This Thai Marinated Flank Steak Recipe takes only minutes of preparation, but is infused with delicious Thai flavors.

1 1/2-2 lb flank steak
3/4 cup olive oil
1/4 cup soy sauce
2 Tbsp rice vinegar
1 Tbsp fresh lime juice
1 1/2 tsp garlic powder
1 1/2 tsp chopped garlic
2-3 finely chopped Thai chilis (depending on heat tolerance)
1/2 cup fresh red Thai basil
1/4 cup brown sugar
3 Tbsp fish sauce
2 Tbsp cilantro
2 Tbsp chopped ginger

Steps:

  • Combine all ingredients in a large Ziplock bag. I like to add all the liquid and dry ingredients first, close the bag, massage the mixture to incorporate ingredients and then add the flank steak. Close the bag. Use your hands to massage the marinade into the steak. If you want to be more earth friendly, place the marinade steak in a glass 9×13 baking dish with lock down lid.
  • Marinate in the refrigerator for at least four hours or overnight.
  • Heat grill to medium-high heat. Grill steak for about 4 minutes per side for a medium-rare steak. 125 degrees F will provide a rare steak, 135 degrees F is medium rare, or 145 degrees F gives a medium. Flank steak is lean and tends to dry out when cooked above medium, but if you love your cattle really, really dead, 155 degrees F is provides a medium well, and 165 degrees F is well done. Flank steak tends to be more narrow at one end, so always check the thicker part. You should get a variety of meat doneness to satisfy everyone at the table.
  • Cover with foil and let steak rest for 10-15 minutes before slicing.
  • Flank steak is a fibrous meat, making it a perfect meat for absorbing marinade. When cutting your steak, you want to cut against the grain and at an angle as shown in the photo above. Cutting against the grain breaks up the muscle fibers and helps avoid a tough and chewy steak experience.

2 tablespoons coriander seeds, coarsely cracked
½ cup firmly packed dark brown sugar
¼ cup soy sauce
1 tablespoon lime juice
2 cloves garlic, minced
1 pinch ground ginger
1 ½ pounds flank steak

Steps:

  • Place flank steak in the freezer for 20 minutes.
  • Whisk coriander, brown sugar, soy sauce, lime juice, garlic, and ground ginger together in a bowl until marinade is well combined.
  • Remove steak from freezer and slice thinly across the grain. Place steak in a large bowl, pour marinade over steak, and toss to coat. Cover bowl and marinate at room temperature for 1 hour.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line bottom of a broiler pan with foil.
  • Lay steak slices in a single layer on the rack of the prepared broiler pan.
  • Cook in the preheated broiler, brushing occasionally with marinade, until steak reaches desired doneness, 1 to 2 minutes for medium rare.

For the Marinade:
1/2 cup palm sugar or brown sugar
1/4 cup water
3 tablespoons fish sauce
1/3 cup lime juice
2 cloves garlic, grated on a microplane zester
1 tablespoon Thai chili powder (or red chili flakes)
1/4 cup vegetable oil
1 whole flank steak, about 2 pounds (see note)
For the Salad:
1/2 cup loosely packed mint leaves
1/2 cup loosely packed cilantro leaves
1 small bunch chives, cut into 1 1/2-inch segments
1/2 cup loosely packed basil
4 shallots, thinly sliced
1 to 2 cups mung bean sprouts

Steps:

  • Combine water and sugar in a small saucepan and heat over medium heat until completely dissolved. Transfer to a small bowl, add fish sauce, lime juice, garlic, and chile powder and stir to combine. Transfer half to a small container and reserve until step 4. Add oil to remaining half and whisk to combine. Place flank steak inside a gallon-sized zipper-lock bag with marinade. Press out air, seal bag, and allow meat to marinate, turning occasionally, for at least 1 hour and up to 12.
  • Remove steak from marinade and pat dry with paper towels. Light one chimney full of charcoal and wait until they're covered in grey ash. Spread evenly over 1/2 of grate, leaving other half empty. Put cooking grate in place, cover, and allow grill to preheat for 5 minutes. Clean and oil grilling grate , then place flank steak over hot side of grill, cook until well charred, about 3 minutes. Flip steak and continue to cook until second side is well charred, about 3 minutes longer. Transfer steak to cooler side of grill, cover, and cook until center of steak registers 125°F (52°C) on an instant-read thermometer for medium-rare, or 135°F (57°C) for medium, about 5 minutes longer. Transfer to a cutting board, tent with foil, and allow steak to rest for at least 5 minutes. Proceed to step 4.
  • Alternatively, to finish indoors: Heat 2 tablespoons vegetable or canola oil in a large stainless steel or cast iron skillet over high heat until shimmering. Add steak and cook, turning frequently, until an instant-read thermometer registers 125°F for medium-rare or 135°F for medium, reducing heat as necessary if steak smokes excessively or starts to burn. Transfer to a wire rack set in a rimmed baking sheet and allow to rest 5 to 10 minutes.
  • Thinly slice beef against the grain and transfer to a large bowl. Add herbs, shallots, bean sprouts, and reserved marinade, and toss to combine. Serve immediately.

2 lbs flank steaks, approximately
1 cup sesame oil
1/2 cup hot bean paste
1/2 cup soy sauce
8 cloves garlic, peeled and chopped
chili pepper, minced
4 -5 spring onions, chopped
2 large cucumbers (hydroponic)
6 ripe tomatoes, seeded and sliced into wedges
1 red onion, julienned
1/3 cup chopped of fresh mint
1/3 cup chopped cilantro
1/3 cup chopped parsley
1/2 cup sesame oil
1/4 cup soy sauce
1/4 cup fish sauce
2 -3 limes, juice of
2 tablespoons ginger, minced
2 cloves garlic, minced
1 tablespoon minced lemongrass
salt and pepper
chopped peanuts (to garnish) (optional)

Steps:

  • Combine all ingredients for marinade, marinate the flank steak for several hours or overnight.
  • Combine the ingredients for the dressing, whisk to combine.
  • Set aside.
  • Over medium high flame, grill the flank steak to desired doneness.
  • Allow to rest at least 20 minutes.
  • Prepare the vegetables: Peel the cucumber leaving strips of the skin.
  • Cut in half lengthwise and remove seeds, Slice diagonally into thin slices.
  • In a large bowl, combine the vegetables with the herbs and toss.
  • Lightly dress to taste with the reserved dressing, adding salt, pepper, and additional lime juice to taste.
  • Slice the steak thinly against the grain.
  • Arrange the salad on six plates and top each with a portion of the beef.
  • Garnish with chopped roasted peanuts or a few chives.
  • Makes six servings.
