Provided by Joanna Cismaru

Categories     Dinner     Main Course

Time 30m

Number Of Ingredients 15

3 large chicken breasts (boneless, skinless)
2 large eggs
½ teaspoon salt
½ teaspoon black pepper
2 tablespoon olive oil
½ cup cornstarch
¼ cup all-purpose flour
2 tablespoon butter (unsalted)
½ cup lemon juice (freshly squeezed)
¼ cup sugar (granulated)
⅔ cup chicken broth (low sodium)
¼ teaspoon salt
1 tablespoon cornstarch
2 green onions (chopped)
1 lemon (cut in wedges)

Steps:

  • Butterfly the chicken breasts: Slice the chicken breasts in half lengthwise (butterflied) to get two thinner pieces from each breast.
  • Prepare the dredge: Combine the eggs with salt and pepper in a shallow bowl. In another bowl combine the ½ cup cornstarch with the flour and mix well.
  • Dredge the chicken: Dredge the chicken through the egg first, then through the flour mixture.
  • Fry chicken in batches: Heat the olive oil in a large skillet over medium heat. Add the chicken to the skillet, as many as you can fit, and fry for 3 to 4 minutes on each side or until golden and crispy. Transfer the chicken to a paper towel lined plate and repeat with remaining chicken.
  • Make the lemon sauce: Drain any leftover oil from the skillet. Add the butter to the skillet and melt. Add the lemon juice, sugar, chicken broth, ¼ tsp salt and 1 tbsp of cornstarch. Whisk everything well together and cook until the sauce has thickened and is smooth.
  • Finish the dish and serve: Slice the chicken into thin strips and pour lemon sauce over. Serve with rice.

Tonight, try Ina Garten's surprisingly easy Lemon Chicken Breasts, infused with the flavors of France's Provence region, from Barefoot Contessa on Food Network.

Provided by Ina Garten

Categories     main-dish

Time 1h

Yield 4 servings

Number Of Ingredients 10

1/4 cup good olive oil
3 tablespoons minced garlic (9 cloves)
1/3 cup dry white wine
1 tablespoon grated lemon zest (2 lemons)
2 tablespoons freshly squeezed lemon juice
1 1/2 teaspoons dried oregano
1 teaspoon minced fresh thyme leaves
Kosher salt and freshly ground black pepper
4 boneless chicken breasts, skin on (6 to 8 ounces each)
1 lemon

Steps:

  • Preheat the oven to 400 degrees F.
  • Warm the olive oil in a small saucepan over medium-low heat, add the garlic, and cook for just 1 minute but don't allow the garlic to turn brown. Off the heat, add the white wine, lemon zest, lemon juice, oregano, thyme, and 1 teaspoon salt and pour into a 9 by 12-inch baking dish.
  • Pat the chicken breasts dry and place them skin side up over the sauce. Brush the chicken breasts with olive oil and sprinkle them liberally with salt and pepper. Cut the lemon in 8 wedges and tuck it among the pieces of chicken.
  • Bake for 30 to 40 minutes, depending on the size of the chicken breasts, until the chicken is done and the skin is lightly browned. If the chicken isn't browned enough, put it under the broiler for 2 minutes. Cover the pan tightly with aluminum foil and allow to rest for 10 minutes. Sprinkle with salt and serve hot with the pan juices.

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 10

1 1/2 pounds chicken breast or chicken tenders, cut into chunks
1/4 cup all-purpose unbleached flour
Coarse salt
2 tablespoons wok or vegetable oil, 2 turns of the pan (preferred brand: House of Tsang)
1 tablespoon (a splash) white or rice wine vinegar
1/2 cup chicken broth or stock
8 ounces (1 cup) prepared lemon curd
1/4 cup hot water
1 lemon, zested
2 scallions, thinly sliced or 20 blades fresh chives, finely chopped

Steps:

  • Coat the chunked chicken lightly in flour, seasoned with a little salt. Heat a large skillet or a wok-shaped nonstick pan over high heat. Stir fry chicken until golden, 3 or 4 minutes. Remove chicken from the pan and return pan to heat. Reduce heat to medium.
  • Add a splash of vinegar to the pan and let it evaporate. Add stock or broth to the pan and scrape up any drippings with a whisk. Thin curd by stirring in a little hot water. Add curd to broth and whisk to combine. Add chicken back to the pan and simmer for 1 to 2 minutes to thicken sauce and finish cooking chicken pieces through. Remove the pan from heat, add the scallions or chives and zest, and toss chicken pieces well to combine zest and scallions or chives evenly throughout the sauce.

THE INFAMOUS LEMON CHICKEN RECIPE

The Infamous Lemon Chicken Recipe image

When my father remarried he would sometimes complain to me about finding my mother's lemon chicken recipe. The real secret here being that I had LOST my mother's recipe box...a crime punishable by walking the plank in my family. Of course I didn't remember eating it or how it tasted since I was 6 when they divorced and she couldn't remember the ingredients. He described to me a sweet glazy sauce that covered the chicken which she served over rice. With the help of my step-mother we "recreated" this dish using Lipton soup and sauce mixes in the lemon flavor. I was at peace until Lipton discontinued this flavor and was again harassed to FIND THAT RECIPE your mother made! Finally I was reaching up in the counter for a martini glass at my aunts house when a small box came crashing down on my head... my family recipes along with the suprisingly easy "Infamous Lemon Chicken".I had no idea these were the few ingredients that had been haunting me. Dad this one's for you.

