Thai Fried Rice Recipe with Shrimp (Khao Pad Goong ข้าวผัดกุ้ง) image

Thai fried rice with shrimp (khao pad goong ข้าวผัดกุ้ง), is a very typical Thai street food dish, available at all stir fry restaurants. Though you can order the dish with your choice of meat, shrimp is the most popular option. What really makes Thai fried rice unique, is that it's served with a squeeze of lime on top to give it a nice sour tinge, and always accompanied by prik nam pla (พริกน้ำปลา), the Thai condiment of chilies and fish sauce. 1.5 cups of cooked Jasmine rice cooled (or day old rice works well too) - Or just estimate about 1 normal bowl full
About 5 - 10 shrimp, head peeled, but tail on
¼ of a big white onion (or ½ of a very small white onion, like I used)
1 leaf of Chinese broccoli (or any crisp green leafy vegetable)
2 cloves garlic
1 egg
½ tablespoon soy sauce
½ tablespoon oyster sauce
Pinch of sugar (optional)
1 tablespoon of oil for frying
5 Thai chilies
3 tablespoons of fish sauce
½ of a lime

Steps:

  • If you're using whole fresh shrimp like I did, first pinch off the head, and peel the outer shell of the shrimp, leaving only the tail on (that's Thai style). You can also devein them if you'd like, but for small shrimp, to me it doesn't really matter.
  • Peel 2 cloves of garlic, and then just finely mince them
  • Slice ¼ of a sweet white onion into medium sized strips
  • Finely dice about 3 - 4 green onions
  • Take just 1 leaf of Chinese broccoli (kai-lan), slice it in half first along the spine, and then slice it into 1 centimeter sized strips
  • Turn on your stove to medium high, heat up your wok (or frying pan), and add about 1 tablespoon of oil
  • Once your oil is hot, add the garlic first, and stir fry continuously for about 15 seconds or so, until it gets nice and fragrant
  • Next, toss in your shrimp, and fry for about 30 seconds - your shrimp should start to turn pink and feel more firm
  • Add in a little less than ½ of your rice first. This is going to soak up all those delicious shrimp juices and oils and keep your rice nice and dry. Stir fry for about 10 more seconds - This is a little known trick to make good rice, so it remains nice and dry
  • Scoot all your rice to one side of the pan, and then crack in the egg into the empty side
  • Whirl the egg up, let it cook for a few seconds, and then start to mix it up with the rice and shrimp
  • Keep stir frying for about 20 seconds until the egg is fully cooked, and then add in the rest of your rice, and give it a quick stir
  • Add ½ tablespoon of soy sauce, ½ tablespoon of oyster sauce, just a pinch of sugar (optional), and continue stir frying your rice, making sure all the sauce get mixed in
  • Then add your chopped Chinese broccoli and onions, and stir fry for another 30 seconds until the vegetables wilt, but they can still be crisp and not fully cooked
  • Lastly, toss in your green onions, stir it a few more seconds, and it's ready
  • Immediately dish your fried rice onto a plate
  • Slice off a wedge of lime, and serve it on the plate next to the rice
  • For the final touch, I like to sprinkle some freshly ground black pepper on top to give some extra flavor
  • Add 3 tablespoons of fish sauce to a small bowl
  • Slice about 5 Thai chilies (you can add more or less, up to you), and add them to the fish sauce
  • Finally, I like it with a little squeeze of about ½ of a lime - but this is optional - and at many Thai restaurants it's only fish sauce and chilies
  • That's is, give it a stir, and set it aside

This Thai fried rice is called American fried rice (Khao Pad American) in Thailand, because it uses ingredients that are considered American, like ketchup and bacon. It is very popular in Thailand and easy to make. All ingredients should be prepped in advance cause once you start frying the rice, it goes fast. If people are really hungry, you can serve a fried egg on top of the fried rice.

6 slices bacon, sliced crosswise into 1/2-inch pieces
2 cloves garlic, minced
1 onion, finely chopped
1 large tomato, cubed
½ cup chopped fresh pineapple
5 cups cooked jasmine rice, cooled
2 tablespoons ketchup
2 tablespoons light soy sauce
1 tablespoon white sugar
¼ teaspoon freshly ground white pepper
3 eggs, beaten
½ cucumber, sliced
2 green onions, chopped
¼ cup chopped fresh cilantro
1 lime, cut into wedges
4 green Thai chile peppers

Steps:

