GREEN BEAN BUNDLES

Steamed and then baked, these scrumptious green beans take on great flavor, because they are wrapped in bacon and bathed in a savory sauce. This recipe is best when you marinate the bundles overnight.

Categories     Appetizers and Snacks     Beans and Peas

Time 35m

Yield 20

Number Of Ingredients 8

10 slices bacon
1 pound fresh green beans
1 cube beef bouillon
4 tablespoons Worcestershire sauce
2 teaspoons soy sauce
2 tablespoons butter
2 tablespoons brown sugar
½ teaspoon garlic powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bacon in a large, deep skillet. Cook over medium high heat until partially cooked. Drain, cut each piece in half, and set aside.
  • Bring a large pot of water to a boil. Place the green beans on a rack or special steamer basket over the boiling water. Cover with a lid so that the steam does not escape. • Take a bundle of green beans (4 or 5) and wrap them with a piece of bacon. Secure with a toothpick if necessary. Place the bundles in a shallow baking dish.
  • In a saucepan over medium heat, combine the reserved stock with the Worcestershire sauce, soy sauce, butter, brown sugar, and garlic powder. Stir until the sugar is dissolved.
  • Pour the sauce over the bundles and bake in a preheated 350 degrees F (175 degrees C) oven for 20 minutes or until the bacon is done.

THE BEST GREEN BEANS EVER

The Best Green Beans Ever image

Ree Drummond's Best Green Beans Ever recipe, from The Pioneer Woman on Food Network, starts with bacon grease and gains even more flavor from chicken stock.

Provided by Ree Drummond : Food Network

Categories     side-dish

Time 40m

Yield 6 servings

Number Of Ingredients 8

1 pound green beans
2 tablespoons bacon grease (can substitute 2 tablespoons butter)
2 cloves garlic, minced
1 large onion, chopped
1 cup chicken broth, plus more if needed
1/2 cup chopped red bell pepper
1/2 to 1 teaspoon kosher salt (can substitute regular table salt, use 1/4 to 1/2 teaspoon)
Ground black pepper

Steps:

  • Snap the stem ends of the green beans, or cut them off in a big bunch with a knife if you'd prefer.
  • Melt the bacon grease in a skillet over medium-low heat. Add the garlic and onions and cook for a minute. Then add the green beans and cook until the beans turn bright green, about a minute. Add the chicken broth, chopped red pepper, salt and pepper to taste. Turn the heat to low and cover the skillet with a lid, leaving the lid cracked to allow steam to escape. Cook until the liquid evaporates and the beans are fairly soft, yet still a bit crisp, 20 to 30 minutes. You can add more chicken broth during the cooking process, but don't be afraid to let it all cook away so the onions and peppers can start to caramelize.

BEST GREEN BEANS EVER

These green beans are so delicious and they also look very fancy. They are great to serve when preparing a meal to impress someone.

Provided by Kay14

Categories     Poultry

Time 50m

Yield 4-6 serving(s)

Number Of Ingredients 4

4 (8 ounce) cans green beans (the long green beans work the best because they are easiest to wrap)
1/2 lb turkey bacon
1 (16 ounce) bottle Italian dressing

Steps:

  • Cut your turkey bacon strips in half so that they measure about 4 inches long.
  • Take 5-6 green beans and wrap the turkey bacon around the center.
  • Place a toothpick through the center of the green bean bundle to secure the bacon around the green beans.
  • Put all green bean "bundles" in a 2 inch deep casserole dish laying side by side until they fill the dish.
  • Pour 1 (16oz.) bottle of Italian Dressing and 1 (16 oz.) bottle of Worcestershire Sauce on top of green beans.

GREEN BEANS AMANDINE

Green Beans Amandine image

This green bean recipe will become your new favorite side dish. Inspired by a classic French recipe (haricots verts amandine), these green beans feature buttery toasted almonds, tender shallot and a squeeze of lemon. Recipe yields 4 generous side servings; you can double the recipe by cooking it in a large Dutch oven.

Provided by Cookie and Kate

Categories     Side Dish

Time 30m

Number Of Ingredients 8

2 tablespoons unsalted butter, sliced into several pieces
1/2 cup sliced almonds
1/4 cup thinly sliced shallot (about 1 small)
1 pound haricots verts or slender green beans, trimmed
2 teaspoons lemon juice, to taste
1 tablespoon + ½ cup water, divided
½ teaspoon fine salt, to taste
Freshly ground black pepper, to taste

Steps:

  • In a large skillet over medium-low heat, melt the butter. Once it's completely melted, add the almonds. Cook, stirring constantly with a heatproof spatula or wooden spoon, until the butter has browned and the almonds are beginning to brown, about 7 to 8 minutes. (Your patience will pay off, I promise!)
  • Add the shallot and cook, while stirring constantly, for 1 minute. Stir in the lemon juice and 1 tablespoon water. While stirring, cook until the liquid thickens enough that your spatula leaves an open trail on the pan behind it, about 1 more minute.
  • Use your spatula to scoop all the mixture into a bowl, and set it aside for now. Return the empty skillet to the stovetop, and add the green beans, ½ cup water and ½ teaspoon salt. Cover and cook over medium heat, stirring occasionally, until the beans are nearly tender, about 9 to 10 minutes.
  • Remove the lid and cook over medium-high heat until the liquid evaporates, about 2 to 4 minutes.
  • Off the heat, add the reserved almond mixture to the skillet and toss to combine. Season with salt and pepper, to taste, and serve. Leftover green beans will keep the fridge, covered, for about 4 days.

  • Steam the green beans for 7-9 minutes, just until soft. To accomplish this step, you have three options: 1/ Add the green beans to a steamer pot/basket (I have a pot like this, or use a steamer basket). 2/Fill a pot with about 2 cups of water, bring the water to a boil, add the green beans, and then cover the pot with a lid. The green beans will not be submerged in the water, so the steam will do the work. 3/ Fill the bottom of a pot with water, and bring the water to a boil. Place a large colander over the water, then place the green beans inside, and cover the pot with a lid.
  • Once the green beans are soft, melt the butter in a skillet over medium heat. Once melted, add the minced garlic and transfer the beans to the hot skillet. The garlic will become fragrant thanks to the heat and can easily burn, so work quickly. I use tongs to do this. I also gently shake off any excess water before adding the beans to the skillet. Sauté the green beans in the butter and garlic for about 2 minutes, then add the fresh herbs and salt and pepper to taste.
