PIZZA ON THE GRILL I
Even with a baking stone, a conventional oven is no match for a professional oven when it comes to making pizza. At home, or rather in your backyard, the grill is the way to go. The heat of a hot grill is perfect, and makes it possible to make incredible pizza at home. Use your favorite toppings, but keep in mind not to overload the pizza. Keep it light. Try it - everything is better on the grill!

- In a bowl, dissolve yeast in warm water, and mix in sugar. Proof for ten minutes, or until frothy. Mix in the salt, olive oil, and flour until dough pulls away from the sides of the bowl. Turn onto a lightly floured surface. Knead until smooth, about 8 minutes. Place dough in a well oiled bowl, and cover with a damp cloth. Set aside to rise until doubled, about 1 hour. Punch down, and knead in garlic and basil. Set aside to rise for 1 more hour, or until doubled again.
- Preheat grill for high heat. Heat olive oil with garlic for 30 seconds in the microwave. Set aside. Punch down dough, and divide in half. Form each half into an oblong shape 3/8 to 1/2 inch thick.
- Brush grill grate with garlic flavored olive oil. Carefully place one piece of dough on hot grill. The dough will begin to puff almost immediately. When the bottom crust has lightly browned, turn the dough over using two spatulas. Working quickly, brush oil over crust, and then brush with 2 tablespoons tomato sauce. Arrange 1/2 cup chopped tomatoes, 1/8 cup sliced black olives, and 1/8 cup roasted red peppers over crust. Sprinkle with 1 cup cheese and 2 tablespoons basil. Close the lid, and cook until the cheese melts. Remove from grill, and set aside to cool for a few minutes while you prepare the second pizza.

THE BEST TASTING GRILLED PIZZA
This is by far the best tasting pizza I have ever had. The crust is so good. We used smoke flavored chips on the charcoal and it added to the great flavors. Enjoy!

Steps:
- For the dough: in a medium bowl, combine the yeast sugar and water.
- Whisk until all the yeast is melted.
- Let stand for 5-10 minutes.
- Add two cups of the flour, salt, pepper, garlic and olive oil.
- Stir with your hands until the dough holds together.
- Transfer the dough to a lightly oiled surface (use oil not flour as it lends a crunchier crust). Knead until the dough is smooth about 8-10 minutes.
- Shape into a ball and let stand in an oiled bowl covered in a warm place for about an hour or until the dough doubles in size.
- Punch down the dough and transfer again to a lightly oiled surface.
- Divide the dough into to equal pieces.
- Stretch the dough with your hands until the dough is about 1/8 inch thick.
- Slide the dough to a lightly oiled baking sheet.
- Slide the dough onto the grill and cook uncovered directly over a medium heat until the grill marks are clearly visible.
- Brush the dough with olive oil.
- The crust may bubble but that is ok as it will deflate as you turn it.
- Turn the dough and brush again with olive oil.
- Top first with your cheese choice as the cheese will melt evenly being put on first.
- Next add you sauce and then toppings.
- Grill for about 5 minutes more or until cheese is melted.
- It is best after you add the toppings to close the grill and view every three minutes until the cheese is melted.
- I did not specify a quantity for the cheese as everyone likes different amounts of cheese.
- Let the pizza rest a few minutes before cutting it.
- I added minced garlic to my olive oil for brushing.
GRILLED PIZZA

- Roll the pizza dough into a small disk on a lightly-floured surface; let it rest 10 minutes, then toss, stretch or roll it into a thin, broad crust.
- Prepare a grill for high heat. Brush the pizza dough with some of the oil and place it on the grill. Grill, covered, for 30 seconds, then check: The crust should be slightly stiff but not deeply browned. Flip the crust, top it with a thin layer of the tomato sauce and the mozzarella. Sprinkle with some basil leaves, cover and grill until the cheese has melted and the crust has browned, about 30 seconds more.
THE BEST GRILLED PIZZA
My whole family loves these pizzas. They are simple to make and perfect for a change of pace when grilling. I've been told these are the best pizzas they've ever had. Sometime in the early 90's, while trying to think of something different to cook on the grill for my 4 growing and hungry kids, I decided to grill pizzas to add a little fun to the usual pan pizza in the oven. The result was an awesome tasting pizza and 4 happy kids who never forgot about them.

Steps:
- Remove pizza dough from package and let sit for about 30 minutes. This makes it easier to roll out.
- Roll pizza dough a little bit. Make sure to dust your surface with a little flour. Don't worry about the shape, it doesn't need to be round.
- brush 2 Tablespoons of olive oil over one side of rolled out dough, and place oiled side down on grill. While dough is cooking, brush remaining 2 Tablespoons of olive oil on the top of dough. Cook until bottom is browned.
- Flip pizza dough over and immediately spread 8 ounces of ricotta cheese over top side of dough. Brush 1/4 cup of alfredo or marinara sauce over ricotta cheese, followed by 1 cup of shredded cheese.
- Sprinkle your favorite topping (cooked first if you prefer) over all ingredients on pizza. Cook until bottom is brown and cheeses begin to melt. Enjoy
