SPICY GLASS NOODLES WITH CRISPY PORK (YUM WOON SEN)

The seasoned noodles are the real star with the crispy pork and other ingredients just there to play back up. It's usually served cold or room temperature, and many versions include either dried or whole cooked shrimp to make it a more substantial meal. I chose to leave the shrimp out of my dish, but please feel free to add them if shrimp are something you like."

- Warm a teaspoon of canola oil in a skillet over medium-high heat. Add the pork and cook for 5 minutes, stirring frequently to break the pork into tiny crumbles. Cook for another 3-5 minutes, stirring less frequently, until the pork turns deeply golden and crispy. Set aside.
- While the pork is cooking, set the noodles in a bowl and cover them with hot water to soak. Let them sit until softened, about 10 minutes or until the pork has finished cooking.
- Bring a pot of water to a boil. Drop in the noodles and cook for 1-2 minutes, until the noodles are stretchy and tender. Drain and rinse under cool water. Use a pair of kitchen shears to cut the mass of noodles 3 or 4 times: this makes the long noodles easier to eat.
- Combine the noodles, pork, green onions, cilantro, chili, and peanuts in a large bowl. Whisk together the soy sauce, fish sauce, sugar, and lime juice in a small bowl. Taste and add more of any of the ingredients to suit your tastes, then pour the sauce over the noodles. Use tongs or clean hands to lift the noodles, fold them over, and gradually work the ingredients into the noodles. Let stand at least 15 minutes before serving or refrigerate until serving. Garnish each dish with extra peanuts.
- This dish is best on the day that it's made. For serving leftovers, make an extra batch of the sauce and add it to the noodles a few teaspoons a time, stirring the noodles until they loosen and become slippery again.

THAI CLEAR NOODLE SALAD (YUM WOON SEN)
I made this recipe in a Thai noodle cooking class. It tasted so good and fresh, and was very easy. Great for a summer evening when you want something that's filling and delicious, but not served hot.

- Soak mung bean noodles in warm water for 15 minutes. Drain and cut into short lengths and place in a bowl. Pour hot water over the noodles and soak for another 5 minutes. Drain in a colander, and rinse with cold water to separate the noodles. Let stand in the colander until ready to use.
- Cook ground turkey with a little water over medium heat. When brown, drain any excess water, and place in a large mixing bowl. Let cool 5 minutes.
- Mix dressing ingredients in a small bowl, and taste for proper balance of sweet/sour/salty/spicy. Adjust if necessary. Pour dressing over cooked ground turkey and toss lightly.
- Add noodles and stir until well mixed. Taste and adjust if necessary.
- Add carrot, celery, shallot, green onion, cilantro, and 1/2 cup of peanuts. Toss well.
- Divide lettuce and cabbage on serving plates. Place noodle mixture on top, and sprinkle with remaining peanut, and chili flakes.

- Soak noodles in room temperature water for 7-10 minutes until soft and pliable. Drain, then cut the noodles with scissors 2-3 times to shorten them.
- Place dried shrimp in a small heatproof bowl, cover with hot water and let sit for 3-4 minutes to soften. You can also cover the shrimp with room temp water then microwave for 1 minute, then let it sit for a few more minutes. (If you’re using large dried shrimp, they will take longer to soften).
- Place tomato, onion and Chinese celery into a large mixing bowl. When the dried shrimp are ready, drain and pound them in a mortar and pestle until they are broken into smaller pieces. Alternately you can chop them roughly. Add dried shrimp to the mixing bowl.
- Cut cilantro stems into small chunks and place in the mortar and pestle along with garlic and chilies; pound into a paste. Add palm sugar and pound until dissolved. Add 2 Tbsp of the fish sauce and lime juice and stir to mix.

- Make noodles according to package directions. But if the directions aren’t in English, and you don’t know what to do, here is what I usually do: soak the noodles for about 10 minutes in warm water.
- Boil about six cups of water or so and add pre-soaked noodles, and be sure to cut off the strings first that are holding the bundles together.
