1 tablespoon brown sugar
1 tablespoon smoked paprika
1 heaping teaspoon garlic powder
1 large pinch kosher salt
1 large pinch black pepper
3 ears corn, shucked
2 tablespoons olive oil
1/4 cup mayonnaise
1/4 cup BBQ sauce
2 tablespoons brown mustard
1 tablespoon honey
1/2 cup store-bought fried onions
2 green onions, sliced thin

Steps:

  • Preheat the oven to 425°F. Cover the bottom of a baking sheet with parchment paper.
  • For the ribs: In a small bowl, mix together the brown sugar, paprika, garlic powder, salt and pepper. Set aside.
  • Using a sharp knife, carefully halve the ears of corn lengthwise (see Cook's Note). Then, cut each half lengthwise, creating 4 equal pieces. Brush each with the olive oil and season the corn with the spice mix. Transfer to the prepared baking sheet.
  • Bake until the corn is nicely charred and the slices begin to curl, resembling ribs, 18 to 20 minutes.
  • While the ribs bake, make the mustard mayo: Mix together the mayonnaise, BBQ sauce, mustard and honey in a small bowl. Set aside.
  • Remove the ribs from the oven and immediately brush with a little bit of the sauce. Transfer the corn ribs to a platter. Sprinkle over the fried onions and the green onions, then serve.

Easy Air Fried Corn Ribs image

These air fried corn ribs are reminiscent of Mexican street corn, but each ear is split into quarters and then air fried. I used frozen corn on the cob which I thawed.

4 ears ears corn on the cob
3 tablespoons "Everything but the Elote seasoning" (Trader Joe's®), divided
nonstick cooking spray
¼ cup grated cotija cheese
2 tablespoons Mexican crema, crema fresca
1 tablespoon minced fresh cilantro, or more to taste

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C) for 7 minutes.
  • Meanwhile stand corn cobs on the end, and with a sharp knife (I used a wüsthof nakiri) cut each ear down the middle. Place corn cob halves flat on a cutting board and cut in half lengthwise (you will get a total of 4 'ribs' per ear of corn).
  • Spray each corn rib with non-stick spray. Sprinkle 2 tablespoons of seasoning over the 16 corn ribs.
  • Air fry corn ribs in batches for a total of 12 minutes. Remove from air fryer.
  • Drizzle crema con sal over corn 'ribs' and sprinkle with cotija cheese and remaining seasoning. Garnish with chopped cilantro.

  • First, begin by peeling the corn, removing the husk and excess debris. Rinse and clean the corn, dry and set aside.
  • Next, with a sharp butchers knife, carefully slice the corn on the cob in half. Then, slice the half into quarters creating four "ribs" per corn.
  • Add room temperature butter to a small bowl. To that same bowl, add the listed seasonings stirring until thoroughly combined. The spread is ready when a smooth paste forms.
  • Next, spread butter mixture over each corn riblet and place riblets in the air fryer being careful not to overcrowd.
