This traditional Thai dish is actually quite simple to prepare. It's a tasty way to bring a little ethnic flare to your kitchen table.

12 oz Uncooked somen noodles
1.5 cup(s) Canned chicken broth reduced-sodium
1 large Raw egg(s)
2 tbsp(s) Low sodium soy sauce
2 tbsp(s) Smooth reduced fat peanut butter
1 tsp(s) Asian hot sauce or more to taste
2 tsp(s) Dark sesame oil
1 medium Uncooked shrimp medium-sized, peeled and deveined
1 medium Red bell pepper(s) diced
1 tbsp(s) Ginger root fresh, minced
1 large clove(s) Garlic clove(s) minced
0.25 tsp(s) Table salt
0.25 pinch(es) Black pepper
4 tbsp(s) Uncooked scallion(s) chopped
1 tbsp(s) Peanuts finely chopped

Steps:

  • Cook noodles according to package directions without added salt or fat. Drain, transfer to a large bowl and cover with foil to keep warm. (Note: You can substitute vermicelli noodles for the somen noodles, if desired.)
  • Meanwhile, in a medium bowl, whisk together broth, egg, soy sauce, peanut butter and hot sauce; set aside until ready to use.
  • Heat oil in a large non-stick skillet over medium-high heat. Add shrimp, red pepper, ginger, and garlic and sauté until shrimp just begin to turn pink, about 3 minutes (they won't be fully cooked yet).
  • Season shrimp mixture with salt and black pepper. Add chicken broth mixture and bring to a simmer. Cook until shrimp are bright pink and cooked through (mixture will be lumpy from the cooked egg), stirring constantly with a wooden spoon, about 2 to 3 minutes.
  • Stir shrimp mixture into noodles and mix well. Transfer noodle mixture to individual plates and top each serving with 1 tablespoon of scallions and 1/4 tablespoon of peanuts. Yields about 1 cup per serving.

1 tablespoon water
2 teaspoons Southeast Asian fish sauce
4 teaspoons light brown sugar
3 tablespoons peanut oil
3 cloves garlic, chopped
1 tablespoon grated, peeled, fresh ginger
1/2 to 1 teaspoon red chile flakes
1 pound large shrimp, peeled and deveined
1/2 medium red onion, cut in 1-inch dice
1 medium yellow pepper, seeded, cut in 1-inch dice
1 jalapeno chile, thinly sliced into rounds
2 cups cherry tomatoes, halved
3/4 cup torn fresh basil leaves
1/4 cup torn fresh mint leaves
2 tablespoons freshly squeezed lime juice
Serving suggestion: Jasmine rice

Steps:

  • In a small bowl, combine the soy sauce, water, fish sauce, and sugar; set aside. Heat the oil in a large non-stick skillet over medium-high heat. Add the garlic, ginger, and chile flakes, and cook until fragrant, about 30 seconds. Add the shrimp and stir-fry until pink but still translucent in the middle, about 2 minutes. Transfer the shrimp to a medium bowl with a slotted spoon. Add the onion, pepper, and chile to the skillet, and stir-fry until lightly browned, about 2 minutes. Return the shrimp to the pan along with the soy sauce mixture. Bring to a boil, and stir-fry until the sauce glazes the shrimp, about 1 minute more. Add the tomatoes and stir until coated with sauce, about 15 seconds. Remove pan from the heat, stir in the basil, mint, and lime juice. Transfer to a serving dish, serve immediately.

1 cup sliced red onion
1 to 2 teaspoons green or red Thai curry paste
1 can (14.5 oz) Muir Glen™ organic diced or fire roasted diced tomatoes, drained
1 tablespoon lime juice
2 teaspoons packed brown sugar
1/2 cup coconut milk (not cream of coconut)
1/4 cup chopped fresh Thai basil or basil leaves
Hot cooked rice, if desired

Steps:

  • In 10-inch skillet, heat oil over medium-high heat. Cook shrimp and onion in oil 2 minutes, stirring constantly. Stir in curry paste; cook 1 minute.
  • Stir in tomatoes, lime juice and brown sugar. Heat to boiling. Reduce heat; simmer 1 minute. Stir in coconut milk and basil. Heat over low heat until hot.
  • Serve over rice.

1 lb large shrimp, in shell peeled (21 to 25 per lb)
2 limes
3 small fresh lemongrass, stalks
2 tablespoons fresh lime juice
1/4 cup finely chopped red bell pepper
3 scallions, sliced crosswise 1/4 inch thick
2 fresh green chilies, 3 inch, such as thai minced (including seeds) or 2 serrano peppers, minced (including seeds)
3 -4 teaspoons asian fish sauce
1 tablespoon sugar
1/2 teaspoon salt
2 lbs beefsteak tomatoes, cut into 1-inch wedges
3/4 lb cucumber, peeled and cut into 1-inch pieces
1/2 cup loosely packed fresh thai anise basil leaves
1/2 cup loosely packed fresh thai lemon basil leaves
1/2 cup loosely packed fresh cilantro leaves

Steps:

  • Cook shrimp in a 4-quart saucepan of boiling salted water until just cooked through, 1 to 2 minutes, then drain in a colander and cool.
  • Cut peel and white pith from limes with a sharp knife and discard. Cut lime segments free from membranes, then finely chop enough segments to measure 1/4 cup.
  • Mince enough lemongrass from bottom 6 inches of stalks to measure 2 tablespoons total.
  • Stir together chopped lime, minced lemongrass, lime juice, bell pepper, scallions, chiles, fish sauce (to taste), sugar, and salt until sugar is dissolved. Toss shrimp, tomatoes, and cucumbers with dressing and top with herbs.

2 tortillas, whole wheat
4 boston lettuce leaves
4 ounces cooked shrimp, in bite-sized pieces
1/2 small cucumber, peeled, seeded and cut into matchstick strips
2 tablespoons fresh cilantro leaves, chopped
1 tablespoon peanuts, chopped
1 dash sea salt
1 dash ground pepper
1/8-1/4 teaspoon red pepper flakes

Steps:

  • Place the tortillas on a flat surface and layer lettuce followed by shrimp, cucumber, cilantro and peanuts.
  • Sprinkle with seasonings, if desired.
  • Roll up securely and serve.

1 pound uncooked shrimp (31-40 per pound), peeled and deveined
1 can (13.66 ounces) light coconut milk

1/2 cup minced fresh cilantro
Lime wedges, optional

Steps:

  • Soak noodles according to package directions. Meanwhile, in a large dry skillet over medium heat, toast curry powder until aromatic, about 1-2 minutes. Stir in shrimp, coconut milk, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, 5-6 minutes or until shrimp turn pink., Drain noodles. Add noodles and cilantro to pan; heat through. If desired, serve with lime wedges.