  • Heat a large skillet or wok over medium heat and cook bacon until browned and crisp, about 5 minutes. Drain, reserving bacon grease in a bowl. Spoon 2 tablespoons grease back into the skillet.
  • Increase heat to medium-high and cook garlic until fragrant, about 30 seconds. Add onion and cook, stirring often, until softened, 2 to 3 minutes. Stir in tomato and pineapple and stir-fry until warmed through, about 2 minutes.
  • Increase heat to high and add 1 tablespoon bacon grease. Add rice and stir-fry, breaking up with a spatula so it gets coated well with bacon grease. Cook for about 3 minutes. Season with ketchup, soy sauce, sugar, and white pepper.
  • Move rice mixture to one side of the skillet or wok and pour beaten eggs onto the empty side. Stir-fry until eggs are almost set, 2 to 3 minutes. Mix eggs with rice mixture. Fold in bacon bits. Serve with cucumber, green onions, cilantro, lemon wedges, and chile peppers.

4 -5 cups cooked rice (can be made with fresh or 'old' leftover rice)
2 cups medium raw shrimp, peeled and deveined
3 garlic cloves, minced
1 fresh red chili peppers, minced or 1/4 teaspoon crushed dried chili, to taste
1 egg
3 green onions
1 carrots, grated or 1/4 cup frozen peas
1/4 cup fresh cilantro, chopped
1/8 teaspoon white pepper
3 tablespoons vegetable oil, divided
3 tablespoons fresh-squeezed lime juice
2 tablespoons fish sauce
1/2 tablespoon fish sauce
1 tablespoon soy sauce
1 teaspoon brown sugar

Steps:

  • Stir all 'stir fry sauce' ingredients together in a cup until sugar dissolves. Set aside.
  • Heat a wok or large frying pan over medium-high heat. Drizzle in 1-2 tablespoons oil, then add garlic and chili. Stir-fry 30 seconds to release the fragrance, then add shrimp. Stir-fry until shrimp turn pink and plump (2-3 minutes). If needed, add a little more oil or 1 teaspoons water to keep ingredients moist and sizzling.
  • Add carrot and fresh coriander and continue stir-frying 1-2 more minutes.
  • Add rice and drizzle the stir-fry sauce over. Use a large flat utensil or spoon, use a scooping motion to fry rice 2-3 minutes, or until sauce is well distributed.
  • Push rice aside to clear a space in the middle of your pan. Add 1-2 teaspoons more oil, then crack in the egg. Quickly scramble egg, gradually combining it with surrounding rice.
  • Remove from heat. Sprinkle over white pepper and stir in the green onion. Taste-test the dish for salt balance. At this point I usually add 2-4 teaspoons more fish sauce, as I like mine on the flavorful/salty side, but this also depends on how much rice you're making. If you happen to find it too salty, squeeze over some lime or lemon juice. Serve immediately and ENJOY!

250g basmati rice
2 tbsp vegetable oil
2 garlic cloves , finely chopped
1 red chilli , deseeded and shredded
2 eggs , beaten
200g frozen pea
1 bunch spring onions , finely sliced
285g pack cooked small prawns
1 tbsp soy sauce , plus extra for serving, if you like

Steps:

  • Put the rice in a saucepan with 600ml water. Bring to boil, cover, then simmer for 10 mins or until almost all the water has gone. Leave off the heat, covered, for 5 mins more.
  • Heat the oil in wok or large frying pan. Add the garlic and chilli, then cook for 10 secs - making sure not to let it burn. Throw in the cooked rice, stir fry for 1 min, then push to the side of the pan. Pour the eggs into the empty side of the pan, then scramble them, stirring. Once just set, stir the peas and spring onions into the rice and egg, then cook for 2 mins until the peas are tender. Add the prawns and soy sauce, heat through, then serve with extra soy sauce on the side, if you like.

1 red pepper , deseeded, quartered and cut into diagonal strips
5 spring onions , whites roughly chopped, greens finely chopped
100g broccoli , cut into small florets
2 tbsp green curry paste
about 200g pack raw king prawns , thawed if frozen
250g pack pre-steamed coconut basmati rice (we used Tilda)
100g frozen pea
100g beansprout
handful chopped basil
fish sauce , to taste

Steps:

  • Heat the oil in a wok and stir-fry the pepper, whites of the onions, and broccoli for a few mins to soften. Stir in the curry paste and prawns, and cook for 1 min more.
  • Add a splash of water, then crumble in the coconut rice, breaking it up with a spoon. Tip in the peas, beansprouts and greens of the onions, and stir-fry until everything has heated through, then add the basil and fish sauce to taste.

