This is another of those cakes passed down from Mom. When DH and I were married, he did not like cake. Mom has a reputation for making fabulous cakes and she converted him! Prep time includes 15 minute cooling time.

Yield 1 tube or bundt cake

Number Of Ingredients 13

1 cup butter
2 cups sugar
3 cups flour
1 cup buttermilk
4 eggs
1 teaspoon baking soda
2 teaspoons cinnamon
1 teaspoon nutmeg
1/2 teaspoon ginger
1/2 teaspoon clove
1 cup jam or 1 cup preserves (flavor of your choice; we usually use strawberry or grape)
1 teaspoon vanilla
powdered sugar

Steps:

  • Cream butter and sugar.
  • Beat in eggs, one at a time.
  • Sift dry ingredients together.
  • Add dry ingredients to creamed mixture alternately with buttermilk.
  • Stir in vanilla.
  • Fold jam (or preserves) into cake mixture.
  • Turn into well-greased tube (angel food) or bundt pan.
  • Bake at 300 deg F for 15 minutes, then raise heat to 350 deg F and bake 45 minutes.
  • Let cool 15 minutes.
  • Sift powdered sugar over it while still warm.

I remember my Aunt Murna telling me she made this cake often when she was a young girl. Through the years, she made improvements to it, and her cake become a real family favorite. It has been a popular staple at our reunions.

1 cup raisins
1 can (8 ounces) crushed pineapple, undrained
1 cup butter, softened
1 cup sugar
4 large eggs
3 cups all-purpose flour
1/3 cup baking cocoa
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1 jar (12 ounces) or 1 cup blackberry jam
2/3 cup buttermilk
1 cup chopped pecans
CARAMEL ICING:
1 cup butter, cubed
2 cups packed brown sugar
1/2 cup 2% milk
3-1/2 to 4 cups confectioners' sugar

Steps:

  • In a small bowl, combine raisins and pineapple; let stand for at least 30 minutes. , In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine dry ingredients; gradually add to creamed mixture alternately with jam and buttermilk, beating well after each addition. Stir in raisin mixture and nuts. , Spread into two greased and floured 9-in. round baking pans. Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. , For icing, in a large saucepan, melt butter over medium heat. Stir in sugar and milk. Bring to a boil. Remove from the heat; cool until just warm. Pour into a large bowl; beat in enough confectioners' sugar to achieve a spreading consistency. Spread frosting between layers and over the top and sides of cake.

3 cups self-rising flour
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground cloves
1 teaspoon ground allspice
2 cups granulated sugar
1 cup butter, softened
1 cup blackberry jam
1 cup raspberry jam
4 eggs
1 cup milk
1 teaspoon vanilla extract
1 cup chopped nuts (optional)
2 cups packed light brown sugar
1/2 cup milk
8 teaspoons butter
1/8 teaspoon salt
4 cups confectioners' sugar
1 cup chopped nuts (optional)

Steps:

  • Preheat the oven to 350 degrees F. Grease and flour three 9-inch round cake pans.
  • To prepare the cake, sift the flour and spices into a large mixing bowl. Stir in the sugar. Using a mixer at medium speed, beat the butter, jams, eggs, milk, and vanilla until smooth, 2 minutes. Stir in the nuts, if desired.
  • Divide batter evenly among the prepared pans. Bake 18 to 23 minutes, until a wooden pick inserted near the center comes out clean. Cool in the pans on a wire rack 10 minutes. Remove the layers from the pans to cool completely on a wire rack.
  • To prepare the icing, combine the brown sugar, milk, butter, and salt in a large saucepan. Bring to a boil over medium heat, stirring constantly. Remove from the heat and add the confectioners' sugar. If the icing is too thick, add a little milk. Stir in nuts, if desired. Spread over one cake layer. Top with second layer; ice top. Top with third layer, ice top.

This recipe was my grandmother's pride and joy. I never knew she had given it to a soul until a woman from her chuch group said she had a copy of it from a church holiday cookbook from 1958. The glaze is tricky, and tends to be a gloppy mess, but the cake is not the same without it. I have included some handwritten notes from whomever owned the book originaly. Give yourself lots of time for assembly.

2 teaspoons cloves
2 teaspoons allspice
2 teaspoons cinnamon
3 cups all-purpose flour
6 eggs
2 cups sugar
1 cup butter, melted
2 cups seedless blackberry jam
2 teaspoons baking soda
1 cup buttermilk
2 cups sugar
1 cup butter
1 cup milk
1 egg white, stiffly beaten

Steps:

  • Sift together the flour and the spices, set aside.
  • In the bowl of an electric mixer, beat the eggs.
  • Add the sugar and melted butter, beating until well mixed.
  • Add the jam, blend in.
  • Add the flour mixture in small portions while continuing to mix.
  • Dissolve the baking soda in the buttermilk; mix in.
  • After all ingredients are well mixed, divide the batter among six 9" cake pans which have been greased an floured.
  • (Hand written note on recipe:"Parchment paper rounds in the bottom of cake pan will aid in the removal of the layer after baking.") Bake at 350F for 15 to 20 minutes or until a straw inserted in the center comes out clean.
  • Cool the layers on a wire rack.
  • (Handwritten note on recipe:"Refrigerate before assembly.") Assemble the cake using the filling recipe which follows.
  • To make filling: In a saucepan mix sugar, butter, and milk.
  • Bring to a slow boil.
  • Keep mixture at a slow boil until it thickens.
  • Slowly pour the hot mixture into the stiffly beaten egg white.
  • Stir and fold mixture until thick.
  • (Handwritten notes on recipe:"If you can strike the right balance between cooking and then folding in the beaten egg whites, the finished glaze will be slightly opaque with flecks of egg white visible thoughout.""Glaze will run if layers are warm. Refigera).
  • I will add this comment, I attempted to make this cake in 3 cake pans. It overflowed and I will now spend a lovely afternoon cleaning my oven before I can cook anything else. I would suggest a minimum of 4 cake pans or even the 6 called for above. Gramma knew what she was talking about.
