These have remained a family favorite for years and I still make them, you may omit the chocolate chips but I like to add them in, also you may use 1/2 cup each butter and shortening if desired :)

1 cup butter, softened
1 cup crunchy peanut butter or 1 cup smooth peanut butter
1 cup white sugar
1 cup brown sugar, packed
2 eggs
1 1/2 teaspoons maple extract (or use 2 teaspoons vanilla)
2 1/2 cups flour
1 teaspoon baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup mini chocolate chip (can use regular size chocolate chips)
1/2 cup peanuts, finely chopped

Steps:

  • Set oven to 350 degrees F.
  • Grease a cookie sheet.
  • In a bowl, cream the butter, peanut butter and sugars together until light and fluffy.
  • Add in eggs and vanilla; beat well until thoroughly combined.
  • In another bowl combine flour, baking powder, baking soda and salt.
  • Stir the dry mixture into the creamed until combined.
  • Add/mix in mini chocolate chips.
  • Chill dough for about 4 hours or overnight.
  • Drop by tablespoonfuls onto cookie sheet.
  • Bake for about 10 minutes, or until cookies begin to brown around the edges (try not to overbake!).

1 cup butter, softened
1 ½ cups packed brown sugar
2 eggs
1 cup peanut butter
1 teaspoon vanilla extract
2 ¾ cups all-purpose flour
¼ cup cornstarch
¾ teaspoon salt
1 teaspoon baking soda
½ teaspoon baking powder
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Cream together butter and brown sugar. Beat in eggs, peanut butter and vanilla.
  • Add flour, cornstarch, salt, baking soda and baking powder. Stir in chocolate chips.
  • Roll into balls about 1 1/2 teaspoonfuls (or use cookie scoop) and place onto ungreased cookie sheets about 2 inches apart. Flatten slightly because they do not flatten much while cooking.
  • Bake for 10 minutes.

1 cup peanut butter - regular creamy peanut butter, not natural peanut butter
2 tsp. baking soda
2 cups sugar
½ tsp. salt
2 cups flour
1 cup chocolate chips

Steps:

  • Whisk together the butter, eggs, vanilla, and peanut butter.
  • Stir in the sugar, baking soda, salt, and flour.Once mixed together well, stir in the chocolate chips.
  • Roll in a generous Tablespoon size in the palm of your hand and gently press down each one with a fork.
  • Bake at 350 degrees for 10-11 minutes or until just barely golden brown around the edges.Transfer from baking sheet and cool on a cooling rack.

14 to 15 organic peanut butter cups
One 17.5-ounce chocolate chip cookie baking mix

Steps:

  • Unwrap the peanut butter cups, place on a plate and freeze for 1 hour.
  • Preheat the oven to 375 degrees F and line 3 baking sheets with parchment paper.
  • Prepare the cookie mix according to package instructions and chill in the fridge about 10 minutes. Slightly dampen hands with cool water and wrap each peanut butter cup in a heaping tablespoon of cookie dough, being sure to enclose the peanut butter cup completely. Shape into a disc. Place 6 cookies on each baking sheet spaced about 2 1/2 inches apart, and freeze for 15 minutes.
  • Bake the cookies until the edges are golden brown and crispy with soft-looking centers, 15 to 18 minutes. Allow the cookies to cool on the baking sheets for 2 minutes before moving to a plate, then serve immediately.

1 cup peanut butter
½ cup butter (softened)
½ cup white sugar
½ cup brown sugar
1 egg
3 Tbsp milk
1 tsp vanilla extract
1 ½ cups flour
¾ tsp baking powder
¼ tsp salt
1 ½ cups semi-sweet chocolate chips (optional)

Steps:

  • With a hand mixer, cream together the peanut butter, butter, white sugar and brown sugar until blended.
  • Beat in the egg, milk, and vanilla.
  • Combine the flour, baking powder and salt in a separate bowl.
  • Add flour mixture to the peanut butter mixture and mix together. Stir in chocolate chips at this point if desired.
  • Scoop tablespoonfuls of dough and roll into balls.
  • Place cookies 2 inches apart on ungreased cookie sheets (I used parchment paper since my cookies tend to burn on my darker pans). Press each ball once with a fork.
  • Bake for 8-10 minutes at 375. Don't overcook! These cookies are much better soft and just barely cooked all the way through! Enjoy!

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).

1/4 cup unsweetened applesauce
3/4 cup sugar
3/4 cup packed brown sugar

1-1/2 teaspoons vanilla extract
2-1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup semisweet chocolate chips

Steps:

  • In a small microwave-safe bowl, microwave butter and peanut butter until butter is melted; stir until smooth. Stir in applesauce., Transfer to a large bowl. Beat in the sugars until blended.