1 teaspoon vegetable oil
1 lb medium shrimp, peeled and deveined
2 large eggs, beaten

4 ounces sugar snap peas, trimmed
1/4 cup chopped shallot
2 garlic cloves, minced
1 small hot fresh chili pepper, seeds and ribs removed, minced (Thai or serrano)
3 cups cold cooked long-grain rice, preferably jasmine
2 tablespoons asian fish sauce (nam pla or nuoc mam)
2 tablespoons soy sauce
3 tablespoons chopped fresh cilantro (or Thai basil or mint)

Steps:

  • Heat a wok or large skillet over med-high heat.
  • Add 1 tablespoon of the oil and tilt to coat the inside of the wok.
  • Add the shrimp and stir-fry until they turn opaque, about 1 1/2 minutes; transfer to a plate.
  • Add 1 teaspoon oil to the wok and heat.
  • Beat the eggs with 1/4 teaspoon salt and a few grinds of pepper.
  • Pour into the wok and cook, stirring almost constantly with a wooden spatula, until the eggs are scrambled into very soft curds, about 30 seconds; transfer to the plate.
  • Add the remaining 1 tablespoon oil to the wok and tilt to coat the inside.
  • Add sugar snap peas and stir-fry just until they turn bright green, about 30 seconds.
  • Add the shallots, garlic, chili pepper and stir fry until fragrant, about 30 seconds.
  • Add the rice and cook, stirring often, until heated through, about 2 minutes; add shrimp and eggs back to wok; toss to combine.
  • Mix the fish sauce and soy sauce together in a small bowl.
  • Pour over the rice mixture and stir well.
  • Spoon into bowls and sprinkle each serving with the cilantro; serve hot.

bunch spring onions , greens and whites separated, both sliced
1 green pepper , deseeded and chopped into small chunks
140g pineapple , chopped into bite-sized chunks
3 tbsp Thai green curry paste

300g cooked basmati rice (brown, white or a mix - about 140g uncooked rice)
2 large eggs , beaten
140g frozen peas
225g can bamboo shoots , drained

Steps:

  • Heat the oil in a wok or non-stick frying pan and fry the spring onion whites for 2 mins until softened. Stir in the pepper for 1 min, followed by the pineapple for 1 min more, then stir in the green curry paste and soy sauce.
  • Add the rice, stir-frying until piping hot, then push the rice to one side of the pan and scramble the eggs on the other side. Stir the peas, bamboo shoots and prawns into the rice and eggs, then heat through for 2 mins until the prawns are hot and the peas tender. Finally, stir in the spring onion greens, lime juice and coriander, if using. Spoon into bowls and serve with extra lime wedges and soy sauce.

Chinese Fried Rice With Shrimp and Peas image

This is a more subdued version of fried rice than the spicier Thai fried rice. It's a great dish to make if you have cooked rice on hand and a great vehicle for whatever vegetables may be in your refrigerator. Feel free to add other cooked vegetables, meat or seafood.

Number Of Ingredients 11

3 large eggs
2 tablespoons vegetable or canola oil
2 garlic cloves, minced
2 teaspoons minced fresh ginger
1/2 pound medium shrimp, peeled, deveined and cut in 3/4-inch pieces
1 tablespoon dry sherry
5 to 6 cups cooked and cooled basmati or long-grain rice
1 bunch scallions, thinly sliced, white and green parts separated
1/2 cup cooked fresh or thawed frozen peas
2 tablespoons soy sauce
1/4 cup chopped cilantro

Steps:

  • Beat one of the eggs in a small bowl and salt lightly. Heat 1 teaspoon of the oil over medium-high heat in a small nonstick frying pan, and add the beaten egg. Swirl in the pan until the egg forms an even coat, like a thin pancake. When the egg is cooked through, roll up and slide onto a plate. Cut in thin strips (you can use a scissors or a knife). Set aside.
  • Heat a wok or large, heavy nonstick skillet over medium-high heat until a drop of water evaporates upon contact. Add the remaining oil and swirl around the pan, then add the shrimp and cook about one minute, stirring and tossing with a spatula or wok scoop until just about cooked through and pink. Add the garlic and ginger, and stir-fry for 30 seconds. Add the sherry, and stir everything together. When the sizzling stops, pour in the remaining beaten egg. Stir-fry until scrambled, and add the rice. Cook the rice - scooping it up, then pressing it into the pan and scooping it up again - for about two minutes. Stir in white and lighter green parts of the scallions, the peas and the soy sauce. Stir together for about half a minute, and transfer to a warm serving platter. Sprinkle the egg strips, scallion greens and cilantro over the top. Serve hot.
