PARMESAN COTTAGE FRIES

Parmesan Cottage Fries image

This is an easy recipe that does not really need accurate measurements to come out well. The time that you bake the potatoes depends on how fat you make the chunks.

Provided by RPFROGGY

Categories     Side Dish     Potato Side Dish Recipes

Time 1h

Yield 8

Number Of Ingredients 11

6 potatoes, cut into 1/2-inch cubes
2 tablespoons olive oil, or to taste
1 cup grated Parmesan cheese
2 cloves garlic, chopped, divided
2 tablespoons butter
salt and ground black pepper to taste
1 pinch garlic and herb seasoning blend (such as Mrs. Dash®)
12 large mushrooms, quartered
3 Roma tomatoes, diced
1 green bell pepper, cut into large chunks
1 slice onion

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Grease a 10x15-inch glass baking dish.
  • Spread potatoes into the baking dish; drizzle olive oil on top. Sprinkle Parmesan cheese and 1 garlic clove over potatoes.
  • Roast in the preheated oven for 25 minutes.
  • Melt butter in a large skillet over low heat; season with 1 garlic clove, salt, pepper, and garlic-herb seasoning. Add mushrooms, tomatoes, bell pepper, and onion. Cook and stir until softened, about 5 minutes.
  • Remove baking dish from the oven. Flip potatoes and stir in mushroom mixture.
  • Return baking dish to the oven; continue roasting until potatoes are slightly browned, about 15 minutes more.

PERFECT FRENCH FRIES

Perfect French Fries image

In a nutshell, here it is: Soak potatoes, dry potatoes, fry potatoes, drain potatoes, then fry again!

Provided by Ree Drummond : Food Network

Categories     side-dish

Time 2h50m

Yield s: 8 servings

Number Of Ingredients 3

5 pounds russet potatoes
Vegetable or peanut oil, for frying
Sea salt

Steps:

  • Peel and rinse the potatoes. Then cut them into sticks by cutting the potato in 4 or 5 vertical pieces, and then cutting each piece into sticks.
  • Place them in a large bowl and cover with cold water. Allow them to soak, 2 to 3 hours. (You can also stick them in the fridge and let them soak overnight.)
  • When you're ready to make the fries, drain off the water and lay the potatoes on 2 baking sheets lined with paper towels. Blot with paper towels to dry them.
  • Heat a few inches of oil in a heavy pot to 300 degrees F. In 3 or 4 batches, cook the potatoes until soft, 4 to 5 minutes per batch. They should not be brown at this point! You just want to start the cooking process. Remove each batch and drain on new/dry paper towels.
  • Once all the potatoes have been fried at 300 degrees F, turn up the heat until the oil reaches 400 degrees F. When the oil's hot, start frying the potatoes in batches again, cooking until the fries are golden and crisp. Remove the potatoes from the oil and drain on paper towels.
  • Sprinkle with sea salt and dive in!

  • Preheat the oven to 400 F. Slice the potatoes into disks. Slice thinner for crispier chip-like fries and thicker for softer cottage fries. I usually slice as thinly as I can with a regular chef's knife.
  • Add oil to a large sheet pan, dividing between two pans if necessary. Use your fingers or a silicon brush to coat the bottom of each pan with oil. Lay the cottage fries down, then flip each to coat both sides with oil (alternatively you can brush each side with oil using a silicon brush).
  • Roast for 10 minutes, flip potatoes, then roast 10 minutes more. Remove from oven and season to taste with salt, pepper, and garlic powder.
