Steps:
- Heat oil and melt butter in a skillet over medium high heat. Add mushrooms and leisurely cook until golden brown - takes about 4 to 5 minutes. No need to stir constantly.
- Just before they're done, add the garlic and a pinch of salt and pepper. Cook until garlic is golden (~ 1 minute).
- Add white wine - it will sizzle! Stir, scraping the bottom of the skillet, for 1 minute or until mostly evaporated.
- Add broth, cream and parmesan. Stir, then lower heat to medium so the sauce is simmering - do not boil rapidly, cream may split.
- Stir occasionally and simmer for 2 - 3 minutes until it thickens. It shouldn't be super thick, this is a rich sauce.
- Stir through thyme, adjust salt and pepper to taste. Remove from stove.
- Serve over steak or other cooked protein. Toss through pasta, stuff into baked potatoes, serve with roast beef, chicken or pork, smothered omelettes. See in post for more ideas!

Steps:
- Prepare all ingredients first: slice shallot thinly, smash and mince garlic, grate Parmesan cheese, and measure blue cheese crumbles, heavy whipping cream, butter, sugar, and Dijon mustard.
- Melt butter in a preheated cooking pan over medium heat and add shallots and garlic. Saute shallots and garlic until browned and whisk in heavy whipping cream.
- Whisk in Dijon mustard, sugar, and blue cheese crumbles.
- Lower heat to medium low and slowly stir until blue cheese is melted and incorporated into the sauce.
- Stir in freshly grated Parmesan cheese until well incorporated. Take off heat and serve over steaks when ready.
- About 30 minutes before cooking the steaks, take them out of the refrigerator and out of the package. Let the steaks rest and warm up on the cutting board.
- Preheat the oven to 450°.
- Right before cooking the steaks, preheat an oven-safe skillet over medium-high heat. Add a couple of tablespoons of oil to the pan. Pat the steaks with paper towel on all sides and season with salt and pepper on both sides as well.
- Sear steaks in the hot pan for about 45 seconds on each side, until there is a a brown sear and transfer the steaks to the preheated oven.
- Cook until desired temperature is reached. Depending on the thickness and size of the steaks and the desired level of doneness, it could take anywhere from 4 to 10 minutes so you need to keep an eye on the internal temperature and use a meat thermometer. (Having a bone in the steak also affects how long it will need to cook too.)
- When taking the temperature, insert meat thermometer through the side of the steak, towards the middle.
- Once steaks reach desired temperature, take them out of the skillet immediately and let the steaks rest for about 5 minutes before cutting. You can let steaks rest on the cutting board or on the plate. (Note: for medium and less cooked steaks, there will be bloody juice running off the steak as it rests, so you may want to let it rest on the cutting board and not on the plate.)
- Top each steak with cream sauce and serve with your favorite sides.

- Prep: Wipe 1 lb of mushrooms with a wet paper towel. Slice them into thick slices. Peel and dice 1/2 cup of yellow onion. Chop the 2 tbsp parsley and 2 tbsp dill if using.
- Saute onion: In a heavy-bottomed skillet skillet heat 4 tbsp oil or butter, then add the onions and cook over medium heat stirring often until the onions are lightly browned and translucent. Remove the onions to a separate bowl with a slotted spoon.
- Brown the mushrooms: Preheat the skillet over high heat with the leftover oil or butter until almost smoking. Add the mushrooms and stirring often slightly brown them. They will steam and release moisture at first, but continue cooking until the liquid cooks off, then sear the mushrooms slightly.
- Make the mushroom sauce: Add 1/2 cup white wine and stir the mushrooms, scraping the bottom of the pan to deglaze. Cook for about 2 minutes to cook off about half the wine. Add the sauteed onion back into the mushrooms together with 1 cup heavy cream, 1/2 cup sour cream, 1 1/2 tsp salt, 1/2 tsp coarsely ground pepper, 2-3 cloves of minced garlic and 1/4 cup grated parmesan cheese (if using). Stir and cook for several minutes until the sauce is thickened to desired consistency. If the sauce has thickened more than you wish, just add a little bit of broth/stock or water and stir. Finish the sauce by stirring in 2 tbsp of parsley and 2 tbsp of dill, if using.

- Before cooking, allow steaks stand 30 minutes at room temperature. Then season all sides with salt and pepper.
- Heat a large cast-iron skillet or pan over medium-high heat. Add 1 tablespoon of oil in and swirl to coat. When pan begins smoking, lay the steaks into the pan away from you, in batches of two and cook 3 minutes on each side or until browned.
- Reduce heat to medium-low; add 2 tablespoons of butter, 3-4 sprigs of thyme, and 3 garlic cloves to the pan. Allow the butter to foam a little and baste the steaks (use an oven mitt, hold pan handle and very carefully tilt pan toward you so butter pools in the pan, and baste steaks with a large spoon).
- Baste constantly while cooking for a further 1-2 minutes, or until the steaks are done to your liking. (For well done steaks, flip them a couple more times while cooking until done to your preference.)
