Steps:
- Preheat oven to 350 degrees F.
- Cream butter and sugar; mash bananas, beat 2 eggs and add to the bananas with vanilla and buttermilk; mix well and add to creamed butter and sugar; sift together flour, soda and salt; add to banana mixture, beat well; pour into 2 greased and floured 9x5x3-inch loaf pans; bake 45 to 50 minutes (I find this bread needs over an hour) or until bread pulls away from sides of pan; add topping.
- To prepare Topping: Melt butter in saucepan; add sugar and milk; cook until syrupy (like honey); remove from heat and add chopped pecans; pour over bread spreading to all the corners and place under broiler until bubbly and brown.
- Watch closely (this takes around 1 minute- maybe even less!).

- Remove odd pots and pans from oven.
- Preheat oven to 350º / 180º.
- Cream together butter and sugar.
- Add eggs and crushed bananas.
- Combine well.
- Sift together flour, soda and salt. Add to creamed mixture. Add vanilla.
- Mix just until combined. Do not overmix.
- Pour into greased and floured loaf pan.
- Bake at 350º / 180º for 55 minutes.

- Mash bananas.
- Add sugar, oil, eggs, sour cream, vanilla, baking soda, and flour. Mix until well combined.
- Pour into greased bread pans until 1/2 full, reserve half of batter.
- Combine 1/2 cup sugar and cinnamon.
- Sprinkle generously 1/2 of cinnamon/sugar combination onto batter.
- Pour rest of batter into pans.

Who doesn't love banana bread, especially for breakfast? It's like having cake in the morning. This version uses the whole banana -- peel included -- which reduces food waste. Half the weight of a banana is in the peel, so why not use it? It gives you the same comforting flavor and even more fiber. - A couple of hours before baking, let the bananas thaw completely on a plate at room temperature.
- Position an oven rack in the middle of the oven and preheat to 375 degrees F. Spray an 8-by-4-inch loaf pan with nonstick spray and line with parchment, leaving 1-inch overhang on the long sides.

- Lightly butter and flour two 8" x 4" loaf pans, or 6 mini loaf pans. Baking time for mini's 50 minutes.

Steps:
- Cream butter and sugar (by hand or mixer).
- Mash bananas and add by hand to creamed mixture.
- By hand add eggs, vanilla, baking soda, flour and salt.
- Gently stir in buttermilk and chocolate chips.
- Pour into a greased loaf pan.
- Bake at 350°F for 1 1/4 hour or until it tests done with a toothpick.
- **I find that coarsely mashing bananas is best and make sure they are over ripe for best flavor.
- I also find that doing the majority of the mixing by hand makes for better texture in the end.
- **Even though the recipe says it makes 1 loaf, I usually use 2 loaf pans or 3 mini loaf pans because it seems to yield a moister bread.
- Just adjust baking time down.
- **if you do not have buttermilk you can put 1 teaspoons vinegar into a 1/2 cup measuring cup and fill to top with milk.
- Let rest 5 minutes before adding to recipe.
- **This freezes well.
