2 tablespoons red curry paste
1/2 teaspoon salt
1 package (16 ounces) frozen stir-fry vegetable blend
3 cups hot cooked brown rice

Steps:

  • Preheat oven to 425°. Place chicken in a greased 8-in. square baking dish. In a small bowl, mix coconut milk, curry paste and salt; pour over chicken., Bake, covered, 18-22 minutes or until chicken is no longer pink. Meanwhile, cook vegetables according to package directions; drain. Serve chicken with rice and vegetables.

2 tablespoons olive oil
4 medium shallots, thinly sliced
1 medium red bell pepper, julienned
1 red chile pepper, finely chopped
1 tablespoon minced fresh ginger root
3 cloves garlic, minced
1 (13.5 ounce) can coconut milk, divided
2 teaspoons Thai red curry paste
1 ½ pounds skinless, boneless chicken breast, thinly sliced
¼ cup chopped Thai basil
1 tablespoon brown sugar
1 tablespoon lime juice
1 teaspoon fish sauce
1 cup diced tomatoes
¼ cup chopped Thai basil
1 stalk scallion, finely chopped

Steps:

  • Heat olive oil a large nonstick pan or skillet over medium-high heat. Add shallots and stir-fry until soft, 3 to 5 minutes. Add bell pepper, chile pepper, ginger, and garlic; stir-fry for 3 minutes. Pour in 1/4 of the coconut milk and stir in curry paste until well distributed.
  • Add chicken, 1/4 cup Thai basil, brown sugar, lime juice, and fish sauce. Cook and stir until chicken is no longer pink in the center and juices run clear, 7 to 10 minutes.
  • Add the rest of the coconut milk and diced tomato to the pan and bring to the boil. Simmer over medium heat for 10 to 15 minutes more. Serve with remaining basil and scallions on the side as a garnish.

1 can (13.66 ounces) coconut milk
1/3 cup chicken broth
2 tablespoons brown sugar
2 tablespoons fish sauce
1 tablespoon red curry paste
2 cups frozen stir-fry vegetable blend
3 cups cubed cooked chicken breast
Cooked jasmine rice
Minced fresh cilantro, optional

Steps:

  • Combine the first five ingredients in a large skillet. Bring to a boil; reduce heat and simmer 5 minutes., Stir in vegetables; return to a boil. Reduce heat and simmer, uncovered, for 9-11 minutes or until vegetables are tender and sauce thickens slightly., Add chicken; heat through. Serve with rice. Sprinkle with cilantro if desired.

1 tablespoon canola oil
1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch chunks
Kosher salt and freshly ground black pepper
2 shallots, minced
3 cloves garlic, minced
3 tablespoons red curry paste
1 tablespoon freshly grated ginger
1 (13.5-ounce) can coconut milk
1 bunch broccolini, cut into 3-inch pieces
2 green onions, thinly sliced
3 tablespoons chopped fresh cilantro leaves
2 tablespoons freshly squeezed lime juice

Steps:

  • In a large saucepan of 3 cups water, cook rice according to package instructions; set aside. Heat canola oil in a large stockpot or Dutch oven over medium heat. Season chicken with salt and pepper, to taste. Add chicken, shallots and garlic to the stockpot and cook until golden, about 3-5 minutes. Stir in red curry paste and ginger until fragrant, about 1 minute. Stir in coconut milk. Bring to a boil; reduce heat and cook, uncovered, stirring occasionally, until reduced and thickened, about 10-15 minutes. Stir in broccolini until just tender, about 3 minutes. Remove from heat; stir in green onions, cilantro and lime juice; season with salt and pepper, to taste. Serve immediately with rice.

2 -3 tablespoons green curry paste
2 tablespoons coconut oil or 2 tablespoons other vegetable oil
1 -1 1/2 lb boneless chicken breasts, cut into chunks or 1 -1 1/2 lb shrimp
1 (14 ounce) can coconut milk
1 teaspoon grated lime zest (zest from 1 lime)
1 red bell pepper, seeded and cut into chunks
1 zucchini, sliced lengthwise several times then cut into chunks
fish sauce
brown sugar
lime juice
fresh basil

Steps:

  • Warm a wok or large frying pan over medium-high heat. Add oil and swirl around, then add the green curry paste.
  • Stir-fry briefly to release the fragrance (30 seconds to 1 minute), then add coconut milk.
  • Add chicken, stirring to incorporate. When the curry sauce comes to a boil, reduce heat to medium or medium low, until you get a nice simmer.
  • Cover and allow to simmer 3-5 more minutes, or until chicken is cooked through. Stir occasionally.
  • Add the bell pepper and zucchini, plus the lime zest, stirring well to incorporate. Simmer another 2-3 minutes, or until vegetables are softened but still firm and colorful.
  • Do a taste test for salt, adding 1-2 T. fish sauce if not salty enough. If you would prefer a sweeter curry add a little brown sugar. If too salty, add a squeeze of lime juice. If too spicy, add more coconut milk.
  • Serve this curry in bowls over rice. Top each portion with fresh basil.

Steps:

  • Make up the chicken stock in a measuring jug and add the fish sauce, demerara sugar, lemongrass paste, coriander paste, tumeric and kaffir lime leaves.
  • In a pan add the red thai curry paste to 1 tbsp of the coconut milk and cook until sizzling - add chicken and cook until chicken is browned and coated in the thai red curry and coconut mixture then add the red chilli.
  • Add the remaining coconut milk and chicken stock mixture and bring to a simmer - add the sweet potato and simmer until the chunks are tender (usually takes around 15 - 20 minutes depending of size of chunks). If using baby sweetcorn add about 5 minutes before the end. Add the spinach 2 minutes before the end to wilt through.
  • Squeeze the juice of 1/2 lime over at the end and serve with sticky rice.

2 chicken breasts (chopped into small pieces)
2 tablespoons curry powder (red thai)
14 ounces light coconut milk
1 cup snap peas
1 cup bamboo shoot (canned)
2 tablespoons garlic (minced)
1/2 small yellow onion
Thai basil (to taste, chopped)

Steps:

  • Cook chicken in frying pan, use a little olive oil to keep it from sticking.
  • Add garlic and onion to chicken, cook to where onions are translucent and garlic becomes fragrant (don't let it burn!).
  • Once done, move chicken to bowl and set aside.
  • Set heat to low-medium.
  • Place curry powder in pan and add in a small amount of coconut milk (slowly) till you make a paste.
  • Add the chicken back to pan and coat with paste.
  • Next slowly keep adding coconut milk to the pan and mixing.
  • Add in drained bamboo, snap peas and thai basil.
  • Let simmer on low for 5 minutes.
  • Serve with thai rice.
