: 352 calories, 13.7 mg cholesterol, 387 mg sodium, .7 gm saturated fat, 2.8 gm fat. Update after finally trying this recipe for the All You Can Cook Buffet special event: This is like emergency tuna casserole since all the ingredients are pantry/freezer items for me. It came together quickly on a Friday night after a long work week and the thought of cooking wasn't appealing! This hit the spot. Would probably not put it on the menu for guests, but would certainly reach for this recipe in a pinch for something very quick and yet satisfying. And yes, a side salad is great with this dish.

QUICK AND EASY STOVE-TOP TUNA NOODLE CASSEROLE
This recipe is as easy as making a box of macaroni and cheese (almost), and it's a one dish comfort meal. I've been making this as long as I can remember, and don't think I ever had a recipe for it. When I made it this week, I looked to see if it was posted, and I could only find recipes with "cream of whatever" soup or sour cream, and most of them required baking in the oven. This recipe is creamy and delicious from the simple bechamel (white) sauce. This is a flexible recipe, too. I love to use a generous amount of a mixed pepper blend, freshly ground, for seasoning because I don't like bland food. I've also used lemon pepper seasoning, and/or freshly snipped chives and parsley. It's up to you to choose your favorite seasoning or herbs to go nicely with the tuna. Tuna noodle casserole is one of the most popular American casseroles, and is common is any region of the U.S.

- Cook the egg noodles.
- During the last few minutes add the frozen peas to the simmering noodles; then drain.
- Meanwhile, melt the butter in a medium saucepan over medium heat.
- Whisk in the flour, and continue whisking for about 2 minutes or until the flour butter mixture starts to turn a beige color (a very light colored roux).
- Continue whisking and slowly add 1 of the cups of milk, incorporating the liquid as you whisk; then add the remaining 1 cup of milk.
- Let it come to a gentle boil, stirring regularly to keep from burning on the bottom of the pan as it thickens.
- When it's thick enough to coat a spoon and leave a strip behind where you ran your finger through the coating on the spoon, it's ready to add the drained tuna.
- Break up the solid tuna chunks with a fork and mix throughout the sauce.
- Add the salt, pepper, and any seasonings or herbs.
- Pour the tuna sauce over the noodles and peas, and serve.

- Preheat oven to 375 degrees F. Spray a 2 quart baking dish with Pam.
- In a heavy skillet, cook onion in butter over medium heat until softened, about 10 minutes. Add mushrooms and continue to cook until juices are released. Add soy sauce and sherry and continue to saute onions and mushrooms until liquid in the pan evaporates. Add flour, stir and cook for 1 minute. Add broth slowly, keep stirring as mixture thickens, then add milk. Add tuna, lemon juice, and salt. Add noodles, mix well, and put into prepared pan. In a bowl, mix bread crumbs, cheddar cheese, and the oil. Sprinkle this mixture over tuna and noodles. Bake until bubbly, 20 to 30 minutes.
