Creamy, delicious, and so easy to make, vegan mushroom stroganoff is one of my favorite comfort foods! Easily customizable to suit just about any dietary needs and tastes. Recipe adapted from William Sonoma.

Number Of Ingredients 11

4 - 5 tablespoons vegan butter (I recommend Miyoko's)
1 small yellow onion (or large shallot), finely diced
3 cloves garlic, minced
1 - 2 lbs. mushrooms (pref. cremini), ends trimmed and sliced
2 tablespoons flour
3/4 cup dry white wine
1 1/4 cup low-sodium vegetable broth
1/2 - 3/4 cup vegan sour cream
2 tablespoons chopped parsley, plus more to serve
salt + pepper, to taste
12 - 16 oz. pasta (use your favorite - straight, small and/or curvy)

Steps:

  • Cook the noodles according to package directions until al dente. Drain, reserving 1/2 cup of pasta water.
  • Heat the butter in a medium pot over medium-high heat, add onion and saute until golden, about 5 minutes. Add the garlic and mushrooms, cook another 5 minutes, or until mushrooms begin to sweat down a bit. Add the flour, stirring to fully incorporate so there are no white streaks, cook for 1 minute. Stir in the wine and broth, bring to a gentle boil, reduce heat to medium, cook another 5 minutes or until the sauce has slightly thickened. Stir in the sour cream and parsley. Season with salt and pepper to taste.
  • Add the pasta to the mushroom sauce, toss to combine. Add in a little pasta water as needed to loosen the sauce. Alternatively, add pasta to individual bowls and spoon the creamy sauce overtop.
  • Serves 4 - 6
  • Leftovers can be stored in the refrigerator for up to 5 - 6 days. Freeze for up to 2 - 3 months. Let thaw before reheating.

This Vegan Mushroom Stroganoff Recipe comes together in less than 30 minutes, giving you a comforting meal to feed you and your loved ones without any fuss.

8 ounces fettuccini
2 Tablespoons extra virgin olive oil
1 small onion, (diced)
16 ounces mushrooms of choice ( (white button, bella, shiitake, etc), sliced)
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon dried coriander
1/2 teaspoon dried basil
1/4 teaspoon dried rosemary
3-4 cloves garlic, (minced)
1 Tablespoon dijon mustard
1 Tablespoon white wine vinegar
1 1/2 Tablespoon all-purpose flour
parsley, (for garnish)

Steps:

  • Cook pasta in salted boiling water until cooked per the instructions on the box. Drain.
  • In a large skillet, heat olive oil over medium heat. Add the chopped onion and saute for 4-6 minutes until translucent.
  • Add the mushrooms and spices to the onions. Cook until the mushrooms begin to shrink and brown, around 7-10 minutes, stirring occasionally. Add the garlic and saute for 1 minute, stirring constantly. Add the mustard and white wine vinegar. Saute for 2-3 minutes more.
  • Slowly sprinkle the flour and stir constantly for 1-3 minutes until you reach the desired thickness. Add water if mixture becomes too thick.
  • Spoon stroganoff over the top of drained pasta. Sprinkle with parsley and serve.

I've tried several online recipes for vegan stroganoff but haven't been wowed by any of them. I created this version and it is by far the best we've had. My whole family loves it! It takes amazingly like the stroganoff we remember from our omni eating days. :o)

1 (6 cup) package pasta, egg-free ribbon noodles
1/4 cup margarine, vegan (I use Earth Balance, but vegetable oil would work too)
1 onion, minced
16 ounces portabella mushrooms, sliced
2 garlic cloves, minced
2 cups vegetable broth, beef flavored (we use Frontier beef-flavored broth powder)
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon Worcestershire sauce, vegan (you could leave this out, it's not critical, but does add depth)
1/4 cup flour
1 cup vegan sour cream (I use Follow Your Heart)

Steps:

  • Cook and drain pasta according to package directions.
  • Meanwhile, in a large skillet, sauté mushrooms and onions until mushrooms have given up their liquid and onions are translucent.
  • Add garlic and cook for another 1-2 minutes. Remove from heat.
  • In a medium sauce pan, bring broth to a boil. Add salt, pepper and worcestershire sauce.
  • Whisk in flour and continue cooking until sauce begins to thicken.
  • Return skillet to low heat and stir thickened sauce into mushroom mixture.
  • Stir in sour cream (don't allow it to boil) and serve immediately over hot ribbon noodles.

I whipped this up one night just to try it and it's become one of the best comfort foods I can imagine--pasta, delicious seasonings, warm, creamy--nothing better! (Sub. the bag of crumbles for 1 pound of roughly ground seitan)

1 (12 ounce) bag Boca meatless ground burger
1 (16 ounce) container vegan sour cream
1 (16 ounce) can vegetable broth
2 (4 ounce) cans mixed mushrooms (or 1 cup fresh, chopped)
1 lb campanelle pasta, uncooked
1 -2 cup water
2 teaspoons garlic powder
1/2 teaspoon cumin
1 dash paprika
salt & freshly ground black pepper

Steps:

  • In a large pot, bring the can of vegetable broth to a boil. Turn down the heat to let it simmer and add the sour cream. Stir well to combine.
  • Add the crumbles or seitan, mushrooms, seasonings and uncooked noodles. Stir well and add the water until it just covers the noodles.
  • Cover and let simmer for 20-30 minutes, stirring occasionally, until the noodles have absorbed all the liquids and are fully cooked. Season with salt and pepper.

  • Heat up a large non-stick frying pan until very hot & add the olive oil. When the oil is hot, add the mushrooms into the pan and sautee on high heat for 5-7 minutes, stirring regularly, until the mushrooms have crisped up slightly. If your pan is not big enough, you might want to fry the mushrooms in two batches.
  • Add onion and garlic into the pan and fry for 1-2 minutes, stirring continuously to prevent from burning.
  • In a jug, combine the milk with corn flour and whisk until well incorporated. Pour the mixture into the frying pan and stir well to combine.
