1 tablespoon lime juice
1 teaspoon crushed garlic (recommended: Christopher Ranch)
1/2 cup frozen chopped onion (recommended: Ore-Ida)
1/4 cup finely chopped fresh cilantro leaves

Steps:

  • Combine all ingredients in a medium saucepan. Stir thoroughly. Bring to a boil over medium-high heat. Reduce heat to low and simmer for 10 minutes.
  • Place in a serving dish and serve hot.

140g dried black beans , soaked overnight
326g or 330g can sweetcorn , drained
bunch spring onions , sliced
½ large bunch coriander , leaves and stalks chopped, plus chopped stalks leftover from the Cheese & chilli melts (see 'Goes well with', below)
juice 2 limes
2 tbsp olive oil

Steps:

  • Drain, then rinse the soaked beans. Cover with cold water, bring to the boil, then simmer for 45 mins or until tender. Drain again.
  • Mix the beans, corn, spring onions, coriander stalks and leaves, lime juice, oil and some seasoning together in a bowl. Cover, then chill for up to half a day until ready to serve.

About 5 cups cooked black beans, or 3 14-ounce cans black beans (feel free to substitute a can of pinto or kidney beans), rinsed and drained
2 ears of corn, shucked, or 1 can of organic corn, drained
6 medium Roma tomatoes, chopped (or about 30 ounces of canned chopped tomatoes, drained*)
2 bunches green onions, chopped
2 limes, juiced
Fresh cilantro, chopped. I love cilantro so I use quite a bit, about half a bunch's worth.
White wine vinegar, to taste
Jalapeño (fresh or pickled) and or Fresno peppers (I used two of each) if you want to spice it up.
Salt, to taste

Black Beans - two 15-16 ounce cans. However
Canned Corn- one 15-16 ounce can (drained.)
Red Pepper- 1 chopped.
Onion- one small (I prefer sweet onion chopped or 1-2 green onions chopped.)
Garlic- one clove minced.
Cilantro- chopped (quantity as needed.)
Olive Oil- 1/2 cup. However (you could alternatively use Italian Salad Dressing, or salsa a combination of the choices.)
Lime Juice- 1 tablespoon.
Avocado- 1 (chopped.)
Seasonings as desired.

Steps:

  • The majority of this recipe can be made ahead. However, I would add the chopped avocado just before serving to prevent having to serve this Texas Caviar with any avocado pieces that may have turned brown. You can also add the part or all of the cilantro at this time as well.
  • As mentioned above, make sure that your beans or peas have been rinsed and drained before making this recipe. Once they are drained you can begin making this recipe.
  • In a large bowl, combine together the beans, peas, canned corn (also drained well first), chopped red pepper, chopped onion, and the minced garlic. Mix or toss these together well.
  • Next stir in the cilantro and olive oil (or Italian dressing/salsa). I suggest reserving a bit of the cilantro to use as a garnish to use when serving this as well.
  • Refrigerated this covered for at least an hour. When you are ready to serve this, toss in the avocado and any desired seasonings (salt, pepper etc) and top with remaining cilantro.
  • Serve with some great dipping chips

Juice of 1/2 lime
1 jalapeno diced (optional)

  • remove fresh corn from cob, drain and rinse canned corn, or defrost frozen corn. In a nonstick skillet on medium heat, add a splash of grapeseed oil before the corn. Add a pinch of salt and pepper, and stir every couple mins until it starts to stick and brown. Then, add 1 Tbsp of diced jalapeno and cook for 1 more minute. Remove from heat and add agave if desired. Place into a medium mixing bowl.

1 - 15 ounce can black beans, drained and rinsed
1 - 15 ounce can corn, drained
1 - 10 ounce can Rotel tomatoes and chiles ( do not drain)
1/4 cup chopped parsley or cilantro
1 small red onion, chopped
1 lime juiced
salt to taste

Steps:

  • To a medium-size mixing bowl, add black beans, corn, tomatoes and chilies, parsley, and onion.
  • Drizzle on fresh lime juice. Toss all ingredients together. Taste and add salt if needed.
  • Cover the bowl with plastic wrap and let the salsa sit for 30 minutes, allowing the flavors to marry.
  • Remove the plastic wrap, stir and serve with your favorite tortilla chips.