BAKED LEMON CHICKEN

Baked Lemon Chicken image

Provided by Food Network Kitchen

Categories     main-dish

Time 1h25m

Yield 4 servings

Number Of Ingredients 11

One 3 1/2- to 4-pound chicken, cut into 8 pieces, patted dry
Kosher salt and freshly ground black pepper
Flour for dredging
3 tablespoons extra-virgin olive oil
1 large onion, thinly sliced
Peel of half a lemon, white pith removed, cut into very thin strips
2 large garlic cloves, minced
1 1/2 teaspoons fresh rosemary leaves
1 tablespoon honey
1/4 cup freshly squeezed lemon juice
1 cup chicken broth, homemade or canned low-sodium

Steps:

  • Preheat the oven to 400 degrees F. Season the chicken with salt and pepper. Dredge in the flour and pat off the excess. Heat a large skillet over medium heat and add 2 tablespoons of the oil. Add the chicken skin-side down and saute until golden brown, about 5 minutes per side. Remove the chicken from the skillet and reserve. Discard the oil and wipe the pan out with a paper towel. Add the honey, lemon juice, and broth, increase the heat and bring to a simmer. Use a slotted spoon to transfer the onions to a 9- by 13-inch ovenproof casserole, and spread them out. Arrange the chicken, skin-side up in a single layer on the onions. Pour the cooking liquid over the chicken. Season with salt and pepper to taste. Bake in the oven, basting every 15 minutes, until cooked through, about 45 minutes. Remove from the oven and serve.

RAO'S FAMOUS LEMON CHICKEN (POLLO AL LIMONE)

Rao's Famous Lemon Chicken (Pollo al Limone) image

Provided by Food Network

Categories     main-dish

Time 1h

Yield 6 servings

Number Of Ingredients 9

Two 2 1/2- to 3-pound broiling chickens, halved

Lemon Sauce (recipe follows)
2 cups fresh lemon juice
1 cup olive oil
1 tablespoon red wine vinegar
1 1/2 teaspoons minced garlic
1/2 teaspoon dried oregano
Salt and pepper to taste

Steps:

  • Broil chicken halves, turning once, for about 30 minutes or until skin is golden-brown and juices run clear when bird is pierced with a fork.
  • Remove chicken from broiler, leaving broiler on. Using a very sharp knife, cut each half into about 6 pieces (leg, thigh, wing, 3 small breast pieces).
  • Place chicken on a baking sheet with sides, of a size that can fit into the broiler. Pour Lemon Sauce over the chicken and toss to coat well. If necessary, divide sauce in half and do this in two batches.
  • Return to broiler and broil for 3 minutes. Turn each piece and broil for an additional minute.
  • Remove from broiler and portion each chicken into each of 6 warm serving plates.
  • Pour sauce into a heavy saucepan. Stir in parsley and place over high heat for 1 minute. Pour an equal amount of sauce over each chicken and serve with lots of crusty bread to absorb the sauce.

SKILLET CREAMY LEMON CHICKEN

Skillet Creamy Lemon Chicken image

This was an existing recipe on here but made some changes to my liking. ¥¥ Because my family loves to put the chicken over pasta with the same sauce, I doubled the sauce ingredients. We LOVE lemon and tangy chicken but if you're not a fan of it then cut back the lemon juice & lemon vinegar. I also added some other ingredients to my personal liking...hope you enjoy it!!

Provided by Gatorbek

Categories     Chicken Breast

Time 30m

Yield 6 serving(s)

Number Of Ingredients 11

6 medium boneless skinless chicken breasts, cut into cubes
olive oil
2 tablespoons garlic butter (I use Land O'Lakes)
2 tablespoons garlic, minced or 1 tablespoon garlic paste
3 cups chicken stock
1/3 cup heavy cream
1 1/2-2 tablespoons lemons or 1 1/2-2 tablespoons vinegar
1 cup dry white wine
1/4 cup lemon juice (to taste)
2 tablespoons capers, drained and chopped
1 tablespoon fresh parsley, chopped

Steps:

  • In a nonstick skillet, heat olive oil over med high.
  • Stir in garlic butter until melted.
  • Add chicken.
  • Cook 5 min to brown, then reduce heat to med.
  • Turn chicken and cook about 4-5min more until juice runs clear when pierced.
  • Transfer chicken to a warm dish.
  • Lower heat if needed to maintain medium-low to medium heat so as not to scorch the garlic, then add garlic to the drippings in the skillet.
  • In a cup, mix stock, wine, lemon juice, and 1 1/2 teaspoons of flour until smooth.
  • Stir into mixture in skillet. Scrape skillet to incorporate any browned bits from the chicken.
  • Heat to a boil, boil 1 minute. Stir in capers and remaining 1 tablespoon of butter and the heavy cream, simmer until thickened.
  • Pour sauce over chicken, sprinkle with parsley and garnish with additional lemon slices.
  • **This recipe is to make double the sauce to add to add to pasta if you are laying the chicken on top.
  • Note: Occasionally, this has turned out a little more "tangy" than I would like with too much lemon. If this happens, just dilute with a little extra chicken stock or broth mixed with cornstarch or flour to keep thicker consistency.
