No need to look for another curry sausage recipe again, this is the only one you will ever need for amazing curried sausages.

Number Of Ingredients 10

2 tbsp olive oil
1 kg thin beef sausages (sliced on an angle)
1 large onion (sliced thinly)
4 garlic cloves (minced)
1 tbsp curry powder
1/4 cup Hov's Kitchen Fruit Chutney
1/4 cup plain flour
2 cups chicken stock
1 carrot (peeled and sliced thinly and cut on an angle)
1 cup frozen peas

Steps:

  • In a skillet add 1 tbsp of olive oil to a skillet or non stick pan and brown the sausages - then set the browned sausages aside.
  • add the other tbsp of olive oil and add the onions and carrot. Fry until they have softened and then add the curry powder, fruit chutney, peas and garlic. Give it a good stir.
  • Add the flour and stir in thoroughly through and then add the chicken stock. Add the sausages back into the pan
  • Turn the heat down to a simmer, and simmer for 10 - 15 minutes. Keep giving it a stir every couple of minutes. The sauce will be thickened.
  • Add some salt and pepper to your liking.
  • Serve with creamy mashed potato

6 beef sausages
1 onion (thinly sliced)
1 ½ cups beef stock
½ - 1 cup green peas
1 tbsp curry powder (Keens or Clive of India brand for the best flavour)
1 tbsp corn flour
2 tbsp water
vegetable oil
Salt & pepper to taste
1 tbsp ketchup or 1 tsp gravy powder

Steps:

  • Heat the oil in a large frypan over medium-high heat. Add the sausages and fry until just cooked. Turn them often to cook evenly and avoid burning. Remove from the heat and allow to cool slightly, then slice into 4-5 cm pieces.
  • In the same frypan add the onion and cook until translucent. Add the curry powder, beef stock and sausages to the pan, bring to the boil then reduce to a simmer.
  • Add the peas and stir through.
  • Mix the cornflour with 2 tbsp water in a small dish. Pour into the pan with the curried sausages and gently mix through. Continue cooking for another 5 minutes until the sauce has thickened nicely.
  • Optional step: Add ketchup or gravy powder and mix through for richer flavour.
  • Season with salt and pepper.
  • Serve immediately over mashed potato or cooked rice.

0.5 tbsp oil
600g / 1.2lb sausages (, of choice (Note 1))
2 garlic cloves (, minced)
1 onion (, halved and sliced)
1 carrot (, peeled, sliced on the diagonal)
1 tbsp curry powder (, or more (Note 2))
3 tbsp flour (, any type (Note 3 for GF))
2 cups (500ml) chicken stock/broth (, low sodium)
1 tsp sugar
1/2 tsp salt (, plus more to taste)
1/2 tsp black pepper
1 cup peas (, frozen)

Steps:

  • Heat oil in a large skillet over medium high heat.
  • Cook sausages, turning to brown all over then remove. Optional: slice sausages into pieces on the diagonal.
  • In the same skillet, add garlic and onion. Cook for 2 minutes until translucent.
  • Add curry powder and stir for 30 seconds.
  • Add flour and mix for 30 seconds.
  • Gradually pour in chicken stock, mixing constantly.
  • Add carrots, sugar, salt and pepper, stir well.
  • Add sausages and peas, bring to simmer and cook for 3 minutes or until sauce thickens.
  • Serve over mashed potato, rice, pasta or noodles. For low carb, try mashed cauliflower!

1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon sweet paprika
1/2 teaspoon garam masala
1/2 cup sultana
2 apples, peeled and sliced
1 (400 ml) can coconut milk

Steps:

  • Cook sausages till browned all over and cooked through in frypan.
  • Drain on paper towel and cut into thin slices.
  • Discard all but 1 tblsp liquid from frypan and add onion and garlic.
  • Cook till onion is soft.
  • Add spices, stir till fragrant.
  • Add remaining ingredients including sausages.
  • Cook gently till apples are tender.

Steps:

  • First boil the sausages and remove the skins.
  • Slice them up into chunks.
  • Place them in a saucepan with sufficient water to cover,.
  • Add onion, vegies and bring to the boil.
  • In a small cup put flour, curry powder and enough cold water to make a paste.
  • Remove saucepan from the heat and stir in thickening and replace on element.
