When you can't decide between pizza or Thai, this over-the-top pie might be the best of both worlds -- it's sweet and spicy, and piled with saucy noodles, shrimp and a kick of Thai hot sauce.

Number Of Ingredients 18

1/4 cup creamy peanut butter, at room temperature
3 tablespoons unsweetened coconut milk
2 tablespoons fresh lime juice plus lime wedges, for serving
2 tablespoons ketchup
2 tablespoons low-sodium soy sauce
2 tablespoons sugar
1 1/2 tablespoons fish sauce
1 teaspoon garlic powder
2 scallions, sliced, plus more for garnish
4 ounces pad Thai rice noodles
All-purpose flour, for dusting
1 pound store-bought pizza dough, at room temperature
1/2 pound peeled and deveined medium shrimp, tails removed and halved lengthwise
Kosher salt and freshly ground black pepper
Sriracha, for drizzling
2 tablespoons salted peanuts, coarsely chopped
1/3 cup mung bean sprouts
1/4 cup fresh cilantro leaves

Steps:

  • Place a pizza stone or an inverted rimmed baking sheet on the bottom rack of the oven and preheat to 450 degrees F.
  • Combine the peanut butter, coconut milk, lime juice, ketchup, soy sauce, sugar, fish sauce, garlic powder and scallions in a large bowl. Set aside.
  • Prepare the rice noodles according to the package instructions. Drain well, then rinse with cold water and drain well again. Add to the reserved sauce and toss to combine.
  • Dust a piece of parchment paper lightly with flour. Stretch or roll out the pizza dough into a 12-inch round on the parchment, then transfer the dough on the parchment to a pizza peel or another inverted rimmed baking sheet. Top the dough with the noodle and sauce mixture.
  • Sprinkle the shrimp lightly with salt and pepper in a medium bowl. Arrange in a single layer on top of the noodles.
  • Slide the pizza on the parchment paper onto the stone or baking sheet and bake until the crust is golden and the shrimp are cooked through, 12 to 14 minutes.
  • Drizzle the pizza with sriracha and sprinkle with the peanuts, bean sprouts, cilantro and more scallions. Serve with lime wedges.

This Thai Shrimp Pizza is saucy and delicious. If shrimp isn't your thing, substitute chicken or beef, both would be great.

1 pound medium raw shrimp peeled and deveined
4 tbsp sugar
4 tbsp reduced-sodium soy sauce
1 tbsp cider or rice vinegar
1 garlic clove (, minced)
1/4 teaspoon ground ginger
1/4 teaspoon pepper
1/2 cup Thai peanut sauce
2 tbsp sriracha sauce
2 pre-baked naan bread rounds
1 cup matchstick style carrots
1 cup bean sprouts
1/2 cup sliced red onion
2 cups (8 ounces) shredded part-skim mozzarella cheese
4 green onions (, thinly sliced)
1/2 cup chopped salted peanuts
1/4 cup minced fresh cilantro

Steps:

  • In a small saute pan, mix sugar, soy sauce, vinegar, garlic, ginger and pepper. Bring to a boil and partially reduce to thicken slightly. Once you've reached a thickness where the sauce just coats the back of the spoon, add the shrimp and saute for 3 minutes. Meanwhile, preheat oven to 450°. Place the naan bread rounds on an ungreased baking sheet. Top with carrots and bean sprouts. Spoon the shrimp mixture over the top and add the cheese divided evenly over both naan breads. Top with read onions. Bake 10-12 minutes or until cheese is melted. Sprinkle with green onions, peanuts, cilantro and more red onions, if desired. Drizzle with peanut sauce and sriracha sauce (optional), and a squeeze of fresh lime. Serve immediately.

3 tablespoons sesame ginger salad dressing
1 tablespoon water
1 teaspoon soy sauce
2 naan flatbreads
1 cup shredded part-skim mozzarella cheese
1 small sweet red pepper, julienned
1/2 cup julienned carrot
1/2 cup sliced baby portobello mushrooms
1/4 cup chopped fresh cilantro
Sriracha chili sauce, optional

Steps:

  • Preheat oven to 425°. For sauce, mix first 4 ingredients until blended. Place naan on a baking sheet; spread with sauce. Top with cheese and vegetables., Bake until cheese is melted and crust is golden brown, 8-10 minutes. Top with cilantro and, if desired, drizzle with chili sauce.

2 tablespoons creamy peanut butter
2 tablespoons teriyaki sauce
1 tablespoon Thai chili sauce
1 teaspoon honey
2 cups shredded rotisserie chicken
1 cup shredded part-skim mozzarella cheese
1/2 cup shredded carrot
1/3 cup bean sprouts
1/4 cup chopped salted peanuts
1/4 cup minced fresh cilantro
2 green onions, thinly sliced

Steps:

  • Unroll dough into a greased 15x10x1-in. baking pan; flatten dough and build up edges slightly. Bake at 425° for 5-6 minutes or until edges are lightly browned., Meanwhile, in a small bowl, whisk the peanut butter, teriyaki sauce, chili sauce and honey. 1 thin pizza crust (Boboli or other pre-baked crust)
2 garlic cloves, minced
1 teaspoon gingerroot, minced
5 tablespoons peanut butter
2 tablespoons honey
2 tablespoons rice wine vinegar or 2 tablespoons apple cider vinegar
1 tablespoon soy sauce
1 teaspoon red pepper flakes
1 cup mozzarella cheese, shredded
1/2 orange bell peppers or 1/2 red bell pepper, sliced
1 cup pre cooked chicken breast, chopped
2 green onions, chopped
1/2 carrot, finely chopped
1 cup bean sprouts, roughly chopped
1/4 cup peanuts, chopped
1/2 cup cilantro, chopped

Steps:

  • Preheat oven to 425°F; do not bake the Boboli yet.
  • In a microwave safe bowl, add garlic, gingerroot, peanut butter, honey, vinegar, soy sauce and pepper flakes. Microwave until peanut butter is melted (about 1 minute). Mix well with a whisk.
  • Take pre-baked pizza crust out of the package and top with peanut sauce, cheese, bell pepper and cooked chicken. Bake for 5 minutes or until cheese is melted.
  • Meanwhile, prepare other vegetables.
  • Remove crust from oven and top with remaining vegetables, peanuts and cilantro.
  • Cut and serve immediately while the crust is still hot! Enjoy!
