Provided by Lucy Netherton

Categories     Dinner, Main course

Time 45m

Number Of Ingredients 15

1 tbsp olive oil
4 tbsp Thai green curry paste
1 lemongrass stalk, outer layer removed, finely chopped
2 red peppers , cut into chunky strips
450g baby new potatoes , halved
2 x 400g cans coconut milk , see tip
300ml chicken stock
5 lime leaves , torn
1 bunch spring onions , sliced
225g frozen peas
600g raw king prawns
100g bag baby spinach
2 tbsp Thai fish sauce
bunch coriander , leaves picked
juice 1 lime , plus extra wedges, to serve

Steps:

  • Heat oil in a large frying pan or wok. Fry the curry paste and lemongrass for 1 min, until fragrant. Tip in peppers and new potatoes, then stir them to coat in the paste. Cook for 1-2 mins. Pour in coconut milk, stock and lime leaves, then bring to the boil. Simmer and cook for 15 mins, until potatoes are just tender.
  • Add remaining ingredients, but if you're freezing don't add spinach or coriander yet, and cook until the prawns turn pink, about 4 mins. Serve, with some extra lime wedges, if you like, or cool before freezing in containers.

THAI PRAWN & SQUASH CURRY

Thai prawn & squash curry image

A fusion curry of tomatoes and ginger with a Thai twist of lime leaves and lemongrass to deliver a delicious balance of sweet, sour, salty and hot

Provided by John Torode

Categories     Dinner, Main course

Time 1h

Number Of Ingredients 12

2 tbsp vegetable oil
1 sachet creamed coconut , grated
2 tbsp red or green Thai curry paste
1 tbsp palm sugar or demerara sugar
1 tbsp fish sauce
6 lime leaves , torn
2 lemongrass stalks, bashed
1 butternut squash , peeled and chopped into large chunks
400ml can coconut milk
24 raw prawns , shells removed but tails left on
small pack coriander , leaves picked
100g beansprouts

Steps:

  • Heat the oil a large frying pan or wok. Tip in the coconut and cook for 3 mins or until starting to toast, then add the curry paste and fry, stirring constantly, until fragrant and sizzling. Add 100ml water and bring to the boil - the water will evaporate and the paste will split. Add the sugar and reduce the heat (the colour will darken).
  • With the mixture at a simmer, add the fish sauce, lime leaves, lemongrass and squash. Cook for 1 min, stirring to coat the squash in the paste, then add the coconut milk and 200ml more water and bring back to the boil. Reduce the heat and simmer for 20 mins until the squash is cooked.
  • Turn up the heat again, drop in the prawns and stir well. As soon as the pan returns to the boil, reduce to a low heat and cook for a few mins until the prawns are pink and cooked through. The curry should now be sweet and creamy. To serve, top with the coriander leaves and beansprouts.

Number Of Ingredients 18

125g coconut oil
2 onions , chopped
5 dried red chillies (Scotch bonnet work well)
thumb-sized piece ginger , grated
4 garlic cloves , grated
6 dried curry leaves
½ tsp mustard seeds
30g tomato purée
½ tsp hot chilli powder
½ tsp turmeric
2 x 400g cans coconut milk
300g cauliflower (1/2 small one), broken into small florets

Steps:

  • Heat the coconut oil in a casserole or wok over a medium heat and add the onions, dried chillies, ginger, garlic, curry leaf and mustard seeds, fry for 12-15 mins until the onion is soft, then stir in the tomato purée, chilli and turmeric and continue to cook for 1-2 mins more. Pour in the coconut milk and 200ml water, simmer the sauce for 20 mins, then blitz in a blender or with a hand blender until smooth.
  • Pour the sauce back into the saucepan and bring up to a simmer. Stir in the cauliflower and potato, cover and simmer for 15 mins. Add the prawns and poach for 2 mins, or until they turn pink. If freezing, cool and freeze, then defrost and reheat when you're ready to eat. To serve, scatter the spring onions, coriander and peanuts over the curry and squeeze over a little lime juice.

THAI VEGETABLE CURRY

Thai Vegetable Curry image

Green curry paste can be pretty fiery. If that's appealing to you, lay it on! If not, use just a little, or try red or yellow curry paste instead. These are somewhat milder--though in no way bland--and they're becoming more and more available in the Asian section of supermarkets. Serve the curry with steamed jasmine or regular white rice. Also great with added chicken or shrimp. Food & Wine Magazine. Wine: An off-dry gewürztraminer from the Pacific Northwest is a good choice to both accentuate the curry spice flavors and tame their heat.

  • Variations:.
  • Other vegetables that would taste good in place of the broccoli include carrots, eggplant, cauliflower, snow peas, cabbage, green beans, and canned baby corn. Try your favorite, or use a combination of vegetables.

THAI SHRIMP AND VEGETABLE CURRY

Thai Shrimp and Vegetable Curry image

I put this together a couple of years ago when I was heavy into low carb. I love curries and this one suits for either low carb or diabetic. Use brown sugar instead of Splenda if you are not watching your diet and serve with rice if you like.

Categories     Curries

Time 40m

Yield 3-4 serving(s)

Number Of Ingredients 14

1 tablespoon peanut oil
1 small onion, chopped (optional, may substitute bamboo shoots but add those when you add coconut milk and do not saute)
2 garlic cloves, chopped (2 to 3)
1 medium zucchini, roll cut
8 ounces button mushrooms (halved or quartered)
1 bell pepper, chopped
1 hot chili pepper, sliced (Thai style or serrano preferred, 1 to 3)
14 ounces light coconut milk
1 tablespoon red curry paste (amount to taste, 1 to 3)
3 -4 substitute some lime zest or 3 -4 lemongrass
2 teaspoons Splenda granular (or to taste)
2 tablespoons fish sauce (nam pla)
1 lb large shrimp, peeled and deveined
2/3 cup chopped fresh basil leaf (preferably Thai basil)

Steps:

  • In a large deep skillet, heat oil and add onions, garlic and chopped chillies and cook for 1-3 minutes.
  • If you are sensitive to volatile odors from heated chillies, just add them when you add the coconut milk, but in any case, vent the cooking area.
  • Add the zucchini, mushrooms, and bell pepper to the pan, cooking until they are half-tender.
  • Add coconut milk, curry paste, lime leaves, Splenda and fish sauce, stirring mixture until curry paste mingles with the coconut milk.
  • Reduce heat, cover and simmer for 15-20 minutes or until vegetables are mostly cooked through.
  • Add shrimp to the pan and stir over medium heat, uncovered, until shrimp become pink but are not curled too tightly (tightness makes them tough).
  • Either stir basil into the curry or use as a garnish, whichever you prefer.
