THAI CRAB OMELETTE | MARION'S KITCHEN
Quick, easy and ideal for weeknights, this crispy but fluffy omelette is perfect with fresh crab, although you could also try it with prawns or minced pork. The technique does take some mastering, but I promise you'll be a pro in no time!

- Step 1.Place eggs, pepper and fish sauce in a bowl and whisk until just combined. Stir through the crab meat.
- Step 2.Fill a saucepan to about 1/3 capacity with the vegetable oil. Heat over high heat. The oil is hot enough when a wooden spoon dipped into the oil forms small little bubbles (about 325°F or 165°C). Have two spatulas ready as well as a baking tray lined with paper towel. Pour the egg mixture into the oil and use the spatulas to push and squeeze the egg mixture into a tight cylinder (this might take some practice! Watch the video and see how it works). Once the omelette is golden transfer it to the baking tray and blot with extra paper towel. Place onto a serving plate and top with the chilli and herbs. Serve with the chilli sauce.
- Notes: - Thai sriracha chilli sauce is a hot chilli sauce from the province of Sri Racha in Thailand. It's available in the Asian aisle of most supermarkets and is often (especially in Australia) simply called 'Hot Chilli Sauce'.

Steps:
- Mix half the lime juice with the ginger and lemon grass. Add the mayonnaise and mix well.
- Spread 1 tablespoon mayonnaise over each slice of bread.
- Halve the avocado and remove the pit. Peel and slice the flesh thinly, then arrange the slices on the bread. Sprinkle with lime juice.
- Spoon the crab meat over the avocado, then add any remaining juice. Spoon over the remaining mayonnaise, top with a cilantro spring.
- Serve immediately.
- *** To make lime-and ginger-flavored mayonnaise, place 2 egg yolks, 1 tablespoon lime juice, and 1/2 teaspoon grated ginger in a blender. With the motor running, gradually add 1 1/4 cups olive oil, drop by drop, until the mixture is thick and smooth. Season with salt and pepper.***.

Steps:
- Make the crab paste: mix the ingredients together in a bowl and season, then set aside. In a separate bowl, mix the white meat with the herbs, lemon juice, oil and seasoning.
- Spread the bread lightly with butter, then spoon and spread the crab paste over 4 of the slices. Pile the white meat over, then top with the remaining bread. Cut the crusts off, if you like, and serve halved or in small triangles or squares with lemon wedges on the side.

- Preheat broiler.
- In a bowl, combine crabmeat, green onions, cheese, mayonnaisse and cayenne (or hot pepper sauce).
- Slice tomatoes into eight slices.
- On a baking sheet or broiler pan place English muffin halves and broil 3-4 inches from heat until golden (3-5 minutes); remove from oven.
- Place a tomato slice on each muffin half and top with crab mixture (about 1/2 cup per muffin half)and then sprinkle with extra shredded cheese, if desired.
- Return to oven and broil until cheese browns. (3-5 minutes).

- Place the crab in the freezer for 20 minutes to put it into a catatonic state. Then remove the top portion of the shell from the crab by lifting it from the body section — it should come off easily. Use a good knife to chop the body portion into large pieces. As best you can, remove the crab meat from the body pieces and place the lump meat into a bowl, discarding all bits of shell. Crack the claws and legs by hitting them with the flat of the knife. Pour in the chicken stock and mix well. Add the egg, stir well, and cook for 1 to 2 minutes, or until the egg is completely cooked.
- Add the coconut milk, Chinese celery, and Thai chili. Stir well and then cook for 2 to 3 minutes, or until the coconut milk has slightly reduced and the mixture has taken on the look of a sauce — it should coat the back of a spoon.
